Korean salad can serve as an easy substitute for traditional kimchi.

1 small head green cabbage, shredded into thin strips; or 1 bag shredded cabbage or slaw mix
1 cup red cabbage, thinly sliced, optional
1 carrot, julienned, optional
1 sweet onion, thinly sliced
4 or 5 scallions, chopped
3 cloves garlic, minced
2 tablespoons soy sauce
2 tablespoons rice vinegar, or white vinegar
2 tablespoons sugar
2 tablespoons crushed red pepper ( kochukaru / gochugaru )
1 tablespoon sesame oil
1 tablespoon sesame seeds
Salt, to taste
Freshly ground black pepper, to taste

Steps:

  • Gather the ingredients.
  • Combine the cabbage, carrot, onion, and scallions in a large bowl.
  • Combine the garlic, soy sauce, vinegar, sugar, red pepper, sesame oil, and sesame seeds in a small bowl and mix.
  • Pour the dressing over the vegetables and toss to combine. Taste for seasoning, adding salt and pepper if needed. Serve immediately or chill for a few hours to allow the flavors a chance to develop.

2 cups coleslaw blend (cabbage slaw mix)
1 Asian pear, thinly sliced
2 green onions, finely chopped
2 Tbsp. sesame oil
1 Tbsp. honey
1 Tbsp. unseasoned rice vinegar
1 Tbsp. chopped fresh cilantro
1/4 tsp. ground black pepper
1/4 cup sliced almonds, toasted
1 Tbsp. sesame seed

Steps:

  • Combine all ingredients except nuts and sesame seed.
  • Refrigerate 1 hour.
  • Sprinkle with remaining ingredients just before serving.

1 Chinese cabbage, cut in fine strips
6 green onions, chopped
3 cloves garlic, minced
1/2 teaspoon dried red chili, crushed
1/2 teaspoon gingerroot, chopped
3 tablespoons salt

Steps:

  • Make a salt water mixture, soak the cabbage in it and drain it.
  • Mix the cabbage with sat, green onions, garlic, red chilli and ginger root.
  • Mix this mixture well, cover and refrigerate for 1-2 days.
  • Put this salad in a jar as it can remain for many days.

Leftover dressing can be kept refrigerated for up to a week offering you a great last-minute option for creating a fresh tasting side dish for your dinner menus throughout the week. Napa cabbage is also a great substitute for packaged coleslaw mix.

3 tablespoons white wine vinegar
3 tablespoons sugar
1 tablespoon soy sauce
1 clove garlic, minced
1/2 teaspoon toasted sesame oil
1/2 teaspoon fresh ginger, minced or 1/2 teaspoon dried ginger
1/4 teaspoon cayenne pepper
1/4 teaspoon white pepper
2 tablespoons milk, half-and-half or 2 tablespoons heavy cream
1 cup mayonnaise
1 (16 ounce) package of prepared coleslaw mix (grated cabbage and carrots)
1 bunch green onion, sliced on the bias
1 cup fresh snow pea, stemmed and sliced on the bias
1/2 cup radish, sliced
1/2 cup English cucumber, sliced
1/4 cup sliced toasted almond

Steps:

  • Combine the first 8 ingredients (vinegar through white pepper) in a jar with a tight fitting lid or cruet that holds at least 8 oz.
  • Shake until sugar is dissolved.
  • Add mayonnaise and milk and shake until completely combined. Taste and adjust seasonings as needed.
  • In a large bowl, combine coleslaw mix, green onions, snow peas, radishes, and cucumbers. (note: do not add almonds until just before serving).
  • Pour desired amount of Asian coleslaw dressing over cabbage mix and stir gently to combine.
  • Cover and refrigerate for 1 hour or more. Optional: Sprinkle almonds on just before serving to help keep them crisp.
