WHOLE WHEAT BANANA BREAD
Made with flax meal and maple syrup, this whole wheat banana bread is earthy and comforting.

- Preheat the oven to 350°F and set an oven rack to the middle position. Grease a 9×5-inch loaf pan with non-stick cooking spray.
- In a medium bowl, whisk together the all-purpose flour, whole wheat flour, flaxseed meal, baking powder, baking soda, and salt. Set aside.
- In a large bowl, whisk together the maple syrup, eggs, oil, brown sugar and vanilla extract. Add the sour cream and mashed banana, and whisk until smooth.
- Using a rubber spatula, fold the dry ingredients into the wet ingredients until just combined. Do not overmix. Pour the batter into the prepared loaf pan.
- Bake for 50 to 55 minutes, or until a toothpick inserted into the center of the bread comes out clean. Let cool in the pan for about ten minutes, then turn out onto a rack to cool completely.
- This is best served slightly warm from the oven, when the crust is crisp and the bread is tender, but it keeps wrapped in foil on the countertop for a few days. Freezer-Friendly Instructions: The bread can be frozen for up to 3 months. After it is completely cooled, wrap it securely in aluminum foil, freezer wrap or place in a freezer bag. Thaw overnight in the refrigerator before serving.
- Note: The original recipe calls for ½ cup maple syrup. My family prefers it a bit sweeter, but for a less-sweet banana bread, use the original amount.

WHOLE WHEAT NO-KNEAD BREAD WITH FLAX SEEDS AND OATS
I found this recipe on the food blog Kiss My Spatula. This was the first bread I've ever made, and it was easy and turned out great! The crust is the best part --super crunchy and crackle-y. It's best to eat on the first day, but can be wrapped up in foil and kept up to two days, reheated slightly before serving. The crust looses much of its crunch after the first day, however. I didn't have a Dutch oven, which is suggested in the recipe, so I used stock pot, which worked fine.

- Whisk flour, steel cut oats, flax seeds, yeast, and salt in large bowl. Add water and vinegar. Using rubber spatula, fold mixture, scraping up dry flour from bottom of bowl until shaggy, sticky ball forms. Cover bowl with plastic wrap. Let dough rest at least 12 hours, preferably about 18, at warm room temperature, about 70 degrees.
- Lay 12X18-inch sheet of parchment paper inside 10-inch skillet and spray with nonstick cooking spray. Dough is ready when its surface is dotted with bubbles. Transfer dough to lightly floured work surface and knead 10 to 15 times. Shape dough into ball by pulling edges into middle. Transfer dough, seam-side down, to parchment-lined skillet and spray surface of dough with nonstick cooking spray. Cover loosely with plastic wrap and let rise at room temperature until dough has doubled in size and does not readily spring back when poked with finger, about 2 hours.
- About 30 minutes before baking, adjust oven rack to lowest position, place 6-8 quart heavy-bottomed Dutch oven (with lid) on rack, and heat oven to 475 degrees. Lightly flour top of dough and, using razor blade or sharp knife, make one 6-inch-long, 1/2 inch-deep slit along top of dough.
- Carefully remove pot from oven and remove lid. Pick up dough by lifting parchment overhang and lower into pot (let any excess parchment hang over pot edge). Cover pot and place in oven. Reduce oven temperature to 425 degrees and bake covered for 30 minutes. Remove lid and continue to bake until loaf is deep brown and instant-read thermometer inserted into center registers 210 degrees, 20 to 30 minutes longer. Carefully remove bread from pot; transfer to wire rack and cool to room temperature before slicing.
OAT, FLAX 'N BANANA BREAD
This is the Banana bread I make for days I skip breakfast, or want I something kinda sweet before bed. I really came up with this through trial and error. I wanted a banana bread that was healthy enough that I didn't hate myself when I went back for another slice. The oat flour and ground flax I use are the Bob's Red Mill brand. This can easily be made into muffins.

- Preheat oven to 350 F degrees. Lightly grease a 9 x 5 inch loaf pan.
- Beat together the butter, sugar, baking soda, salt, cinnamon, nutmeg and vanilla in a medium bowl until smooth. Add the banana, honey and eggs, beating until smooth. Add the flour and nuts, stirring until smooth. Spoon the batter into the prepared pan and let it rest at room temperature, uncovered for 10 minutes.
- Bake the bread for 50 minutes. Lay a piece of foil gently across the top and bake until a cake tester (like a toothpick) inserted into the center comes out clean, 10 to 15 minutes more. Remove the bread from the oven and allow it to cool for 10 minutes before turning it out of the pan onto a rack to cool completely.
WHOLE WHEAT OAT BANANA BREAD
Very gooey and yummy, this is my favorite Banana bread recipe. TIPS: Buy whole wheat flour that has NOT been bleached. Use only PURE honey. Use Almond, Rice or Soy milk (try not to use cow milk). Extra virgin cold pressed olive oil has the best taste and has no extra junk in it. Use real vanilla extract, imitation has too many chemicals and not as good a flavor. Has plenty of fiber to help cleanse the colon which is always the best place to start cleaning for a successful diet and a healthy lifestyle.

- The easy way: Throw it all into a bread machine and select dough. When finished proceed to step 9.
- The hard way: Dissolve yeast in warm water.
- In a large bowl, combine butter, molasses, honey and salt and mix well.
