1 pound Angel Hair or Capellini pasta
4 Tbsp. unsalted butter
3 Tbsp. extra virgin olive oil
1 Tbsp. lemon zest
1 large lemon juice (about 2 Tbsp.)
1/2 tsp. salt
Optional: 1/3 cup chopped fresh basil leaves
Optional: 1/4 cup freshly grated Parmigiano-Reggiano
fresh cracked pepper to taste
few sprigs of fresh basil for garnish

Steps:

  • In a large pot of boiling water, add 2 teaspoons of salt. Add in angel hair pasta and cook until "al dente," about 3 minutes or less. Reserve 1/4 cup of salted water, and set aside. Drain
  • Meanwhile, melt butter in a large saute' pan. Add olive oil, zest, lemon juice, salt, and pepper. Heat gently for 1 minute. Toss with pasta (and if you need more liquid, add in the reserved 1/4 cup of salted water).
  • Add fresh basil and grated Parmigiano-Reggiano cheese and toss until angel hair pasta is evenly coated. If you need to add some extra virgin olive oil, please do so. Drizzle some in to keep the pasta extra moist.
  • Serve in warm bowls and garnish with some fresh basil, lemon zest, and fresh cracked pepper on top. Serve with extra grated Parmigiano cheese at the table.

1 1/2 cups cream (don't sub half and half)
1/4 teaspoon salt
1 lemon, zest of, grated
1 lemon, juice of
1 dash garlic powder (to taste)
1/2 cup grated parmesan cheese (or you can use 1/2 parmesan, 1/2 asiago)

Steps:

  • Heat cream in skillet until just about to boil. Add zest and juice of one lemon. It will immediately start to thicken.
  • Turn heat down to low. Add garlic powder and salt. Stir for 1 minute.
  • Add cheese and stir until melted.
  • Serve over your favorite pasta. We like angel hair cause it's done at about the same time your sauce gets finished.
  • I often add cooked shrimp or meatballs (the Italian baked ones from this site are excellent). But bacon or sausage is also good.

1/2 cup cashews
2 cloves of garlic
1/2 teaspoon salt
black pepper, to taste
1 teaspoon tapioca or corn starch
1 cup unsweetened almond or soy milk
3 tablespoons nutritional yeast
juice of one lemon
1/2 teaspoon lemon zest
more lemon zest, to sprinkle
freshly chopped parsley, to sprinkle

Steps:

  • Cook the rigatoni or penne according to the instructions on the package. Set aside.
  • Place all ingredients in a high speed blender and process until smooth. This should take about a minute.
  • Pour the sauce into a large pot and cook on low heat until it thickens up.

extra virgin olive oil
125 g Parmesan cheese

  • Cook the linguine in a pan of boiling salted water according to the packet instructions, then drain and return to the pan.

1 whole lemon (scrubbed to clean)
2 servings dried pasta (linguini or spaghetti, angelhair etc. *see notes)
1/3 cup Crème Fraîche

Zest from 1/2 of the whole lemon
Salt and freshly ground pepper
1 large handful baby spinach (or larger spinach, chopped)
Juice from the 1 whole lemon above

Steps:

  • Fill large pot with water and add the whole lemon to the water. Remove zest from about 1/2 of the whole lemon and set the zest aside for the sauce. Add zested whole lemon to the water and bring the water with the lemon to a boil over high heat. Once boiling remove lemon and set aside to cool. Add salt to your water, then add pasta and cook to al dente according to package directions.
  • Meanwhile, stir together the sauce ingredients in a small bowl. Prepare your spinach and set aside. When lemon is cool enough to handle, cut in half and juice. Pour juice through a strainer in to a small bowl, to remove seeds and pulp. Set aside.
  • When pasta is cooked, before draining, remove 1 cup of the pasta water and set aside. Drain pasta well and return to the pot. Add sauce mixture and spinach to the pot with the hot pasta and with tongs, toss well until the spinach is wilted and sauce is coating the pasta. Drizzle with reserved lemon juice and toss well. If pasta seems tight (clumpy/sticking together), add a bit of your reserved pasta water to the pasta and toss to loosen it up. Season with salt and freshly ground pepper, to taste. Serve with additional freshly grated Parmesan and more freshly ground pepper.

Pasta al limone is a simple, sublime classic Italian recipe made with just pasta noodles, lemon, Parmesan, butter, and black pepper. Fast, easy and perfect!

8 ounces dried whole wheat spaghetti or similar long noodles (such as fettuccine)
3 tablespoons butter
2 cloves garlic (minced)
1 medium lemon (plus additional for serving)
1/2 cup finely grated Parmesan cheese (about 1 1/2 ounces, plus additional for serving)
Kosher salt
Freshly ground black pepper

Steps:

  • Bring a medium pot of salted water to a boil-use an amount of water so that the pasta is more crowded in the water than it typically would be (see photo in blog post above). Cook the noodles until al dente according to package instructions. Reserve 1 cup of the pasta water, then drain the pasta.
  • When the pasta is nearly done cooking, melt the butter in a large skillet over medium heat. Add the garlic and cook 30 seconds. If the garlic is done cooking before the pasta is ready, remove the pan from the heat so the garlic doesn't burn.
  • IMMEDIATELY (as soon as the pasta is drained) add the hot pasta to the skillet with the garlic. Pour in 1/2 cup of the reserved pasta water. Increase the heat to medium-high, then with a pair of tongs, toss to coat. Continue cooking and tossing constantly, until the sauce turns shiny and coats the noodles-it will take a minute or so. The pasta will be coated in a shiny, silky sauce. If the pasta becomes too tight at any point, splash in a tablespoon or two of the reserved pasta water (add the water slowly so that the pasta doesn't become watery).
  • Zest the lemon over the top. Cut the lemon into quarters, then squeeze in the lemon juice. Sprinkle on the Parmesan. Toss again to combine. The cheese might be a bit clumpy at first, but just keep tossing, adding the tiniest splashes of pasta water only as needed. Add a good pinch of salt and several generous grinds of black pepper. Toss again. Taste and add more salt and pepper to taste. Transfer to serving plates and top each serving with a sprinkle of extra Parm and a bit more black pepper. Enjoy hot.

  • Bring a large pot of salted water to a boil. Once boiling, add the pasta and cook until al dente.
  • While the water comes to a boil and the pasta cooks, make the sauce.
  • Melt the butter in a pan set over medium heat.
  • Add the garlic and allow to cook for 30 seconds until fragrant.
  • Pour in the cream, sour cream, lemon juice and zest.
  • Bring to a simmer and cook for a few minutes or until the sauce coats the back of a spoon.
  • Reduce the heat then add the Parmesan and parsley. Stir in then season to taste with salt and pepper.
  • Drain the pasta, reserving 1 cup of cooking water. Add the pasta to the sauce, along with a few spoonfuls of pasta water and toss until the pasta is coated in the sauce and the sauce is creamy. You might need to add more water as the pasta absorbs the sauce and the sauce thickens.
  • Serve scattered with chopped parsley and grated Parmesan.

Steps:

  • ​Bring a large pot of water to a boil, add 2 tablespoons of salt and the linguine. Stir the pasta frequently for the first few minutes of cooking time. Cook the pasta to package directions for al dente.
  • While the pasta cooks: Heat a skillet over medium heat, add the olive oil and the butter. Heat until the butter is melted and foamy.
  • Lower the heat to medium-low and add the garlic. Cook for 1 minute, stirring constantly.
  • Lower the heat to low and add the lemon juice, lemon zest, ¼ teaspoon of salt and the fresh ground pepper to the skillet. Stir to combine the ingredients well and cook gently for another minute or two.
  • Remove the skillet from the heat and set aside until the pasta is done and drained.

140g spaghetti
100g frozen petits pois or garden peas
2 tsp olive oil
1small onion , finely chopped
100g low-fat soft cheese with chives and onion
1 lemon , finely grated zest
3 tbsp finely grated parmesan (or vegetarian alternative)
1 tbsp chopped fresh flatleaf parsley

Steps:

  • Bring a large pan of lightly salted water to the boil. Feed in the spaghetti and cook for about 10-12 minutes, until just tender. (Check the pack instructions for timings - 'quick cook' spaghetti takes only 3 minutes.) Add the peas for the last 2-3 minutes.
  • At the same time, heat the olive oil in a saucepan and fry the onion gently until softened and cooked, but not brown. Stir in the soft cheese and warm it through, adding 3 tbsp of the pasta cooking water to thin it down. Now stir in the lemon zest and 2 tbsp of the Parmesan.
  • Drain the spaghetti and peas really well, return them to the pan and gently stir in the sauce. Season with salt and pepper, then pile it into 2 serving bowls. Sprinkle the parsley and the remaining Parmesan over the top and serve right away, with a mixed leaf salad.

4 very thin lemon slices
1 tablespoon extra-virgin olive oil
1 garlic clove (minced)
1 tablespoon lemon juice
6 ounces linguine pasta
1 1/2 cups arugula
1 tablespoon fresh thyme
1 cup Roasted Tomatoes
3 ounces fresh mozzarella (torn)
¼ cup toasted pine nuts
½ cup fresh basil (or dollops of pesto)
Sea salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350°F and line a small baking sheet with parchment paper.
  • Place the lemon slices on the baking sheet. Drizzle with olive oil and sprinkle with salt. Roast for for 15 to 20 minutes or until they're golden brown around the edges. Finely mince the lemons and set aside.
  • In the bottom of a medium-sized (cold) pot, combine the olive oil, garlic, lemon juice, and ¼ teaspoon sea salt.
  • Prepare the pasta according to the package directions, cooking until al dente. Reserve ¼ cup of the pasta cooking water. Scoop the hot pasta into the pot, along with the reserved pasta water, the arugula, and toss. If necessary, gently heat until the arugula wilts and the pasta is warmed through. Add the thyme, tomatoes, lemons, and toss again. Top with the mozzarella, pine nuts, and basil. Gently toss, season to taste and serve.

1 cup heavy whipping cream
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 teaspoon grated lime zest
1 cup beef broth
10 ounces uncooked pasta

Steps:

  • In a sauce pan or skillet large enough to hold the pasta when it is done, combine the butter, cream, and beef broth or bouillon and simmer over medium heat until reduced by about half. Add the lemon juice, lemon and lime zest and set aside.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Toss pasta with sauce; serve.
