The best Korean Fried Chicken - Crispy buttermilk fried chicken smothered in a spicy, sticky Korean Gochujang sauce. INSANELY good!

4 chicken breasts ( sliced into long thick strips)
1 cup (240ml) buttermilk
1/2 tsp salt
1/4 tsp white pepper
1/4 tsp garlic salt
1 1/2 cups (180g) plain (all-purpose) flour
1 tsp salt
1 tsp ground black pepper
1/2 tsp garlic salt
½ tsp celery salt
1 tsp dried thyme
1 tsp paprika
1 tsp baking powder
1 tsp chilli flakes
vegetable oil for deep frying ((at least 1 litre/four cups))
2 tbsp gochujang paste
2 tbsp honey
4 tbsp brown sugar
4 tbsp soy sauce
2 cloves garlic (peeled and minced)
2 tsp minced ginger
1 tbsp vegetable oil
1 tbsp sesame oil
3 spring onions (sliced into thin strips)
1 tsp sesame seeds
½ tsp chilli flakes ((red pepper flakes))

Steps:

  • Place the chicken in a bowl. Add the buttermilk, salt, pepper and garlic salt. Mix together, cover and place in the fridge to marinade for at least 1 hour (up to over night)
  • Preheat the oven to a low heat (to keep cooked chicken warm). Heat a large pan of vegetable oil (or preheat your deep fat fryer) until hot (you can test by dropping a small cube of bread in there, if it rises immediately to the top and starts to bubble rapidly, it's hot enough). You'll need at least 1 litre (4 cup) of oil.
  • Mix together the crispy coating ingredients in a small bowl.
  • Take the chicken out of the fridge. Lift a piece from the buttermilk and allow the excess to drip off. Dredge the chicken in the crispy coating mixture - ensuring it's fully covered. Place on a tray and repeat until all of the chicken is coated.
  • Once the oil is hot enough, add in 5 or 6 of the chicken tenders. You can add more or less depending on the size of your pan, just be sure not to overcrowd the chicken.
  • Cook for 3-5 minutes until golden brown and cooked in the middle. You can check this by cutting open a piece of chicken, if it's no longer pink in the middle, it's cooked.
  • Place on a tray in the oven to keep warm whilst you cook the rest of the chicken. **If you want to ensure the chicken stays extra crispy whilst in the oven, see my 'Top Tips for Success' section in the post.
  • Meanwhile make the sauce. Place the gochujang, honey, sugar, soy sauce, garlic, ginger, vegetable oil and sesame oil in a saucepan and stir together.
  • Bring to the boil, then simmer for 5 minutes until thickened.
  • Pour over the crispy chicken and carefully toss together, then top with the spring onions, chilli flakes and sesame seeds before serving.

4 cloves garlic
1 (1-inch) piece of fresh ginger, peeled and coarsely chopped
¼ cup gochujang
¼ cup unseasoned rice vinegar
2 Tbsp soy sauce
2 Tbsp honey
1 Tbsp fish sauce
Canola oil, for frying
4 cups rice flour
2 cups water
4 chicken wings, wing tips removed
4 chicken drumsticks
4 chicken thighs

Steps:

  • To make the sauce, pulse the garlic and ginger in a food processor fitted with the metal blade until finely chopped. Add the gochujang, rice vinegar, soy sauce, honey, and fish sauce and pulse just until combined. Pour the sauce into a large mixing bowl and set aside.
  • In a deep fryer or large, deep stockpot, heat 3 inches of canola oil over high heat to 340˚F.
  • Set a wire rack over a rimmed baking sheet for draining the chicken. Submerge a frying basket in the oil, or place a wire mesh colander nearby. Place a rimmed baking sheet near the fryer. (You'll shake the fried chicken over the baking sheet.)
  • Put 2 cups of the rice flour in a shallow bowl. In a bowl, stir the remaining 2 cups of rice flour with 2 cups of water to make a very thin paste.
  • Dredge the chicken pieces in the flour, then dip them into the flour paste to coat. Once all pieces have been coated, carefully place the chicken in the hot oil. Fry for 10 minutes. Maintain a frying temperature of 340˚F.

Jeff loves Korean food. This dish is an homage to Korean-style fried chicken and staple spicy Korean ingredients like gochujang and gochugaru.

6 tablespoons gochujang (Korean chile paste)
1/4 cup dark brown sugar
3 tablespoons rice wine vinegar
1 teaspoon gochugaru (Korean chile flakes)
4 boneless, skinless chicken breasts
About 48 ounces vegetable oil, for frying
2 large eggs
1 cup buttermilk
1 1/2 cups cornstarch
1/2 cup self-rising flour
1/2 cup mayonnaise
1 teaspoon finely grated fresh ginger
1 teaspoon soy sauce
1 teaspoon rice wine vinegar
1/2 cup (1 stick) unsalted butter
4 large sesame seed buns, lightly buttered and toasted
1 cup drained kimchi, thinly sliced
Sesame seeds, for garnish

Steps:

  • For the marinade and chicken: In a medium bowl, whisk together the gochujang, brown sugar, vinegar and gochugaru. Transfer 1/4 cup of the mixture to a zip-top bag holding the chicken. Seal the bag and massage the marinade into the chicken. Refrigerate for at least 4 hours or up to overnight. Reserve the remaining mixture to make the gochujang glaze (refrigerate if the chicken is marinating overnight).
  • In a large Dutch oven, heat the oil until a deep-frying thermometer registers 350 degrees F.
  • In a pie dish or shallow bowl, whisk together the eggs and buttermilk. In a separate pie dish or shallow bowl, whisk together the cornstarch and self-rising flour. Mix 3 tablespoons of the buttermilk-egg mixture into the flour mixture; lightly whisk to work the buttermilk into the dredge to create little crispy, craggily bits.
  • Remove the chicken from the marinade and discard the marinade. Dunk the chicken first in the buttermilk-egg mixture, then dredge in the flour mixture to coat thoroughly. Working in batches if necessary, gently drop the chicken into the oil. Cook until the internal temperature of the chicken is 160 degrees F, 8 to 10 minutes. (With the carryover time, it should go up to 165 degrees F.)
  • For the ginger mayo: Whisk the mayo, ginger, soy sauce and vinegar together.
  • To serve: In a small saucepan, melt the butter over medium heat. Whisk the butter into the bowl of the reserved marinade until smooth.
  • Spread each bun top with the ginger mayo. Top with some kimchi.
  • Toss the chicken in the glaze and place on the bun bottoms. Sprinkle the chicken with sesame seeds. Close the sandwiches.

Cook an exotic yet easy dinner like these spicy and sticky Korean chicken wings. They make ideal finger food for a buffet, but don't forget the napkins

500g chicken wings
large chunk of ginger, finely grated
50g cornflour
vegetable oil, for frying
sesame seeds and sliced spring onion, to serve
6 tbsp dark brown sugar
2 tbsp gochujang (Korean chilli paste)
2 tbsp soy sauce
2 large garlic cloves, crushed
small piece ginger, grated
2 tsp sesame oil

Steps:

  • To make the sauce, put all the ingredients in a saucepan and simmer gently until syrupy, so around 3-4 mins. Take off the heat and set aside.
  • Season the chicken wings with salt, pepper and the grated ginger. Toss the chicken with the cornflour until completely coated.
  • Heat about 2cm of vegetable oil in a large frying pan over a medium/high heat. Fry the chicken wings for 8-10 mins until crisp, turning halfway. Remove from the oil and place on kitchen paper. Leave to cool slightly (around 2 mins).
  • Reheat the sauce, and toss the crispy chicken wings in it. Tip into a bowl and top with the sesame seeds and sliced spring onions.

These wings are the reason so many people in my Two Sleevers Facebook group ran out to buy air fryers. Crispy, salty, sweet and spicy with Korean chile paste--little bites of heaven! And, of course, very easy to make. If I were you, I'd inaugurate my air fryer with this super-simple recipe.

2 pounds chicken wings
1 teaspoon kosher salt
1 teaspoon black pepper or gochugaru (Korean red pepper)
2 tablespoons gochujang (Korean chile paste)
1 tablespoon mayonnaise
1 tablespoon toasted sesame oil
1 tablespoon minced fresh ginger
1 tablespoon minced garlic
1 teaspoon sugar
1 teaspoon agave nectar or honey
Kosher salt
1 teaspoon sesame seeds
1/4 cup chopped scallions

Steps:

  • For the wings: Season the wings with the salt and pepper and place in the air-fryer basket. Set the air fryer to 400 degrees F for 20 minutes.
  • Meanwhile, for the sauce: In a small bowl, combine the gochujang, mayonnaise, sesame oil, ginger, garlic, sugar, agave and a pinch of salt; set aside.
  • As you near the 20-minute mark, use a meat thermometer to check the meat. When the wings reach 160 degrees F, transfer them to a large bowl. Pour about half the sauce on the wings; toss to coat (serve the remaining sauce as a dip).
  • Return the wings to the air-fryer basket and cook for 5 minutes, until the sauce has glazed.
  • Transfer the wings to a serving platter. Sprinkle with the sesame seeds and scallions. Serve with the reserved sauce on the side for dipping.
