8 fluid ounces coconut milk (240ml)
3 fluid ounces 2% Greek yogurt (90ml)
2 -4 tablespoons honey, to taste
2 -4 ice cubes, crushed
1/2 lime, juice of

Steps:

  • Place all of the Ingredients in blender and blend until smooth.

This tropical shake with creamy coconut yogurt, mango and passion fruit is dairy and soya free

Number Of Ingredients 6

200ml (½ tall glass) coconut milk (we used Kara Dairy Free)
4 tbsp coconut milk yogurt (we used Coyo)
1 banana
1 tbsp ground flaxseed, sunflower and pumpkin seed (we used Linwoods)
120g (¼ bag) frozen mango chunks
1 passion fruit , to finish (optional)

Steps:

  • Measure all the ingredients or use a tall glass for speed - they don't have to be exact. Put them into a blender and blitz until smooth. Pour into 1 tall glass (you'll have enough for a top up) or two short tumblers. Cut the passion fruit in half, if using, and scrape the seeds on top.

I make alot of smoothies, this is my neighbors favorite one. The flavor of this smoothie just screams out "heat and tropics". This smooth and creamy smoothies subtle flavors blend beautifully to create a very special treat that reminds me of warm and peaceful vistas.

1 cup coconut milk
1 cup frozen peach & mango yogurt
1/2 cup orange mango juice
3 -6 tablespoons sugar
1/2 teaspoon coconut extract
1 1/2 cups frozen strawberries
3/4 cup frozen mango chunks
4 plastic sticks (garnish) (optional)
12 pieces mangoes, chunks (garnish) (optional)
2 teaspoons vanilla sugar (garnish for mango chunks) (optional)
4 mint sprigs (garnish) (optional)

Steps:

  • Combine all the ingredients in a blender.
  • Cover the blender and process until all fruit are well blended and mixture is creamy and smooth.
  • Serve the smoothie in chilled glasses.
  • For the garnish, sprinkle the vanilla sugar on the 12 mango chunks.
  • Then garnish each glass with three chunks of mango on a stick with a side sprig of mint.

2 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter, room temp
1 cup packed brown sugar
1 large egg
1 cup buttermilk
1 teaspoon pure vanilla extract
1 cup chopped mango
1/2 cup sweetened flaked coconut
1 teaspoon finely grated lime zest
2 tablespoons honey

Steps:

  • Preheat oven to 350 degrees.
  • Line muffin tins with cupcake liners or butter.
  • In a large bowl mix together the flour, baking soda and salt.
  • In a medium bowl beat together the butter and sugar.
  • Beat in egg, buttermilk and vanilla.
  • Gently stir in mango, coconut, and lime zest.
  • Pour over dry mixture, stirring until dry ingredients are just moistened.
  • Do not over mix.
  • Spoon into prepared muffin tin, each cup 3/4 full.
  • Bake for 30 minutes.
  • Brush tops with honey, remove from muffin tin and cool on wire rack.
