LAMB CHOPS WITH GARLIC AND ROSEMARY

Steps:
- Heat a large skillet over medium-high heat. Dry the lamb chops well and season with salt and pepper, to taste. Add the oil to the pan and heat until shimmering. Lay chops in the pan and cook, turning once, until an instant-read thermometer inserted into the sides of the lamb registers 125 degrees F, about 4 minutes per side. After cooking the lamb on each side, stand it up on it's edges to brown the sides as well, about 2 minutes more. Reduce the heat if needed so the browned bits remaining in the pan don't burn. Remove chops from the skillet and set aside in a warm place.
- Pour off all but 1 1/2 tablespoons fat from the skillet. Add the garlic and cook, tilting the skillet to keep the garlic submerged in the fat, and cook until golden, about 1 minute. Add the wine and rosemary, stirring up browned bits from the bottom of the pan, and simmer over high heat until syrupy, about 3 to 4 minutes. Add the chicken broth and cook until reduced by about half, another 5 to 6 minutes. Remove pan from the heat and briskly whisk in the butter. When the butter has incorporated, whisk in the mustard and heavy cream. Season with additional salt and pepper.
- Serve 2 chops per person with the sauce.

- Combine the olive oil, garlic, rosemary and some salt and pepper in a zip-top bag. Add the lamb chops and rub with the marinade. Seal the bag and leave at room temperature for 1 hour, or refrigerate for up to 24 hours.
- Prepare a grill for high heat. Remove the chops from the bag and wipe off excess marinade. Grill for 2 to 3 minutes on each side, or until cooked to desired doneness. Let rest for 5 minutes. Sprinkle the chops with a little flaked salt and serve.
ROSEMARY LAMB CHOPS
While the lamb chops from Beth Tomlinson of Morgantown, West Virginia do make for an upscale meal, they are really fast and easy. "I tend to make them for special occasions, although they are quick enough for a nice weeknight dinner," Beth explains. GARLIC ROSEMARY-MARINATED LAMB CHOPS

- Preheat the broiler. In a small bowl stir together the zest, the garlic paste, the rosemary, the oil, and pepper to taste, rub the lamb chops with the marinade, and let them marinate on a plate for 20 minutes. Broil the lamb chops on the rack of a broiler pan about 4 inches from the heat for 4 to 5 minutes on each side for medium-rare meat.
LAMB CHOPS ROSEMARY
Lamb and rosemary go together so well. This is a nice dish to serve with mashed potatoes and greens. Very Australian, with style :) You can use the older and fattier lamb, just be sure to skim the fat first. If you use mutton, do it in the crock pot and cook till the meat falls off the bones, cool and skim.

- In a heavy fry pan, fry the chops in a little oil until brown.
- Add pepper and onions, stir around, add everything else and cover and simmer about 30 minutes.
- If the sauce is too thin, turn to high and take the lid off for a minute or two.

LAMB CHOPS WITH GARLIC-ROSEMARY SAUCE

- Chop garlic. Pat lamb dry and season with salt and pepper. In a 12-inch heavy skillet heat oil over moderately high heat until hot but not smoking and sear lamb 3 minutes. Turn lamb over and sear 2 minutes more for medium-rare. Transfer lamb to 4 plates. Add garlic, rosemary, lemon juice, and stock to skillet and deglaze over high heat, stirring and scraping up brown bits, 1 minute. Whisk in butter. Pour sauce over lamb.
GRILLED LAMB CHOPS WITH ROSEMARY SALT

- Mix together the oregano, garlic, lemon zest from 1 lemon, lemon juice and 1/4 cup olive oil. Sprinkle the lamb chops with kosher salt and pepper and add to the marinade, thoroughly coating. Allow to marinate in the refrigerator for 1 hour, and up to 6 hours.
- Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
- In the meantime, mix the flaky sea salt, rosemary and remaining lemon zest. Work the mixture with your fingers, releasing the oils from the zest and rosemary. Remove the lamb chops from the marinade and place on the direct heat side of the grill. Char on both sides and cook to an internal temperature of 125 degrees F for medium-rare, about 6 minutes. If the lamb chops become too charred, but the internal temperature is still low, move them to the indirect heat side of the grill to finish cooking.
- Remove from the grill and let rest for 5 minutes. Sprinkle with the lemon rosemary salt before serving.

- Place pepper on plate and press each chop firmly into pepper and press in with your hands.
- In a heavy frying pan (I use my cast-iron frying pan) over medium-high heat, add olive oil and heat.
- Add peppered lamb chops and sear on both sides.
- Sprinkle lamb chops with salt.
- Reduce heat to medium (do not degrease the pan).
- Add beef stock and lemon juice; continue to cook until the chops reach the desired doneness, approximately 2 to 3 minutes for medium rare and an internal thermometer registers 125°F.
- (use a meat thermometer to test for doneness).
- Remove lamb chops to an oven-safe platter, cover loosely with aluminum foil, and keep warm in a 200°F oven until ready to serve (needs to let rest 5 to 10 minutes before serving).
- NOTE: During this time the meat continues to cook (meat temperature will rise 5 to 10 degrees after it is removed from the heat source) and the juices redistribute.
- Continue to cook the sauce, scraping any pieces of meat off the bottom of the pan and stirring them into the sauce.
- Let the liquid boil until liquid is reduced to a shiny glaze.
- Remove from heat.
- Whisk in butter and fresh rosemary.
- Remove lamb chops from the oven.
- Add any lamb juices to the sauce.
- Spoon sauce over chops and serve.
GRILLED LAMB CHOPS WITH ROSEMARY, SALT, AND TAPANADE AIOLI
Steps:
- Combine the mayonnaise, zest, juice, anchovies and garlic in a food processor and process until smooth. Add the olives and salt and pepper and pulse a few times just to incorporate the olives, not puree them. Cover and refrigerate for at least 30 minutes before serving. Can be made 8 hours in advance and refrigerated.
- For the lamb chops:
- Combine the rosemary and salt in a food processor and process until combined.
- Heat the grill to high.
- Brush the chops on both sides with oil and season with a few teaspoons of the salt and freshly ground black pepper. Place on the grill and grill until golden brown and slightly charred, 3 to 4 minutes. Flip the chops over and continue grilling to medium-rare doneness, 2 to 3 minutes longer. Let rest 5 minutes before serving. Top each chop with a dollop of the aioli. Garnish with rosemary sprigs.
GRILLED LAMB CHOPS WITH ROSEMARY

- Trim any excess fat from the lamb chops. Place them in a single layer in a dish.
- Mix the vinegar, oil, anchovy paste, rosemary and garlic together and season to taste with salt and pepper. Spread this mixture over the lamb chops, turning them over in the dish, then turning them back again so both sides become lightly coated with marinade. Cover and allow to marinate at room temperature for one hour.
- Preheat a grill or broiler to very hot.
- Grill or broil the lamb chops as close as possible to the source of heat so they become seared and brown on the outside but still pink in the middle - six to 10 minutes, depending on the heat of the grill. Serve at once, garnished with sprigs of rosemary.

- In a small bowl, combine rosemary,garlic, oil and pepper.
- Spread the paste over both sides of the chop; let stand 30 minutes.
- Prepare a charcoal or gas grill for direct grilling over high heat; oil the grate.
- Grill the chops over the hottest part of the grill, turning once, until both sides are nicely browned, about 2 minutes per side.
- Move the chops to the cooler side of the grill and cover.

SIMPLE ROSEMARY LAMB CHOPS
The simplest of treatments often brings out the best of flavours. Do these in the fry pan or on a BBQ. We like our lamb chops cooked though rather than pink... and we often use more olive oil than stated because then the fat around the edge of the chops caramalises and gets lovely and crispy. Cooking time is approximate because it really depends on how rare to well done you prefer your meat and how thick your chops are. *DO* pick these up and eat them with your fingers. Guests thought we were mad but after trying them, sticky fingers all around the table were diving into the serving dish for more! I have some small hand towels that I dampen slightly and wrap well in cling film before everyone arrives. Put them in the microwave for a minute or so, hand them out to guests to clean their hands on afterwards, but be careful, there will be a lot of steam as the first bit of cling film comes off, but it's a classy cleanup and guest will be impressed :) ZWT REGION: New Zealand.

- Heat the butter and olive oil together in a fry pan.
- Pepper the lamb chops well.
- Put them into the hot oil and then turn over after a minutes so that they are sealed and seared to keep the juices inches.
- On the top side only add 3/4 of the fresh rosemary. Cook for 7-8 minutes.
- Turn the chops over and cook for as long as you need to get the insides to the "doneness" that you prefer, add a small amount of salt once you have turned them over.
- If you like your chops to be cooked though, turn the heat down just a little at this point so that they don't burn.
- Drain off the excess fat and serve with the remaining rosemary sprinkled on top.

- Preheat oven to 375 degrees F. Combine the garlic, orange zest, rosemary, salt, pepper and olive oil in a small bowl, and stir until combined.
