Grilled Filet with Blue Cheese Butter image

1 stick unsalted butter, slightly softened
1/4 cup crumbled Cabrales blue cheese
2 teaspoons finely chopped fresh thyme
Salt and freshly cracked black pepper
4 (1 1/2-inch thick) filet mignons
Canola oil, as needed
1 teaspoon coarsely cracked black pepper

Steps:

  • Preheat a grill to high heat.
  • Combine the butter, cheese, and thyme in a bowl and season with salt and pepper, to taste. Cover the bowl and refrigerate for 30 minutes.
  • Brush the steaks with some canola oil, then season them with salt and cracked black pepper. Grill until the meat chars on both sides and is cooked to a medium-rare doneness. Transfer the steaks to a platter, top them with some of the butter and let them rest for 5 minutes before serving.

I got this recipe from a friend and he said This meat dish is the "bomb". If you love blue cheese this is one dish you must try.

1 tablespoon butter
2 (6 ounce) beef steaks, 1 inch thick
2/3 cup beef broth
1/4 cup brandy
1/2 teaspoon rosemary
1/2 cup blue cheese, crumbled (about 2 oz)
salt and pepper

Steps:

  • Melt butter in heavy medium skillet over medium-high heat.
  • Season steaks with salt and pepper.
  • Add steaks to skillet and saute until cooked to desired doneness, about 4 minutes per side for medium-rare.
  • Transfer steaks to plate.
  • Add broth, brandy and rosemary to skillet and boil until sauce is reduced 1/3 cup, scraping up browned bits, cooking for about 5 minutes Spoon sauce over steaks.
  • Top each steak with half of blue cheese.
  • Serve.

I like to use this marinade when I am preparing for filet mignon because the marinade is light tasting enough that doesn't mask the goodness of filet mignon. With the blue cheese butter, you got a 5-star restaurant meal!

2 tablespoons red wine vinegar
2 garlic cloves, minced
1 tablespoon cracked black pepper
1 teaspoon dried rosemary leaves, crumbled
1 teaspoon dried oregano
1/4 teaspoon kosher salt
1/4 cup olive oil
1 lb filet mignon
2 tablespoons unsalted butter (softened )
1 ounce blue cheese (crumbled )
1 tablespoon fresh chives (chopped )
1/8 teaspoon cracked black pepper

Steps:

  • Whisk together vinegar, garlic, 1 tbsp black pepper, rosemary, oregano, and kosher salt in a bowl along with the olive oil. Place the steak into a resealable plastic bag, and pour the marinade overtop.
  • Squeeze the excess air from the bag and seal. Marinate in the refrigerator for at least 30 minutes.
  • Steak should be at room temperature for even cooking.
  • Mash together the butter, blue cheese, chives, and 1/8 teaspoon of black pepper; set aside.
  • Sear the steak for 1-2 minutes for each side.
  • Cook to desired doness.
  • Serve with a dollop of blue cheese-chive butter.

4 1/2 inches thick beef tenderloin
garlic powder
pepper
1 tablespoon oil
2 finely chopped shallots
1/3 cup red wine
2 cups beef stock (reduced to 1/2 cup)
1/3 cup heavy cream
1/2 cup blue cheese
4 tablespoons butter
salt & pepper

Steps:

  • Two hours before cooking - rub a little oil on each tenderloin - sprinkle with Garlic Powder and pepper both sides.
  • Loosely wrap in plastic and refrigerate for one hour.
  • One hour before cooking remove from refrigerator and bring to room temperature.
  • rub a little more oil on each filet.
  • Heat a non stick skillet until water beads (quite hot). Sear the filets for ONE minute on each side.
  • remove immediately from pan and set on wire rack to cool for 30 minutes.
  • In the same skillet - on medium to medium high heat add shallots and red wine.
  • reduce to a glaze.
  • Add beef stock and reduce to a syrupy consistency (abut 10 - 12 mins).
  • Add cream and cook until sauce has a beigy color.
  • Remove from heat until about 5 mins before serving.
  • In a food processor combine the butter and blue cheese set aside for the sauce.
  • Preheat oven to 350.
  • on a grill pan - place the filets in the oven for 20 minutes (for med rare pictured here).
  • Remove from oven and let rest for 5 mins before slicing.
  • Heat your sauce gently - put spoon size dollops of the butter and cheese mixture in the pan melting and mixing together.
  • lightly salt and pepper to taste.
  • To serve- on a plate pour a puddle of the sauce - and place the meat on top.
  • Pictured is steamed Green Beans and Cauliflower and a Ceasar Salad. Extremely Low Carb.

4 (4 ounce) filet mignon steaks
2 teaspoons canola oil, or as needed

Steps:

  • Mash butter, blue cheese, and thyme together in a small bowl until well combined. Season with salt and pepper. Cover and refrigerate for 30 minutes.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Brush steaks with oil and season with salt and pepper.
  • Cook steaks on the preheated grill until firm and reddish-pink and juicy in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).
  • Transfer steaks to a platter and top with some of the butter mixture. Let them rest for 5 minutes before serving.

  • Preheat the oven to 450 degrees F. I highly highly suggest using a cast iron skillet for this - it will get a little smoky, so be sure to use your oven vent or turn on a fan, etc!
  • Heat a cast iron skillet over medium-high heat. Season the steaks all over with salt and fresh ground pepper. Add the 2 tablespoons of butter to the skillet - it will begin to brown and smoke. That’s okay!
  • Place the steak in the skillet right away. Sear on each side, about 2 minutes per side, until deeply golden brown. Add the remaining tablespoon of butter if needed. Once you’ve done both sides, turn off the heat.
  • Place the skillet in the oven and cook for about 3 to 5 minutes, for medium doneness. This will depend on the thickness of your steak, but I suggest taking the internal temperature as this will help so much! For rare, you want 120 degrees F. For medium rare, 125 to 130 degrees F. For medium, 135 to 140 degrees F and medium-well, 145 to 150 degrees F.
