GRILLED LEG OF LAMB WITH ROSEMARY SALT



Grilled Leg of Lamb with Rosemary Salt image

Yield Makes 6 generous servings

Number Of Ingredients 12

For lamb
1 1/2 cups plain whole-milk yogurt
7 garlic cloves, thinly sliced
2 1/2 tablespoons coarsely chopped fresh rosemary
1/2 teaspoon coarsely ground black pepper
1 (5 1/2-lb) piece boneless butterflied leg of lamb
1 1/2 tablespoons kosher salt
For rosemary salt
1 teaspoon finely chopped fresh rosemary
1 tablespoon Maldon sea salt or other flaky sea salt
Special Equipment
8 to 10 (12-inch) wooden or metal skewers; an instant-read thermometer

Steps:

  • Marinate lamb:
  • Stir together yogurt, garlic, rosemary, and pepper in a 13- by 9-inch glass baking dish or 2-gallon sealable plastic bag. Add lamb, turning to coat completely, and marinate, covered and chilled, turning over once or twice, 5 hours.
  • Bring lamb to room temperature, about 1 hour.
  • Remove lamb from marinade, discarding marinade, and put on a work surface. Run skewers horizontally through meat, about 1 1/2 inches apart, first lengthwise (4 or 5 skewers), then crosswise (4 or 5 more) to form a grid. (Skewering makes meat easier to move and turn over.) Sprinkle with kosher salt.
  • Prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill, then light charcoal. Charcoal fire is medium-hot when you can hold your hand 5 inches above rack for 3 to 4 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes, then reduce to moderate.
  • Grill lamb, covered only if using a gas grill, on lightly oiled grill rack, turning occasionally, until thermometer inserted diagonally into thickest part of meat registers 125°F for medium-rare (thinner parts will register higher), 25 to 30 minutes if using charcoal or 20 to 25 minutes if using gas. Transfer lamb to a cutting board and let stand 10 minutes before thinly slicing.
  • Make rosemary salt:
  • Stir together rosemary and sea salt and serve with lamb.

2 x 800g / 1.3lb racks of lamb (, frenched (Note 1))
4 garlic cloves (, minced)
1 tbsp fresh rosemary (, finely chopped)
4 tbsp extra virgin olive oil
1/2 tsp salt (, cooking/kosher salt)
1/4 tsp black pepper
2 tbsp olive oil - for searing ((1 tbsp each rack))
30g / 2 tbsp butter (, cut into 1cm / ½" cubes)
2 garlic cloves (, smashed (use side of knife))
1 sprig rosemary
1 quantity Salsa Verde ((see separate recipe))

Steps:

  • Marinate lamb: Mix marinade ingredients in a ziplock bag (Note 2). Place lamb in bag, massage to coat, then seal and marinate for at least 24 hours and up to 48 hours.
  • Remove lamb from fridge 1 hour prior to cooking, to ensure even cooking.
  • Wrap bones in foil (optional): Wrap each bone with a small piece of foil. This keeps the bones white and looks prettier.
  • Preheat oven: Preheat oven to 200°C/390°F (180°C fan).
  • Sear: Heat 1 tbsp oil in a cast iron skillet (or other oven-proof, heavy-based skillet) over high heat. Sear one lamb rack on all sides until golden brown, including the ends. Remove and repeat with other lamb rack.
  • Roast: Place both racks in the skillet and roast for 15 minutes, or until the internal temperature is 57°C/135°F (for medium-rare). Remove pan from oven.
  • Baste: Add butter, smashed garlic and rosemary to pan. The residual heat of the pan will melt the butter. Spoon the butter over the lamb continuously for 30 seconds.
  • Rest: Remove lamb from skillet and place on a rack set over a tray. Pour butter remaining in the skillet over lamb. Cover loosely with foil and rest for 5 minutes.
  • Carve and serve! Cut lamb into individual cutlets or several cutlets per slice. Serve with Salsa Verde!

A tasty way to prepare economical cuts of lamb chops and steaks! Tenderise and infuse them with flavour with a delicious marinade then grill to perfection on the BBQ (or stove). Marinade for at least 2 hours, preferably overnight (no longer than 24 hours). Update: This is (was!) a tart marinade and following feedback from some readers by email and from a friend, I have tweaked the recipe slightly to take the edge off the vinegar. :) Resounding feedback all round!

600 - 800 g / 1.2 - 1.6lb lamb chops ((4 - 8, depending on size))
Oil (, for cooking, if required)
2 1/2 tbsp red wine vinegar
1 tbsp extra virgin olive oil
1 tbsp honey
3 garlic cloves (, minced)
1 1/4 tsp finely chopped fresh rosemary ((or 1 tsp dried rosemary))
1/2 tsp dried thyme
3/4 - 1 tsp sea salt
Black pepper

Steps:

  • Mix Marinade ingredients in a bowl until salt dissolves. Add lamb, mix to coat, then marinate at least 2 hours, preferably overnight, up to 24 hours.
  • Brush BBQ bars with oil if required (Note 1) and heat to medium high (or heat 1/2 tbsp oil in skillet on stove on medium high).
  • Cook lamb to your taste. I had 4 x 150g/5oz lamb loin chops about 2cm/3/4" thick and 3 minutes on each side = medium. I also cooked smashed garlic cloves and rosemary sprigs for garnish.
  • Transfer lamb to plate, cover loosely with foil and rest for 5 minutes.
  • Serve with sides of choice!

1 cup black muscat wine
2 tablespoons balsamic vinegar
2 large garlic cloves, minced
4 sprigs fresh rosemary, 2-inches-long each
1/4 teaspoon salt

Steps:

  • Place meat in non-aluminum bowl. Combine first 6 ingredients and pour over meat; let marinade 3 hours, turning meet frequently so it is well marinated.
  • Bake meat in 350 F oven for 60-100 minutes.
  • While meat is baking cook marinade in high heat until reduced to 1/2 cup. Serve it warm with meat.

leg of lamb weighing 2.5kg/5lb 8oz
1 garlic bulb
1 bunch rosemary
1 tbsp vegetable oil
2 carrots, cut into large chunks
1 onion, cut into quarters
1 glass red wine (about 150ml)
1.2l beef or lamb stock

Steps:

  • Using a sharp pointed knife, make at least 30 small incisions all over the leg of lamb.
  • Take 4 cloves from 1 bulb of garlic, peel and thinly slice them, then prod a slice into each incision. Next, take 1 bunch of rosemary, pull off small sprigs and push into the incisions, too.
  • If done in advance, cover the leg of lamb well and refrigerate. Remove from the fridge 1 hr before roasting.
  • Heat oven to 190C/170C fan/gas 5. Heat a large frying pan, add 1 tbsp vegetable oil and brown the leg of lamb all over.
  • Scatter 2 carrots, cut into large chunks, 1 quartered onion, the remaining garlic and rosemary in a large roasting tin, pour in 1 glass of red wine and 1.2l beef or lamb stock, then place the browned lamb in the tin.
  • Roast for about 1 hr 45 mins. Turn the leg of lamb halfway through so by the time it's cooked, each side has been in the stock.

320g celeriac , peeled and diced
320g swede , peeled and diced
320g potato , peeled and diced
1 tbsp rapeseed oil
3 red onions , thinly sliced
550g lean, trimmed lamb steak , diced
1 tsp finely chopped rosemary
1 tbsp vegetable bouillon powder
2 tbsp balsamic vinegar
1 tbsp chopped parsley
320g spinach , to serve
320g frozen peas , to serve

Steps:

  • Put the celeriac, swede and potato in a large steamer, then steam for 25 mins until softened.
  • Meanwhile, heat the oil in a large non-stick frying pan and fry the onions for 10 mins until softened and golden. Push to the side of the pan, then add the lamb and rosemary and stir-fry over the heat until browned, but still a little pink in the middle - try not to overcook it as it will become tough and will need a longer cook to become tender again. Add the bouillon and balsamic vinegar with 200ml boiling water. Stir to make a sauce.
  • Mash the steamed veg and spoon half into the centre of two plates. Top with half the lamb and gravy, scatter with the parsley and serve with the spinach and peas. Chill the remaining lamb and veg to reheat and serve on another evening.
