MAPLE-GLAZED SALMON
I have a few good recipes for family-favorite, heart-healthy salmon, but this one is always a hit. I serve it this way at least once a week and sometimes more! -David Krisko of Becker, Minnesota

- In a small saucepan, bring the grapefruit juice, vinegar, syrup and garlic to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Transfer 2 tablespoons to a small bowl; add oil. Set remaining glaze aside. , Sprinkle salmon with salt and pepper; place skin side down on grill rack. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill, covered, over medium heat or broil 4-6 in. from the heat until fish flakes easily with a fork, 10-12 minutes, basting occasionally with maple-oil mixture. Drizzle with reserved 2 Tbsp. glaze. If desired, garnish with fresh thyme sprigs.,

MAPLE-GLAZED SALMON
Salmon is my number one favorite "meat" so I'm always looking for a variety of ways to cook it. Here is another of several ways I like to prepare it. (I only make this with REAL maple syrup, so can't vouch for the results if you substitute.)

Steps:
- In a small bowl whisk together the syrup through cornstarch solution until smooth.
- Place the fillets skin-side-down in a shallow baking pan.
- Pour the syrup mixture over the salmon.
- Bake about 15-18 minutes at 450°F until the fish flakes easily; baste with glaze halfway through cooking.
- Sprinkle with scallion and almonds before serving.
SALMON WITH MAPLE-DIJON GLAZE
Steps:
- Preheat the oven to 425 degrees F.
- Spray a parchment-lined casserole dish with nonstick spray and lay the salmon in it skin-side down.
- In a small bowl, whisk together the mustard, maple syrup, olive oil, thyme and cumin. Pour the mixture over the salmon, spreading to coat it evenly.
- Bake until just cooked through, 12 to 15 minutes. Transfer the salmon to a serving platter.

MAPLE SALMON
This is the best and most delicious salmon recipe, and very easy to prepare. I love maple in everything and put this together one night. My husband totally loved it; he did not like salmon that much until he had this.

- In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.
- Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once.
- Preheat oven to 400 degrees F (200 degrees C).
- Place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork.

MAPLE-GLAZED SALMON
Delicious maple-glazed salmon is a little on the sweet side, but not too much. The whole house smells wonderful when this is cooking; it's a great warm winter meal! I have a hard time finding good recipes my family likes with fish, since my husband is not fond of lemon. This is a perfect compromise!

- Preheat the oven to 400 degrees F (200 degrees C).
- Mix maple syrup, soy sauce, garlic, dill, garlic salt, and pepper together in a small bowl.
- Place salmon in a shallow baking dish and coat with the maple syrup mixture. Cover dish and marinate salmon in the refrigerator, turning once, about 30 minutes.

MAPLE-GLAZED SALMON
Steps:
- Preheat the oven to 400 degrees F.
- In a small bowl, combine the brown sugar, maple syrup, olive oil, teriyaki sauce and some salt and pepper. Whisk until fully combined.
- Arrange the salmon in a single layer in a baking dish. Brush the glaze over the fish, coating evenly. Bake until the fish is cooked through, about 15 minutes.
GRILLED SALMON WITH MAPLE-DILL GLAZE
Steps:
- WHISK together mustard, vinegar, syrup, garlic, dill weed and salt in small bowl. Gradually whisk in oil. Place 3 tablespoons glaze in a resealable food storage bag with salmon. Marinate 1 hour in refrigerator.
- BRUSH grill pan with oil and heat over medium-high heat. Once grill is hot, place fillets, skin side up, in pan. Cook 10 to 12 minutes, turning once or until fish is opaque throughout. Place 3 tablespoons glaze in a small bowl. Brush the fillets with glaze during the last few minutes of cooking.
- COOK vegetable blend according to package directions. Drain if necessary. Divide vegetables evenly onto 4 dinner plates. Center fillets over vegetables. Serve drizzled with remaining warmed glaze.
SALMON WITH MAPLE-THYME GLAZE

- Preheat oven to 350 degrees F.
- Whisk mustard, 3 TBS maple syrup, 3 1/2 TBS water, and horseradish in small bowl to blend.
- Arrange salmon on baking sheet.
- Whisk 1 1/2 TBS maple syrup, sugar and thyme in another small bowl to blend.
- Spread thyme mixture evenly over salmon.
- Bake until salmon is just opaque in center, about 14 minutes.
- Transfer salmon to plates.
- Spoon mustard-horseradish sauce over and serve.
- Serves 6.

Salmon is a healthy and delicious fish, an excellent source of omega-3 fatty acids, special fats that can only be found in fish from cold, Northern waters including salmon, sardines, kippers, and mackerel. Be careful when buying your salmon, farmed salmon has high levels of PCBs, and ones from the Great Lakes or Atlantic Ocean have mercury levels, which are dangerous to pregnant women and children. - Preheat the oven to 350-degrees Fahrenheit. Lightly oil a shallow baking pan for the salmon. Halibut can be substituted for the salmon, Alaskan halibut is preferable over Atlantic which is high in mercury.
- In a saucepan, simmer the maple syrup, lemon juice, soy sauce, brown sugar, dijon mustard, rice wine vinegar, ginger, and garlic for 30 minutes. Keep the sauce warm while you prepare the fish.
- Arrange the scallions in the pan to form a bed for the salmon.
- Put the salmon, skin down, in the bed of scallions. Season the salmon with salt and pepper, and pour the sauce made in step 1 over the fish. Cook the salmon in the middle of the oven for 20 minutes, or until cooked through.
- Cut the salmon into six pieces. Arrange the salmon on top of salad greens (such as baby spinach) and sprinkle the scallions on top. Serve with a side dish such as Asian-inspired rice and with a lemon wedge as garnish.
