1 tablespoon ghee or clarified butter
1 medium onion, chopped
2 cloves garlic, minced
2 tablespoons fresh coriander or parsley, chopped
1 pound ground lamb
1 teaspoon turmeric
1/2 teaspoon chili powder
1/2 pound tomatoes, peeled, seeded and chopped
Coarse salt
1 tablespoons garam masala
8 ounces peas, shelled

Steps:

  • Heat the ghee or butter and fry the onion with the garlic until golden. Add the coriander, meat, turmeric and chili powder. Bring to simmer, add tomatoes, salt and cook over very low heat for 30 minutes.
  • Add the garam masala and the peas. Cook for another 15 to 20 minutes.

Keema is a dish made of minced meat, onions, tomatoes, spices & herbs. This recipe will yield a delicious dish which be eaten with rice, or can be stuffed in sandwiches, wraps & naan.

300 grams mutton keema ((I used lamb keema))
2 tbsps oil
1 small bay leaf (or tej patta)
2 to 3 green cardamoms (or elaichi)
1 small cinnamon (piece or dalchini)
2 to 3 cloves (or laung)
1 cup onions (finely chopped (2 medium sized))
1 green chili (chopped (deseeded))
1 tbsp ginger garlic paste
¼ cup tomato puree ( or tomato chopped finely (1 medium) (optional))
¼ cup water
Salt ( as needed)
1/8 tsp turmeric (or haldi)
¾ to 1 tsp red chili powder ((use as needed, less spicy variety))
1 tsp garam masala (or mutton masala or kitchen king masala (can use upto 1 ½ tsp))
2 tbsp mint leaves (or pudina (optional) finely chopped)
2 tbsp coriander leaves (daniya patta (finely chopped))

Steps:

  • Heat a pan with oil and saute the dry spices for a minute - bay leaf, cinnamon, cloves, cardamoms.
  • Add green chilies and onions. Fry them well on a medium flame until evenly golden.
  • Saute ginger garlic paste for a minute or until the raw smell goes off.
  • Add keema and saute for 2 to 3 mins on a low heat.
  • Sprinkle salt & all the spice powders - turmeric, red chili powder and garam masala. Also add mint now.
  • Saute for 3 to 4 mins on a low heat.
  • Cover and cook for about 8 to 10 mins on the lowest heat. You will see some moisture being released and the keema is slightly tender.
  • Add tomato and saute until the tomato blends well with keema completely. This takes about 5 to 6 mins. The raw smell of tomatoes should go away by now.
  • Pour ¼ cup water, stir and cook covered until the keema is completely tender meaning it's cooked.
  • Open the lid, evaporate the water if any left to suit your taste. Adjust salt and spice powder at this stage. If you desire you can add more masala too at this stage and saute until the keema comes to a desired consistency.
  • Sprinkle coriander leaves and stir.
  • Keep mutton keema covered until served.
  • Sprinkle some lemon juice over keema before you serve with rice, paratha and fresh cut onions, cucumbers and carrot.

This lamb curry has lots of big, bright, brash flavors, and a marvelous fragrance when cooking. It's good either all by itself as a one-dish meal (combining meat and several vegetables), or served with an Indian flatbread, or over rice or noodles. Plain yogurt makes a pleasantly cool accompaniment. You might even try a dollop of Greek tzatziki sauce on your keema!

1 (10 ounce) package frozen peas
2 tablespoons olive oil
1 pound ground lamb
1 cup diced onion
2 cloves garlic, minced, or more to taste
½ cup dried parsley
2 tablespoons curry powder
1 tablespoon ground cumin
1 tablespoon garam masala
½ teaspoon ground black pepper
½ teaspoon ground cinnamon
½ teaspoon ground coriander
½ teaspoon ground ginger
½ teaspoon ground turmeric
¼ teaspoon crushed red pepper flakes, or more to taste
2 medium potatoes, peeled and diced
2 medium tomatoes, diced
1 medium jalapeno pepper, diced, or more to taste
1 bunch fresh cilantro, chopped

Steps:

  • Place peas in a microwave-safe container and cover loosely. Microwave until just heated through and bright green, 2 to 3 minutes. Drain and immediately cover with cold water to stop the cooking process, preserve the color, and reinflate any dimples or puckers. Set aside.
  • Heat olive oil in a nonstick frying pan or Dutch oven over medium-low heat. Stir lamb, onion, and garlic into the oil. Break up the ground lamb into morsels, stirring into the onion, garlic, and oil. Cover and begin gradually browning the lamb. Cook slowly until lamb is browned and a pool of rendered fat and liquid collects in the bottom of the pan, 10 to 20 minutes. Drain all fat, oil, and liquids.
  • Combine parsley, curry powder, cumin, garam masala, black pepper, cinnamon, coriander, ginger, turmeric and pepper flakes in a bowl, then stir into the lamb mixture. Cook over low heat until spices bloom, 2 to 3 minutes. Stir in potatoes, tomatoes, and jalapenos. Cover and continue cooking and stirring until the potatoes are tender, 20 to 30 minutes.
  • Set the lid ajar and let any liquids in the bottom of the pan steam off. Drain the peas and stir them into the keema. The keema will reheat them. Garnish individual servings with cilantro leaves.

Good Food's take on a popular Indian street-food dish - keema pau. Spiced lamb on a toasted cumin bun with a fried egg on top - it's well worth the effort!

2 tbsp vegetable oil
1 onion , chopped
2 garlic cloves , crushed
1 red chilli , finely chopped (deseeded if you don't like it too spicy)
700g lamb mince
1 tbsp tomato purée
2 tsp medium curry powder
1 tbsp plain flour
400g can chopped tomatoes
2 tbsp mango chutney
4 eggs
chopped coriander leaves, shallots and shredded carrot, to serve
250ml full-fat milk
1 tsp clear honey
25g butter , chopped
400g strong white bread flour
2 tsp cumin seeds , plus a pinch for sprinkling over
7g fast-action dried yeast
1 egg , beaten

Steps:

  • First, make the buns. Heat the milk and honey in a saucepan until steaming. Add the butter, then set aside to cool. Mix the flour, cumin, yeast and 1 tsp salt in a large bowl. Add the cooled milk mixture and stir to form a dough. Tip the dough onto a work surface and knead for 10 mins until soft and stretchy, or mix with a dough hook in a food mixer for 5 mins. Return to the cleaned bowl, cover with cling film and set aside to rise for 1-2 hrs or until doubled in size.
  • Meanwhile, heat the oil in a large pan. Add the onion and cook for 5 mins until soft. Add the garlic and chilli, stir for 1-2 mins, then tip in the lamb. Brown the mince all over, breaking it up with a wooden spoon, then add the tomato purée, curry powder and flour and cook for 2-3 mins more. Add the chopped tomatoes and mango chutney along with 150ml water, season well, cover and cook for 30 mins (add some more water if the mince looks too dry).
  • When the dough has risen, knock out the air and divide into eight equal pieces. Shape into balls by pinching and tucking the edges into the centre, then flip over so the smooth side is on top. Arrange on one or two baking sheets lined with baking parchment. Squash each bun a little with your palm - they should be about 8cm in diameter. Cover loosely with oiled cling film and leave to rise for 30 mins or until almost doubled in size. Heat oven to 200C/180C fan/gas 6.
  • Check the consistency of the mince - it should be thicker than a ragu. If it's too runny, remove the lid and continue cooking until the sauce has reduced.
  • Uncover the rolls, brush with the beaten egg and sprinkle with cumin seeds. Bake for 20-25 mins until golden brown, then transfer to a wire rack and leave to cool. If making a day ahead, store in an airtight container.
  • To serve, fry the eggs to your liking. Split the buns and lightly toast the cut sides under the grill. Pile in the spicy lamb, fried eggs, coriander, shallot and carrot. Serve with extra mango chutney and tuck in with plenty of napkins to hand.

Originated in Persia, brought to India during Akbar period, and modified in Kashmir. The recipe varies from region to region and restaurant to restaurant. North Indian Korma is pale yellow in color from saffron and cooked without any tomatoes or turmeric. This recipe version will be the closest to the traditional Kashmiri Korma. Kashmir Pandits substitute onion and garlic with asafoetida. Serve with jasmine rice and mango chutney.

2 ¼ pounds cubed lamb meat
4 teaspoons olive oil, divided
1 brown onion, chopped
1 red potato, peeled and cubed
½ cup curry powder
½ cup water
⅓ cup coconut milk
⅓ cup drained canned chickpeas (garbanzo beans)

Steps:

  • Place lamb in a bowl and drizzle 2 teaspoons olive oil over lamb; stir until coated.
  • Heat remaining 2 teaspoons olive oil in a saucepan over low heat; cook and stir onion until softened, 10 to 15 minutes. Remove saucepan from heat and add potato to onion.
  • Heat a large skillet over medium heat; cook and stir lamb, working in small batches, until browned, about 5 minutes per batch. Transfer browned lamb to onion mixture.
  • Stir curry into lamb-onion mixture and cook over medium heat for 1 minute. Add water to lamb-onion mixture and bring to a boil. Reduce heat to low, cover saucepan, and simmer until lamb is cooked through and potatoes are tender, about 45 minutes.
  • Mix coconut milk and chickpeas into lamb-onion mixture and simmer until heated through, about 5 minutes.

1 onion , chopped
400g lean minced beef
340g frozen peas
handful fresh coriander , chopped
brown rice , to serve (optional)
1 green chilli , deseeded and chopped
2 garlic cloves , chopped
thumb-sized piece ginger , chopped
½ tsp turmeric
½ tsp ground coriander
1 tbsp korma curry powder
200g fat-free natural yogurt
100g cucumber , peeled, deseeded and diced
handful fresh mint chopped

Steps:

  • Whizz together the ingredients for the paste in a blender or food processor - add a splash of water if you need.
  • Cook the onion in a splash of water for about 5 mins until softened. Stir in the mince and cook for another 5 mins to brown. Add the paste, cook for 1 min, then pour in 100ml water. Bring to the boil and simmer for 10 mins. Add the peas then simmer for a further 5 mins.
  • Meanwhile, mix together the raita ingredients and season to taste. When the mince is cooked, season and stir through the fresh coriander. Serve with the raita and brown rice, if you like.
