Ingredients

8 large Kumquats
6 whole mint leaves
1 lime
2 oz simple syrup
2 oz light rum
soda water.

Steps:

Preparation: Slice Kumquats into coin sized shapes, discard seeds, and put into mixing glass. Add mint leaves, simple syrup, lime wedges, and muddle ingredients. Fill glass with ice, add light rum, and fill with soda water. Stir and garnish with four (4) reserved kumquat slices.

48 kumquats, halved and seeded
2 cups fresh orange juice (from 4 to 5 oranges)
1/2 cup sugar
2 cups fresh mint leaves
3 cups light rum
6 cups ice cubes

Steps:

In a large pitcher, stir together kumquats, orange juice, and sugar. Let stand 10 minutes. Add fresh mint leaves. Muddle mixture with a wooden spoon, crushing kumquats and mint. Stir in rum. Add ice cubes, and serve immediately. (Or, add ice to 8 glasses, and pour mixture over.)
