- 1. Chop the romaine lettuce and add to a large salad bowl. Add remaining ingredients except the dressing and balsamic vinegar. Cover and store in the refrigerator until ready to use. 2. Just before serving, toss in the dressing and balsamic vinegar. Add a little more dressing, if desired. Makes 4 main-courses salads or 8 first-course salads

This is supposed to be the original chopped salad recipe, created by the owner of the La Scala restaurant in Los Angeles in the 1950's. I think it sounds pretty tasty, 50 years later!

Steps:
- To make vinaigrette: combine oil, vinegar, mustard, and salt and pepper to taste; whisk until well blended. Set aside.
- In a large bowl, combine lettuces, salami, mozzarella, and garbanzo beans. Toss with vinaigrette to taste.
- Garnish with tomato and basil if desired.

Steps:
- Add the tomatoes, iceberg, romaine, chickpeas, salami and mozzarella to a large salad bowl.
- Add the olive oil, Parmesan, vinegar, mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper to a measuring cup or mason jar. Whisk to combine.
- Add the dressing to the salad and toss to combine. Serve immediately.
LA SCALA CHOPPED SALAD
One of LA's most iconic chopped salad's is found at La Scala - it's simple, customizable, and insanely addicting.

Steps:
- Chop iceberg and salami into thin strips.
- Whisk 3 tbsp of oil, 2 tbsp of red wine vinegar, 2 tsp of dijon, 1/2 tsp of salt and pepper in a bowl then toss in your chickpeas.
- Add 1/2 cup of oil, 1/4 cup of red wine vinegar, 2 tsp of dijon mustard, 1/2 tsp of salt and pepper, and 1/4 cup of pecorino romano to a jar and shake well until it's emulsified.
- Add iceberg to a large mixing bowl and add in 1/2 of your dressing and toss till the lettuce is coated. Taste and determine if you'd like to add more dressing. Then add in sliced salami and shredded mozzarella and toss again. Season with salt and pepper to taste.
- Add marinated chickpeas to the bottom of a small bowl then pack in your salad. Top the bowl with a plate and flip it over using 2 hands then carefully remove the bowl and enjoy!

This chopped salad from La Scala restaurant in Beverly Hills was first introduced in the 1960's and became a fad among celebrities. It's still a popular salad entree; and you can make it at home for a lot less than the $12. that it costs at the restaurant.
