BAKED PORK CHOPS WITH SAUERKRAUT
This is a super-easy recipe for pork chops. I pan-fry the chops first and then bake them with sauerkraut, apple, onion, and brown sugar. Delicious!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a casserole dish.
- Rub pork chops with salt and pepper on both sides. Heat oil in a skillet over medium-high heat and pan-fry pork chops on both sides until browned, 5 to 7 minutes per side. Place browned pork chops into the prepared casserole dish.
- Combine sauerkraut, apple, onion, brown sugar, and caraway seeds in a bowl; cover pork chops with the mixture. Cover dish with aluminum foil.
- Bake pork chops in the preheated oven until no longer pink in the center, about 45 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

PORK CHOPS WITH BEER SAUERKRAUT
This is the smell of Cleveland in late fall. Show up at the Municipal Parking Lot to tailgate before any home football game and you'll see a million variations on the theme of pork, kraut, and beer. The hoppy beer-I like Commodore Perry IPA from Great Lakes Brewing- deglazes the pan and makes a great sauce for the chops. Go Browns!

- Combine the paprika, coriander, 1 teaspoon salt and black pepper to taste in a small bowl. Season both sides of the pork with this spice mixture.
- Add the oil to the preheated skillet. Add the pork in a single layer in the pan. Cook, without moving, until lightly golden brown, about 1 minute. Flip the meat and scoot to the outer edges of the pan. To the open space in the middle, add the onions and a pinch of salt. Cook for 2 minutes, stirring the onions occasionally.
- Add the sauerkraut and continue cooking until the onions have softened and the sauerkraut turns golden brown, about 1 1/2 minutes. Add the beer and deglaze the pan, scraping with a wooden spoon to get up the browned bits on the bottom of the pan. Cook until the sauce reduces slightly, about 30 seconds.
- Remove from the heat and stir in the parsley. Serve the pork chops topped with the sauerkraut mixture, any accumulated juices and mustard.
GERMAN PORK CHOPS AND SAUERKRAUT
As a soldier during WWII my Dad learned to make this hearty pork dish from a local German woman during the Allied occupation of Germany. I don't know the German name for it, but it is delicious!

- Pan fry chops until light brown.
- Grease 13x9-inch pan and place chops within pan.
- Using milk, make soup according to directions; pour over chops.
- Drain sauerkraut.
- Place 2 TBSP of sauerkraut on top of each chop.
- Grind pepper over top of all.
- Bake at 350° for 30 minutes covered with foil.

PORK CHOP AND SAUERKRAUT BAKE

- Gather the ingredients.
- Heat the oven to 350 F. Lightly grease a shallow 2 1/2- to a 3-quart baking dish.
- Sprinkle the pork chops lightly with kosher salt and black pepper.
- Heat the olive oil in a large skillet over medium heat. Cook the pork chops in the hot oil for about 8 to 10 minutes, turning to brown both sides. Remove the pork chops to a plate and set aside.

I can still picture my Polish grandmother cooking this on a wood stove. The sauerkraut picks up the browned pork color and flavor. The beans mellow the sauerkraut's bite by absorbing some of the sour taste while adding an unique flavor to the dish.

- In a large skillet, melt bacon drippings over low heat.
- Sprinkle the pork chops with flour and pepper.
- Fry the chops over medium high heat until well browned on both sides, remove chops and set aside.
- Add sauerkraut and stir to pick all the browned bits, stir in beans and water.
- Scrape the sauerkraut and bean mixture to the sides of the pan, place the chops in the center and spoon some of the sauerkraut over the chops.

PORK CHOPS BAKED IN PEAR SAUERKRAUT
Served with mashed potatoes, this meal reminds me of time I spent in Germany. A real German hausfrau would cook up an apple in her sauerkraut, but using baby food is a real time-saver and still softens the flavor of the sauerkraut and makes it delicious.

- Heat oil in a large ovenproof skillet over medium heat.
- Add pork chops and cook about 2 minutes per side, turning once, until lightly browned.
- Remove skillet from heat and remove chops to a plate.
- Sprinkle with pepper and salt.
- Meanwhile drain sauerkraut, rinse under cold water, and squeeze dry with paper towels.
- Mix sauerkraut and puréed pears in the skillet.
- Top with pork chops.
- Bake uncovered, 18 to 20 minutes, until centers of chops are opaque and barely pink.
- Serve with mashed potatoes.
- Note: My supermarket stores the bagged sauerkraut in the meat section near the bratwurst and other sausages.
- It really is better tasting than any of the canned or jarred kinds I've tried, if you can find it.
REALLY EASY PORK AND SAUERKRAUT BAKE
I threw this together when I was really craving kraut. It can be really hard to get good kraut in the UK but as I grew up Pennsylvania Dutch sometimes it is hard to ignore the calling of the kraut juice in my veins. This is really easy and reminds me of when my mother would slow cook pork and kraut for New Year's Eve. Using the lean pork steaks actually makes this pretty low fat. It goes well with mashed potatoes.

- Put the lean pork steaks (I try to make them fairly thin steaks as this is a quick recipe) in the bottom of an oven proof dish.
- Lay the sliced mushrooms over the top of the steaks and then top with the sauerkraut.
- Pour the water into the dish and then put the dish into the oven and cook for between 30 to 40 minutes depending on the thickness of your pork.
