2 bagels (cut in half)
2 7 ounce cans white albacore tuna, drained
2 tablespoons red onion
3 tablespoons celery
1/3 cup mayonnaise
1 teaspoon lemon pepper
1/2 teaspoon dried dill weed
1 cup Colby Jack cheese (shredded)

Steps:

  • Place bagels cut side up on a foil lined baking sheet and broil for 1-2 minutes until lightly toasted.
  • In a mixing bowl, mix tuna, onion, celery, mayonnaise, lemon pepper, and dill weed until evenly combined.
  • Top toasted bagels with tuna mixture and sprinkle with cheese. Broil for 3-4 minutes until cheese is melted. Serve while hot.

3 cups good quality canned tuna (packed in water), drained
1/4 cup mayonnaise
4 cornichons, chopped
2 tablespoons chopped fresh dill
1 tablespoon chopped fresh tarragon leaves
2 tablespoons freshly chopped parsley leaves
2 tablespoons capers, drained
1 lemon, juiced
Kosher salt and freshly ground black pepper
1/4 to 1/2 cup extra-virgin olive oil, or to taste
2 everything bagels, sliced and toasted
1/4 cup cream cheese
1/2 red onion, thinly sliced crescents
1 vine-ripened tomato, sliced
1 seedless cucumber, sliced
4 Bibb lettuce leaves

Steps:

  • Begin with the tuna salad. Combine ingredients in a large mixing bowl and stir to combine. Taste and adjust seasoning with salt and pepper.
  • Take cut bagels and toast under a hot broiler until golden brown. While still hot smear the bottom with the cream cheese immediately. Top with a scoop of the tuna salad and then layer with red onion, tomato, cucumber and lettuce. Add the top half of the bagel and serve.

1 (7 ounce) can tuna, drained
2 tablespoons finely chopped red onions
2 tablespoons finely chopped red peppers
2 tablespoons mayonnaise (or more if you wish)
1/2 teaspoon Worcestershire sauce
2 bagels, halved horizontally
4 slices tomatoes, thick
4 slices swiss cheese (mozzarella works great too)

Steps:

  • Preheat oven to 350F; have ready an ungreased baking sheet.
  • In a mixing bowl, combine tuna, onion, pepper, mayo and worcestershire; taste and add salt and/or pepper if you wish.
  • In the toaster, toast bagel halves; place all 4 on baking sheet.
  • On a bagel half, place one slice tomato, then one-quarter of tuna mixture, then 1 slice cheese; repeat with other bagel halves.
  • Bake for 5 minutes, or until cheese melts.
  • If you wish, quickly broil to brown melted cheese.
  • Note: if you like tuna melts real cheesy, use one slice of swiss AND one slice of mozzarella!

4 mixed seed bagels
200g can tuna in spring water, drained
1 tbsp mayonnaise
juice 1 lemon
1 bunch spring onion , roughly chopped
tomato , sliced into thin rounds
handful grated mature cheddar

Steps:

  • Heat the grill. Split open the bagels, lay them on a baking sheet, then toast both sides until golden. Meanwhile, tip the tuna into a bowl and add the mayonnaise, lemon juice and spring onions. Season to taste and mix well.
  • Spread the tuna mix over the bottom half of each of the 4 bagels and top with tomato slices. Sprinkle over a handful of grated cheddar, then grill for 1 min until melted. Finish with the bagel tops and serve.

This is a fast and delicious tuna melt that I've been making for years!

1 (5 ounce) can tuna, drained and flaked
2 tablespoons mayonnaise
1 pinch salt
1 teaspoon balsamic vinegar
1 teaspoon Dijon mustard
2 slices whole wheat bread
2 teaspoons chopped dill pickle
¼ cup shredded sharp Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Place bread slices in the oven to toast while it preheats, and while you make the tuna salad.
  • In a small bowl, mix together the tuna, mayonnaise, salt, balsamic vinegar, mustard and dill pickle until well blended. Remove bread from the oven, and pile the tuna mixture onto one slice. Sprinkle cheese over the other slice of bread.
  • Bake for 7 minutes in the preheated oven, or until cheese is melted and tuna is heated through. Place the cheese side of the sandwich on top of the tuna side. Cut in half and serve immediately.

Looking for an interesting tuna melt, I wandered into the Food Network where I found this little gem of Emeril's which I slightly adapted to suit my 'buds. Even my tuna-averse husband loved them! I omit the tomatoes for personal preference, but have left them in the recipe. Please note that while I'm leaving the recipe yield and ingredient quantities the same as the original, I actually got twice as many open-faced sandwiches!

4 (6 ounce) cans solid white tuna packed in water, drained
1/3 cup kalamata olive, pitted and minced (You can use other brine-cured black olives)
1/4 cup mayonnaise, plus
1 tablespoon mayonnaise, plus more
mayonnaise, for spreading
1/4 cup finely chopped scallion
1 tablespoon capers, drained and minced
1 tablespoon fresh ground black pepper
1 teaspoon fresh ground black pepper
1 tablespoon fresh lemon juice
1/2 teaspoon salt
4 slices rustic white bread or 4 slices other dense white bread
8 slices tomatoes
4 ounces emmenthaler cheese, thinly sliced

Steps:

  • Preheat the broiler and position the oven rack about 6 inches from the broiler.
  • Combine the tuna, olives, mayonnaise, red onion, capers, black pepper, lemon juice, and salt in a medium bowl. Stir until well mixed.
  • Arrange the bread slices on a work surface. Lightly spread each slice of bread with additional mayonnaise and top with 2 tomato slices each. Divide the tuna salad evenly among the 4 bread slices over the tomatoes. Top the tuna salad with slices of cheese.
  • Place sandwiches on a sheet tray and place under broiler. Cook until cheese is golden and bubbly, about 3-4 minutes.

dill pickle
ketchup
1 red onion
2 whole wheat English muffins, split
3 ounces low-fat cheddar cheese, grated
salt and black pepper

Steps:

  • Preheat broiler.
  • Combine tuna, celery, onion and mayonnaise/pickles/ketchup dressing.
  • Season with salt and pepper.
  • Toast English muffin halves.
  • Place split-side-up on baking sheet and top each with 1/4 of tuna mixture.
  • Broil 2 to 3 minutes or until heated through.
  • Top with cheese and return to broiler until cheese is melted, about 1 minute longer.

This is dedicated to all those chefs who tell you to never, ever mix fish and cheese together; and yet there they are, at the diner at 2:00 in the morning. And you know what they eat? Tuna melts. And the reason they do is because it is delicious.

1 (6.5 ounce) jar oil-packed tuna, drained
1 tablespoon minced green onion
2 tablespoons finely diced celery
2 teaspoons capers, drained
1 teaspoon Asian chile paste (such as sambal oelek)
2 tablespoons mayonnaise, or more to taste
⅓ cup fresh mozzarella cheese
salt and ground black pepper to taste
2 tablespoons softened butter, divided
2 thick slices French bread
¼ cup shredded sharp white Cheddar cheese, divided
1 pinch cayenne pepper, or to taste

Steps:

  • Place tuna into a mixing bowl and lightly break apart with a fork. Add green onion, celery, capers, chile paste, and mayonnaise. Pinch small pieces from mozzarella cheese into the tuna salad and stir to mix. Season with salt and black pepper; refrigerate tuna salad until needed.
  • Heat oven's broiler. Line a baking sheet with aluminum foil.
  • Spread butter generously on both sides of French bread slices.
  • Broil buttered bread until golden brown on top, 2 to 3 minutes. Flip bread slices and broil other side until toasted, 2 to 3 more minutes. Remove from oven and turn bread slices over on the baking sheet so the darkest sides are on the bottom.
  • Gently spread tuna salad onto bread slices using 2 forks. Press the salad onto the bread and spread tuna all the way to the edges of the bread. Spread shredded sharp Cheddar over each sandwich. Dust tops with cayenne pepper.
  • Place sandwiches under broiler and cook until cheese is melted and bubbling, 5 to 6 minutes.
