- Preheat oven to 350°. Using a 1/2-cup ice cream scoop, place 8 scoops of ice cream on a baking sheet. Freeze until firm, about 1 hour. Meanwhile, combine brown sugar, butter and cinnamon. Stir in cornflakes. Transfer to an ungreased 15x10x1-in. baking pan. Bake until lightly browned, 4-6 minutes. Cool completely., Roll ice cream balls in crumb mixture. Cover and freeze until firm, at least 1 hour. If desired, serve with toppings.

FRIED ICE CREAM RECIPE
Fried ice cream is a tasty dessert made with a scoop of ice cream that is frozen solid and then covered in a crispy coating before being flash-fried.

- Gather the ingredients.
- Place six scoops of ice cream , about 3 inches in diameter, on a baking sheet. Freeze for at least 2 hours or until very firm.
- In a shallow bowl, combine the cornflake crumbs, coconut, and cinnamon.
- Roll the frozen ice cream balls in the crumb mixture. Place them back on the baking sheet and freeze again for at least 30 minutes. Reserve the remaining crumb mixture for the next steps.
- In a medium bowl, beat the egg whites and sugar until foamy.
- Dip the coated ice cream balls into the egg mixture, then roll again in the reserved crumb mixture, coating completely. Freeze again for 1 hour. Meanwhile, chill a medium bowl or plate in the refrigerator.
- When ready to fry, heat about 3-inches of oil in a medium heavy-duty saucepan to 375 F. Set the chilled plate next to the pan. Remove one ball of ice cream at a time from the freezer. Quickly dip into the hot oil until the coating turns crisp and brown, 8 to 10 seconds.
- Remove from the hot oil with a slotted spoon and place on the chilled plate. Repeat with the remaining ice cream balls. Serve immediately with a drizzle of sauce, if desired.

FRIED ICE CREAM WITH CEREAL CRUST

Steps:
- Freeze a baking sheet until very cold, at least 1 hour.
- Use a 2-inch ice cream scoop and scoop 6 balls of ice cream from your desired flavor combination onto the cold baking sheet. Freeze until the ice cream is rock solid, about 1 hour.
- Meanwhile, set up a breading station with 3 shallow dishes: Put the flour into the first dish. Beat the eggs together in the second dish. Put the cereal from your desired flavor combination into a third dish; use the bottom of a measuring cup to crush into fine crumbs.
- Remove 1 scoop of ice cream from the freezer. Coat in the flour while using your hands to shape it into a perfect ball. Dip the ball in the egg, letting any excess drip off, then coat completely in the cereal. Repeat this breading process 3 more times, and return the ball to the baking sheet in the freezer. Bread the remaining ice cream scoops. Freeze until rock solid, about 2 hours of up to overnight.
- For the fried ice cream: Fill a large heavy-bottomed pot with about 3 inches of oil and attach a deep-fry thermometer to the side. Bring to 375 degrees F over medium-high heat. Line a plate with paper towels. Remove the ice cream balls from the freezer and, careful of the hot oil splashing, gently slide them into the oil with a slotted spoon. Fry until the cereal is golden brown and crispy, about 30 seconds. The ice cream will still be frozen and easy to slice without melting. Use the slotted spoon to transfer the balls to the prepared plate and let drain. Transfer to a serving platter and serve immediately.
FRIED ICE CREAM

- Melt the butter in a nonstick skillet over medium heat. Add the crushed cornflakes and toast until golden, about 5 minutes.
- Remove the skillet from the heat and stir in the sugar, cinnamon and salt. Allow to cool slightly.
- Scoop the ice cream into a bowl or bowls, and spoon over generous quantities of the fried cornflake crumbs. Top with some whipped cream, sprinkles and maraschino cherries.
FRIED ICE CREAM (WITHOUT THE FRIED)

- Crush cornflakes in a bag using a rolling pin until crumbs form.
- Melt butter and add cornflakes, coconut, sugar, corn syrup, and cinnamon.
- Roll ice cream into 3 inch balls. To roll the ice cream into balls, only thaw the ice cream slightly so you can easily roll it with your hands. You could even wear plastic gloves to make rolling the balls easier. Then roll the ball in the cornflake mixture. You may need to pack the mixture firmly around the ice cream ball.
- Place the covered ball onto a cookie sheet lined with waxed paper.
- Freeze until firm, about 4 hours.
- When ready to serve, top with whipped cream, hot fudge and caramel.
DEEP FRIED ICE CREAM
Another treat fo Cinco de Mayo! Make the ice cream balls the night before and they will be ready to go when you need them.

- Place a plate or sheet pan in the freezer and let it chill for at least 1 hour or overnight.
- Using a large ice cream scoop, make balls of ice cream and place them on the sheet pan then return them to the freezer.
- Cut the crusts off the sliced bread and using about 2 slices per ice cream ball, form the bread around the ice cream using your hands to pack it like a snow ball.
- This works best if you turn 1 piece of the bread so that it is not directly over the other, so that you have 8 corners, like a star.
- Once it's completely covered return it to the freezer.
- If some ice cream melts through the edge, just wipe it off.
- In a medium saucepan, heat 3 inches of canola oil to 365 degrees F.
- Drop the covered ice cream balls, one at a time, into the hot oil and fry, turning occasionally so they color evenly, until golden brown on all sides.
- Remove from oil and briefly drain on paper towels.
- Stir together the sugar and cinnamon.
- Coat fried ice cream in the cinnamon sugar mixture.
- Serve immediately.
- I like it drizzled with caramel or chocolate fudge sauce.

FRIED ICE CREAM RECIPE
Fried ice- cream, a favourite mexican dessert. One has to be very quick while preparing and serving this recipe. It is crunchy from outside and creamy from inside.

- With an ice cream scoop, form 4 large balls of ice cream. Place on a waxed paper lined sheet and cover with plastic wrap. Freeze for at least 2 hours.
- In a bowl, combine the cornflake crumbs with either the coconut, walnuts or cookie crumbs (or any combination). Spread the mixture in a shallow dish.
- Dip the ice cream balls in the crumb mixture and freeze for 30 minutes.
- In a bowl, beat the eggs and sugar. Dip the coated ice cream balls into the eggs, then roll in the crumb mixture, coating completely. Freeze for 1 hour. (If necessary, or for a thicker crust, roll again in eggs and crumbs until the balls are completely coated.)
- Heat the oil in a large pot or fryer to 400 degrees F. One at a time, lower the balls into the oil and fry until golden brown, about 30 seconds to 1 minute. Remove from the oil and place in a dessert bowl. Drizzle with chocolate sauce and whipped cream, as desired. Repeat with the remaining ice cream.
FRIED ICE CREAM

- Scoop ice cream into 8 - 1/2 cup sized balls. Place on baking sheet and freeze until firm, about 1 hour.

THE ORIGINAL CHI-CHI'S MEXICAN FRIED ICE CREAM
This is the original Chi-Chi's Mexican Fried Ice Cream. You can serve this on the fried flour tortilla sprinkled with a cinnamon sugar mix as it was done in the later years or in a sherbet glass as it was in the early 80's. At one point we even offered these in chocolate and strawberry as well. Prep time is for the ice cream ball to harden.

Steps:
- Form 4 oz. of French vanilla into a ball.
- Roll the ball of ice cream in the cinnamon sugar mixture until completely coated.
- Roll in corn flake crumbs till coated.
- Place in the freezer to harden.
- Place the hardened ice cream ball in a fry basket and deep fry for 2 seconds at 350 degrees fahrenheit.
- FOR THE SHERBET GLASS(the early years):.
- Put a dollop of whip cream in the bottom of the glass.
- Place the fried ice cream ball on top of the dollop.
- Drizzle a small amount of honey over the top of the ice cream ball.
- Place 8 whip cream rosettes around the ice cream ball and one on top.
- Top with a maraschino cherry.
- Enjoy!
- FOR THE TORTILLA (the later years):.
- Deep fry a tortilla flat until crispy.
- Sprinkle with the remaining cinnamon sugar mixture.
- Follow the instructions for the sherbet glass.
- Enjoy!
