This has to be one of the most popular and delicious dals in India. Luscious and rich with a deep flavor, this dal is made mostly with a whole black lentil called sabut urad dal and a smattering of red kidney beans. Originally from Peshawar (now in Pakistan), this Punjabi dal was brought to India during the Partition and became an instant classic, served everywhere from 5-star hotels to roadside dhabas (shacks). There are various versions of this dish, such as kali dal, ma ki dal and dal bukhara. This version, dal makhani, was created by the founder of Moti Mahal restaurant in Delhi, who added kidney beans, tomato and cream. Traditionally it is made in a clay pot and simmered for 24 hours, but a pressure cooker speeds that up. It makes great leftovers because it tastes even better the next day.

Number Of Ingredients 10

1 cup whole black urad dal (see Cook's Note), rinsed and soaked overnight
3 tablespoons Kashmiri rajma (or red kidney beans or pinto beans; see Cook's Note), rinsed and soaked overnight
Kosher salt
5 cloves garlic, finely grated (1 tablespoon)
One 2-inch piece fresh ginger, peeled and finely grated (2 teaspoons)
2 teaspoons Kashmiri chili powder (see Cook's Note)
1/2 teaspoon garam masala
1 cup strained tomato puree
1 stick (8 tablespoons) unsalted butter, plus more for topping, optional
1/2 cup heavy cream

Steps:

  • Drain the soaked black urad dal and Kashmiri rajma beans and transfer to a 6-quart Instant Pot®. Add 4 cups water and 2 teaspoons salt. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on low for 1 hour (see Cook's Note). (Alternatively, use a stovetop pressure cooker over medium-high heat set for 15 minutes.)
  • After the pressure-cook cycle is complete, follow the manufacturer's guide for natural release. Once the pressure is released, unlock the lid and add the garlic, ginger, Kashmiri chili powder, garam masala and 1 teaspoon salt. Set the pot to medium sauté and simmer, stirring often so the mixture doesn't scorch on the bottom, until the raw smell is gone, about 5 minutes. (If using a stovetop pressure cooker, saute over medium-high heat.)
  • Lightly mash the urad dal mixture with a potato masher, leaving some intact. Add the tomato puree and butter and mix well. Cover with the lid (but do not seal), set the pot to slow-normal (slow cooker) and cook, checking and stirring occasionally to make sure it's not sticking to the bottom and adding a little water if it gets too thick, about 2 hours. It should be the consistency of a pourable lentil soup. (If using a stovetop pressure cooker, stir in 1/2 to 1 cup water along with the tomato puree and simmer over low following the instructions above.)
  • Add 6 tablespoons of the heavy cream, set the pot to low sauté and simmer, stirring as needed to keep it from sticking to the bottom, until cooked down slightly and combined, another 10 minutes. Taste and adjust with more salt if needed. (If using a stovetop pressure cooker, simmer over medium heat.)
  • Make a cappuccino swirl with the remaining 2 tablespoons cream just before serving. Optionally, you can add another pat of butter on the dal just before serving for some extra love!

SPICY MIXED 5 BEANS AND LENTILS



Spicy Mixed 5 Beans and Lentils image

1/4 cup black split urad beans (chilkae vaali urad dal), sorted and washed in 3 to 4 changes of water
1/4 cup green mung beans (saabut mung dal), sorted and washed in 3 to 4 changes of water
1/4 cup green lentils (saabut mesoor dal), sorted and washed in 3 to 4 changes of water
1/4 cup , yellow split garbanzo beans, (channa dal), sorted and washed in 3 to 4 changes of water
1 small onion, finely chopped
2 tablespoons peeled minced fresh ginger
1 teaspoon minced fresh garlic
1 tablespoon ground coriander
2 teaspoons ground cumin
1/2 teaspoon Garam Masala
1/2 teaspoon ground turmeric
1/8 teaspoon ground asafoetida
1 teaspoon salt, or to taste
4 to 5 cups water
1 tablespoon vegetable oil or melted ghee
1 to 3 fresh green chili pepper, such as serrano, split lengthwise, wtih or without seeds
1 teaspoon cumin seeds
1/2 teaspoon ground paprika

Steps:

  • 1. Heat the oil in a medium cast-iron or nonstick saucepan over medium-high heat, add the dals and onion, and stir constantly over medium-low heat until fragrant and well roasted, about 5 minutes. Mix in the ginger and garlic, then the coriander, cumin, garam masala, turmeric, asafoetida, and salt, and stir about 30 seconds.2. Transfer to a pressure cooker, add 4 cups water. Secure the lid and cook over high heat until the regulator indicates high pressure, then cook 1 minute more. Remove from the heat and allow the pot to depressurize on its own, 12 to 15 minutes. Carefully open the lid and check to see if the dal is very soft and cream if not, add the remaining 1 cup water, cover, bring up to high pressure, and cook under high pressure about 30 seconds. Or cover and boil until soft, about 30 minutes.3. Uncover and simmer over medium-low heat about 10 minutes, then remove to a serving dish, cover, and keep warm.4. Heat the oil (or ghee) in a small saucepan and cook the green chili peppers about 30 seconds. Add the cumin seeds they should sizzle upon contact with the hot oil. Remove from the heat, add the paprika, and add the tarka to the cooked dal. Swirl lightly to mix, with parts of it visible as a garnish, and serve.From "1,000 Indian Recipes." 5 to 6 cups water
1 large tomato, finely chopped
1 tablespoon minced peeled fresh ginger
1 to 3 fresh green chili pepper, such as serrano, minced with seeds
1 teaspoon salt, or to taste
1.200 teaspoons ground turmeric
1.400 cups finely chopped fresh cilantro
2 tablespoons peanut oil
1 teaspoon cumin seeds
1 tablespoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon ground paprika
1/4 teaspoon Garam Masala

Steps:

  • 1. Place the dal, 4 cups water, tomato, ginger, green chili peppers, salt, and turmeric in a pressure cooker. Secure the lid and cook over high heat until the regulator indicates high pressure, then cook 1 minute more. Remove from the heat and allow the pot to depressurize on its own, 12 to 15 minutes. Carefully open the lid and check to see if the beans are very soft, with some of them broken if not, add more water as needed, cover, bring up to pressure, and cook under high pressure about 30 seconds. Or cover and boil until the dal is soft and creamy, about 30 minutes.2. Heat the oil in a small nonstick saucepan over medium-high heat and add the cumin seeds they should sizzle upon contact with the hot oil. Quickly add the coriander and cumin, cook 5 to 10 seconds, remove from the heat. Mix in the paprika and then lightly swirl everything into the dal, with parts of it visible as a garnish. 2 large tomatoes, coarsely chopped
1 to 3 fresh green chili pepper, such as serrano, stemmed
1/2 cup coarsely chopped fresh cilantro, including soft stems
3/4 cup nonfat plain yogurt
2 cups water
2 tablespoons vegetable oil
1 teaspoon cumin seeds
1/2 teaspoon coarsely ground fenugreek seeds
1 small onion, finely chopped
1 tablespoon peeled minced fresh ginger
1 clove fresh garlic (large), minced
1 tablespoon ground coriander
1/4 teaspoon ground turmeric
1 teaspoon salt, or to taste
1 (16-ounce) package frozen shelled soybean (edamame), thawed
1/4 teaspoon Garam Masala

Steps:

  • 1. In a food processor or a blender, process together to tomatoes, green chili peppers, and cilantro. Remove to a bowl and process the yogurt and water until smooth.2. Heat the oil in a large saucepan over medium-high heat and add the cumin and fenugreek seeds they should sizzle upon contact with the hot oil. Quickly add the onion, ginger, and garlic and cook until golden, about 4 minutes. Add the coriander, turmeric, and salt, then mix in the processed tomatoes and cook until most of the juices evaporate about 5 minutes.3. Add the soybeans and stir about 5 minutes. Mix in the yogurt-water mixture, and bring to a boil over high heat. Reduce the heat to medium-low, cover the pan, and summer until the beans are soft and the sauce is thick, about 30 minutes. 4 black cardamom pods, crushed lightly to break the skin
1 stick cinnamon (2-inch), broken lengthwise
1/4 teaspoon ground turmeric
1 teaspoon salt, or to taste
4 to 5 cups water
2 tablespoons vegetable oil
1 tablespoon melted ghee
1 teaspoon cumin seeds
1 tablespoon peeled minced fresh ginger
1 clove fresh garlic (large), minced
2 large tomatoes, finely chopped
1/2 cup finely chopped fresh cilantro, including soft stems
1/4 cup nonfat plain yogurt, whisked until smooth
1 tablespoon ground coriander
1 teaspoon dried fenugreek leaves
1/2 teaspoon ground cumin
1/2 teaspoon Garam Masala + more for garnish

Steps:

  • 1. Soak the beans overnight in water to cover by 2 inches. Then drain and place them in a pressure cooker, along with the cardamom pods, cinnamon, turmeric, salt, and 4 cups water. Secure the lid of the pressure cooker, place over high heat, and cook until the gauge indicates high pressure, then cook about 1 minute more. Reduce the heat to low and continue to cook another 3 minutes. Then remove from the heat and allow pot to depressurize on its own, 15 to 20 minutes. Carefully open the lid and check to see if the beans are very soft, with some of them broken if not, cover, bring up to pressure again, and cook under pressure another minute. Or cover and boil until soft, about 1/2 hour.2. Meanwhile, prepare the sauce. Heat the oil and ghee in a small saucepan over medium-high heat and add the cumin seeds, they should sizzle upon contact with the hot oil Quickly, add the ginger and garlic and stir a few seconds. Add the tomatoes and cilantro (reserve some for garnish) and cook, stirring occasionally, until the juices evaporate, 8 to 10 minutes.3. Mix in the yogurt, a little at a time, stirring constantly to prevent it from curdling. Add the coriander, fenugreek leaves, cumin, and garam masala, and stir about 1 minute. Transfer to the pot with the kidney beans and simmer, stirring occasionally, over low heat, another 15 to 20 minutes. Add up to 1 cup more water if you prefer a thinner dish. Steps:

  • 1. Soak the dal overnight in water to cover by 2 inches. Meanwhile prepare the kashmiri garam masala. When ready, drain and place the dal in a large saucepan. Add 5 cups water and salt, cover the pan, and boil over high heat about 5 minutes. Reduce the heat to medium-low and continue to cook until the dal is soft and very little water remains in the pan, about 1 1/2 hours. If the dal softens sooner, uncover and cook over high heat until most of the water evaporates. Add more water if the dal dries out sooner.2. Add the butter, yogurt, fennel seeds, ginger, and turmeric and bring to a boil over high heat, stirring constantly to prevent the yogurt from curdling. Reduce the heat to medium-low, cover the pan, and simmer until each bean bursts open to reveal its white interior and starts to break apart, 25 to 30 minutes.
