Steps:
- For the sauce, melt butter in a heavy large saucepan over medium-low heat. Add onion, then cover and cook until translucent, about 10 minutes, stirring occasionally. Add the garlic and vinegar. Boil until reduced to a glaze. Add 1/2 cup of the chicken broth and boil until reduced by half.

LAMB CHOPS WITH ROASTED VEGETABLES
Lamb and Rosemary - a perfect combination. And this dish never fails to please the meat-lovers! Please do not be put off by the amount of garlic.. roasting whole garlic cloves with the skin on.. it's a whole new flavour.. its got more of a sweetness to it rather than the usual pungency. Serve the garlic clove alongside the chops, squeeze the pulp out of the skin and spread over the meat...

Steps:
- Pre-heat the oven to gas mark 7/425°F/220°C.
- Pat dry the lamb chops and place them onto an oiled tray.
- Season the lamb with salt and pepper and drizzle with olive oil and sprinkle half of the chopped herbs and give it all a good toss.
- Pop the tray on the middle shelf of the oven for about 10-15 minutes, till you prepare the vegetables.
- To prepare the vegetables - peel and chop the carrots and parsnips in half lengthways.
- Peel and chop the potatoes in half lengthways and then cut each half into 4 wedges.
- With the onions, peel the skin off but do not slice them. Make cuts not all the way down to the roots but about 3/4 way - make cuts into eighths so what you have are onions slightly opened up like water lilies.
- Leave the garlic cloves whole with their skin on.
- Put all the chopped vegetables, onions and garlic cloves in a bowl.
- Add in the rest of the chopped herbs, season with salt and pepper and sprinkle in the oil and toss them well.
- Remove the chops from the oven, arrange the vegetables all around the meat and return the tray to high shelf of the oven and cook for a further 35 minutes or until both the meat and vegetables are tender.
- Remove them from the oven and cover the tray with foil to allow the meat to rest for about 20 minutes.
- Transfer the chops and vegetables onto a serving plate.
- Scrape and pour the remaining juices from the tray into a saucepan.
- Pour in the stock and let it simmer and bubble over medium heat for about 5 minutes.
- Pour the gravy into a jug and serve along with the lamb chops and vegetables.

Steps:
- Place the stock in a medium pot and warm it up over medium-low heat.
- Place an oven rack 8 inches from the broiler and preheat the broiler to high.
- In a medium skillet over medium to medium-high heat, melt a tablespoon of the butter with a tablespoon of the EVOO, once around the pan. When the pan is hot, add the onions and garlic and cook for 2 to 3 minutes, then add the Arborio and cook for a minute more. Add the wine and cook it all away, 1 minute. Add a few ladles of warm stock and let the rice absorb it, stirring occasionally. The risotto will take 22 minutes to cook. Add a ladle of broth as each addition is absorbed, until the risotto is starchy, creamy, and cooked to al dente. Add the peas when the risotto is just about al dente, the last minute or two. Add the cheese, mint, and parsley just before serving.
- When the risotto is half cooked, 10 minutes from being done, drizzle the lamb chops with EVOO and arrange them on a slotted broiler pan. Place the chops under the hot broiler and cook for 8 to 10 minutes for medium rare. Place a tiny pan on the stove over medium heat. Add the remaining tablespoon of EVOO and the shallots to the pan. Cook the shallots for 2 minutes, then add the preserves and whisk them together with the balsamic vinegar and black pepper. Heat them to a bubble, then remove them from the heat and add the remaining tablespoon of butter. Whisk the butter into the sauce.
- Season the risotto with salt to taste. Place a generous serving of risotto into shallow dinner plates. Arrange 2 chops on each plate alongside the risotto and drizzle the black cherry-black pepper glaze over the chops. Garnish the plates with extra sprigs of mint.

- Thoroughly combine the ginger, fennel, mustard, cardamom, cayenne, salt and garlic in a small-sized bowl, stirring to make a damp (and potent) rub. Coat each lamb chop with a scant teaspoon of this rub on each side, pressing it into the meat. Refrigerate, covered, for a least 30 minutes or as long as overnight.
- Heat 2 Tbsp (30 mL) of the canola in a large-sized skillet over medium heat. Add half the lamb chops, rub and add to the hot oil and sear each side until browned, about 3 minutes per side. Transfer the chops to a serving platter. Scrape any spices and oil stuck to the skillet into a small bowl. Add the remaining 2 Tbsp (30 mL) canola oil to the same skillet and repeat with the remaining lamb chops. Add the chops to the ones in the serving platter. Cover it with foil to keep warm as you prepare the sauce.
- Add the saved browned spices and oil to the skillet along with the onion. Stir-fry the medley to allow the onion to soften, 2 to 3 minutes.
- Stir in the tomato paste and let it warm through, 1 to 2 minutes. Add the spinach, including its thawed juices, and salt. Scrape the skillet to loosen up browned bits of spices and tomato paste to deglaze it. Cook the spinach, covered, stirring occasionally until the spinach is olive green and tender, about 5 minutes.

- Heat an oven to 400°F. Pat the fish filets very dry with paper towels, remove any pin bones, if necessary, and season generously with salt and pepper. Set aside.
- Cut the lemon in half crosswise and juice one half; cut the other half into wedges for serving and set aside. Using a Microplane grater, grate ½ the garlic clove into a medium bowl, whisk in 1 tablespoon of the lemon juice, a big pinch of salt, the sugar and some black pepper. While whisking, slowly dribble in 2 tablespoons olive oil to make an emulsified dressing.
- Mince the onion or shallot. Melt 2 tablespoons butter in a saucepan and add the onion. Cook, stirring, until fragrant and translucent, 2–3 minutes, then add the fresh (or frozen) peas. Sauté just until warmed through, 3–4 minutes, season with salt and pepper and scrape into a high-speed blender. Add ½ cup water, 1 teaspoon lemon juice and purée until very smooth; set aside and keep warm. (If you don’t have a high-speed blender, purée the peas in a food processor until as smooth as possible.)
