1 package (12 ounces) frozen shredded hash brown potatoes, thawed
4 large eggs
2 cups whole milk
1 tablespoon dried minced onion
1 tablespoon snipped fresh dill or 1 teaspoon dill weed
1-1/4 teaspoons seasoned salt
1/8 teaspoon pepper
1 cup shredded cheddar cheese
1 package (12 ounces) frozen breaded fish sticks (about 18)

Steps:

  • Break apart hash browns with a fork; set aside. In a large bowl, beat eggs and milk. Add minced onion, dill, seasoned salt and pepper. Stir in hash browns and cheese. Transfer to a greased 11x7-in. baking dish; arrange fish sticks over the top. , Bake, uncovered, at 350° for 50 minutes or until top is golden brown and fish flakes with a fork. Let casserole stand for 5 minutes before cutting.

Kosher salt and ground black pepper
1 pound firm-flesh white fish, such as cod, sliced into sticks about 1 inch by 3 inches
1/2 cup whole grain pastry flour (or white whole wheat flour)
1 teaspoon granulated garlic
2 slices whole grain bread (or sub 1 cup whole grain breadcrumbs)
1 teaspoon dried Italian herbs (optional; if kids don't freak out)
1 large egg
Olive oil, in a spray bottle or mister (or nonstick vegetable spray)

Steps:

  • Preheat the oven to 400 degrees F.
  • Salt and pepper the fish sticks. Place the flour on a rimmed plate and season with the garlic, mixing with a fork, and set aside.
  • Place the bread and herbs (if using) in a food processor and pulse until uniform, but not too small. Season with salt and pepper. Transfer the breadcrumbs to a shallow baking dish or rimmed plate and set aside.
  • Whisk the egg and 1 tablespoon water in a medium bowl. Dredge a piece of fish in the flour, gently shake off excess, and then dip the fish in the egg mixture, then the breadcrumbs, gently pressing into the crumbs. Repeat with the remaining pieces of fish.
  • Place a metal cooling rack on top of a baking sheet, and mist with olive oil. Place the fish sticks on the rack and bake until the fish is cooked through, about 12 minutes. (For even browning, you can turn the fish over halfway through cooking time and spray the second side with olive oil.)

1/4 cup milk
1 cup dry bread crumbs
1 cup all-purpose flour
1 pound cod fillet, cut into 1/2-inch thick sticks
Coarse salt and freshly ground pepper
1/4 cup plus 2 tablespoons olive oil
Tartar Sauce

Steps:

  • In a shallow dish, beat together the eggs and milk. Pour the bread crumbs and flour onto 2 separate plates. Sprinkle fish sticks with salt and pepper. Dredge fish sticks in flour and dip in the egg mixture. Then transfer fish sticks to bread crumbs, covering fish completely and pressing lightly to adhere. Place each fish stick on a wire rack when coated.
  • Heat 3 tablespoons olive oil in a large skillet over medium-high heat. Arrange half the fish sticks in a single layer without crowding; cook until golden brown, about 1 to 2 minutes on each side. Remove fish sticks from skillet, and transfer to a serving dish. Wipe out pan and repeat with remaining oil and fish. Serve fish sticks, hot or at room temperature, with tartar sauce.

12 oz bag of frozen shredded hashbrown potatoes, thawed and drained (do not squeeze)
4 eggs
2 c milk
1 Tbsp onion flakes, dehydrated
1 tsp seasoning salt
1 tsp dill, dried
1/8 tsp pepper
1 c cheddar cheese, shredded - i like a little more
16 oz good quality fish sticks - splurge here if you can
1 1/2 tsp old bay seasoning

Steps:

  • 1. Preheat oven to 350 degrees and spray a 9 x 13 glass baking dish with PAM spray or Olive oil spray.
  • 2. Break apart hash browns with a fork; set aside.
  • 3. In a large bowl, beat eggs and milk. Add onion, dill, seasoned salt, old bay seasoning and salt & pepper. Stir in drained hash browns and cheese.
  • 4. Transfer to a greased 9 x 13 inch baking dish; arrange fish sticks over the top taking care to place fish sticks one next to the other and completely covering the top of the casserole (you may need to use more than just 18 fish sticks).
  • 5. Bake, uncovered, at 350 degrees for 50 minutes or until top is golden brown and fish flakes with a fork.
  • 6. Let stand for 5 minutes before cutting. Serve with a mild (homemade) tarter sauce and a crisp green salad.
  • 7. NOTE: I make the full recipe in a 9x13 dish and I add more cheese than the recipe calls for. I also use more fish sticks on top to cover the top of the casserole completely and I really pack them in tight on top. Also, you may wish to try some MRS DASH instead of the seasoned salt to cut back on the sodium. Try some sliced Lemon as garnish or a slight squeeze over the top.

  • Before serving, let rest a few minutes or it will be too hot& gloppy.

Salt and black pepper to taste
2 tablespoons olive oil
1/2 cup onion, (finely chopped)
2 cloves garlic, (minced)
1 1/2 cups Clamato® Original flavor
1 can (12 oz) evaporated milk
1 tablespoon cornstarch
2 tablespoon lime juice
2 teaspoons lime zest
Red pepper flakes ((optional))
Fresh parsley leaves, (finely chopped (optional))

Steps:

  • Preheat oven to 425º F (218º C).
  • Pat fillets dry with a paper towel. Season fillets on both sides with salt and pepper.
  • Heat oil in a large nonstick or cast-iron skillet over medium heat. Add onions; cook for 3 minutes, or until translucent and fragrant. Add garlic; cook for 1 minute, constantly stirring to avoid burning.
  • Add Clamato®, evaporated milk, cornstarch, lime juice, and lime zest; mix to combine. Cook for 5 - 6 minutes, frequently stirring, until sauce thickens a little. Place fish fillets over the sauce.
  • Bake for 15 - 20 minutes, or until fish flakes easily when tested with a fork.
  • Sprinkle with red pepper flakes and chopped parsley (if using). Serve immediately with your favorite side dish, such as rice or mashed potatoes , or cauliflower rice.
