Steps:
- Place bagels cut side up on a foil lined baking sheet and broil for 1-2 minutes until lightly toasted.
- In a mixing bowl, mix tuna, onion, celery, mayonnaise, lemon pepper, and dill weed until evenly combined.
- Top toasted bagels with tuna mixture and sprinkle with cheese. Broil for 3-4 minutes until cheese is melted. Serve while hot.

- Begin with the tuna salad. Combine ingredients in a large mixing bowl and stir to combine. Taste and adjust seasoning with salt and pepper.
- Take cut bagels and toast under a hot broiler until golden brown. While still hot smear the bottom with the cream cheese immediately. Top with a scoop of the tuna salad and then layer with red onion, tomato, cucumber and lettuce. Add the top half of the bagel and serve.
BAGEL TUNA MELT
This is a favourite with my sister-in-law, although the tomato was my addition. I actually prefer cold tuna salad sandwiches, but this makes a nice change from that.

- Preheat oven to 350F; have ready an ungreased baking sheet.
- In a mixing bowl, combine tuna, onion, pepper, mayo and worcestershire; taste and add salt and/or pepper if you wish.
- In the toaster, toast bagel halves; place all 4 on baking sheet.
- On a bagel half, place one slice tomato, then one-quarter of tuna mixture, then 1 slice cheese; repeat with other bagel halves.
- Bake for 5 minutes, or until cheese melts.
- If you wish, quickly broil to brown melted cheese.
- Note: if you like tuna melts real cheesy, use one slice of swiss AND one slice of mozzarella!
SEEDED BAGEL TUNA MELT

- Heat the grill. Split open the bagels, lay them on a baking sheet, then toast both sides until golden. Meanwhile, tip the tuna into a bowl and add the mayonnaise, lemon juice and spring onions. Season to taste and mix well.
- Spread the tuna mix over the bottom half of each of the 4 bagels and top with tomato slices. Sprinkle over a handful of grated cheddar, then grill for 1 min until melted. Finish with the bagel tops and serve.

SIMPLE TUNA MELT
Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Place bread slices in the oven to toast while it preheats, and while you make the tuna salad.
- In a small bowl, mix together the tuna, mayonnaise, salt, balsamic vinegar, mustard and dill pickle until well blended. Remove bread from the oven, and pile the tuna mixture onto one slice. Sprinkle cheese over the other slice of bread.
- Bake for 7 minutes in the preheated oven, or until cheese is melted and tuna is heated through. Place the cheese side of the sandwich on top of the tuna side. Cut in half and serve immediately.

EMERIL'S KICKED-UP TUNA MELT
Looking for an interesting tuna melt, I wandered into the Food Network where I found this little gem of Emeril's which I slightly adapted to suit my 'buds. Even my tuna-averse husband loved them! I omit the tomatoes for personal preference, but have left them in the recipe. Please note that while I'm leaving the recipe yield and ingredient quantities the same as the original, I actually got twice as many open-faced sandwiches!

- Preheat the broiler and position the oven rack about 6 inches from the broiler.
- Combine the tuna, olives, mayonnaise, red onion, capers, black pepper, lemon juice, and salt in a medium bowl. Stir until well mixed.
- Arrange the bread slices on a work surface. Lightly spread each slice of bread with additional mayonnaise and top with 2 tomato slices each. Divide the tuna salad evenly among the 4 bread slices over the tomatoes. Top the tuna salad with slices of cheese.
- Place sandwiches on a sheet tray and place under broiler. Cook until cheese is golden and bubbly, about 3-4 minutes.
TUNA MELT
These make a nice lunch, I have been making these for awhile now. Serve with a small salad and some fruit.

- Place tuna into a mixing bowl and lightly break apart with a fork. Add green onion, celery, capers, chile paste, and mayonnaise. Pinch small pieces from mozzarella cheese into the tuna salad and stir to mix. Season with salt and black pepper; refrigerate tuna salad until needed.
- Heat oven's broiler. Line a baking sheet with aluminum foil.
- Spread butter generously on both sides of French bread slices.
- Broil buttered bread until golden brown on top, 2 to 3 minutes. Flip bread slices and broil other side until toasted, 2 to 3 more minutes. Remove from oven and turn bread slices over on the baking sheet so the darkest sides are on the bottom.
- Gently spread tuna salad onto bread slices using 2 forks. Press the salad onto the bread and spread tuna all the way to the edges of the bread. Spread shredded sharp Cheddar over each sandwich. Dust tops with cayenne pepper.
- Place sandwiches under broiler and cook until cheese is melted and bubbling, 5 to 6 minutes.
