Carottes Râpées or Grated Carrot Salad image

Very popular in France- you'll find it on any bistro menu. A simple salad of grated carrots and parsley, with a few other ingredients. The most important thing is the size of the carrots- they must be grated very thin. This salad is best with carrots alone. I would recommend storing the dressing and the salad separately until time to eat. You may want to add more oil or lemon, etc. But do not overdress. It should glisten, but not be swimming in dressing.

7 large carrots
1/2 bunch flat leaf parsley
2 lemons, juiced
2 -3 tablespoons olive oil
2 teaspoons sugar
salt, to taste
fresh ground pepper
1 dash Dijon mustard (optional)

Steps:

  • Peel and grate 7 large carrots. Coarsely chop the parsley and combine with carrots.
  • To make the dressing: mix together the juice of 2 lemons, 2 or 3 tablespoons of olive oil, and 2 teaspoons of sugar, some salt, and fresh ground pepper. You may add a dab of Dijon.
  • Toss with Carrots then taste; you may add ingredients to your liking.

French Grated Carrot Salad (Carottes Râpées) image

This French Grated Carrot Salad is an extremely simple and classic dish which is best made with the sweetest garden carrots.

3 large carrots (organic, heritage carrots if possible)
1 teaspoon Dijon mustard
2 teaspoons white wine vinegar
1/4 teaspoon sea salt
1/4 teaspoon cracked black pepper
½ garlic clove (crushed)
30 ml extra virgin olive oil
1 tablespoon roughly chopped parsley

Steps:

  • Peel then grate or julienne the carrots then set aside.
  • Whisk the vinegar and salt in a small mixing bowl until the salt has dissolved.
  • Add the Dijon, whisking with confidence until it has emulsified with the vinegar.
  • Stir in the garlic and black pepper.
  • With one hand continually whisking, use your other hand to slowly drizzle in the oil. In a similar method to making mayonnaise you want the oil to be captured by the other ingredients coming together to create a creamy dressing.
  • Pour the dressing onto the carrots, tossing together with the parsley.
  • Serve immediately to avoid any wilting.
