KEY LIME PIE JELL-O® SHOTS
Who doesn't love key lime pie? I came up with this recipe because I wanted to make mini key lime pies in Jell-O® shot form. It's delicious and guests will love it! Top with whipped cream and enjoy!

Steps:
- Pulse graham crackers in a food processor to make crumbs. Add melted butter and sugar and process until crust mixture can be pressed firmly and maintain its shape. Press an even amount of crust over the bottom and slightly up the sides of a 24-cup muffin tin.
- Mix lime-flavored gelatin and unflavored gelatin together in a bowl. Add boiling water and stir until gelatin is dissolved. Add vodka; stir in enough heavy cream to achieve desired color. Fill prepared muffin cups to the top with the gelatin mixture. Cover with plastic wrap and refrigerate until set, at least 4 hours.

LIME IN THE COCONUT JELLO SHOTS (WITH COCONUT MILK)
This is a fun & tasty treat to serve at parties. I found this on another web site when I was looking for jello shooters for our Hawaiian ethnic party. It didn't say what size of jello pkgs to use, I used small ones & for coconut milk I estimated @ 13 oz. I liked these because they weren't quite as sweet as other jello shooters & smooth tasting with the coconut milk.

Steps:
- Bring water to the boil & remove from heat.
- In a large bowl, combine the 3 Jello packages. Slowly add the hot water, then the coconut milk/juice & lime juice. (You put the lime in the coconut & mix it all together). Wait 3 - 4 mins & then stir in the rum.
- Pour into individual serving sized or plastic shot glasses & chill.
- Spray shots with whipping cream, if preferred, before serving.

- Preheat your oven to 325°. Take your graham crackers and blend them in the food processor until they are fine crumbs. Mix your sugar into the crumbs. Then pour your melted butter in slowly while stirring.
- Lightly coat the inside and bottom of a mini cheesecake pan (the kind where the bottoms pop out) with cooking spray. Spoon your mixture evenly into each compartment. Use your fingers to press the crumbs down into the pan. Bake for 10 minutes in the oven. Then let them completely cool.
