8 jumbo shrimp, in shell (about 11/4 pounds)
3 sprigs fresh thyme, leaves stripped
Juice of 2 limes (about 1/4 cup)
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper

1 clove garlic, chopped
1/2 large jalapeno, with seeds
2 scallions, white and green parts
1 cup coarsely chopped fresh cilantro

Steps:

  • 1. Heat grill to medium-high. Cut a deep slit shrimp, through shell, down ridged back and remove vein. Rinse and pat shrimp dry. Whisk thyme leaves, lime juice, 1 tablespoon of olive oil, 1/2 teaspoon of salt, and black pepper to taste in a shallow glass dish. Add shrimp and refrigerate for 30 minutes.
  • 2. Pulse garlic, jalapeno, scallions, remaining 1 tablespoon olive oil, and remaining 1/2 teaspoon salt in a food processor to a coarse paste. Add cilantro and pulse to incorporate. Spoon mixture into slit in shrimp and press to close opening. Lay shrimp on grill and cook for 3 minutes. Turn over, cover, and grill until shrimp turn pink and are slightly firm to touch, about 2 more minutes. Sprinkle with salt and serve.

1 lb medium sized cooked shrimp (peeled and deveined)
½ medium red onion (diced finely)
2 radishes (diced finely)
2 celery stalks (diced finely)
½ red or green bell pepper (finely chopped)
2 hard-boiled eggs (chopped)
4 tablespoons homemade cilantro mayonnaise ( or regular mayonnaise mixed with chopped cilantro and crushed garlic)
1 jalapeño pepper (seeds and veins removed, finely diced (optional))
2 tablespoons of lime juice
Salt to taste

Steps:

  • In a salad bowl, combine the cooked shrimp (whole or cut in half) with the diced red onions, radishes, bell pepper, celery, eggs, lime juice, cilantro mayonnaise, and salt to taste. For a spicy touch add diced jalapenos or hot peppers to taste.
  • This shrimp salad can be served immediately, but for best results I recommend letting it sit in the fridge for an hour or two before serving.

1 teaspoon kosher salt, plus additional for seasoning
Freshly ground black pepper
1 clove garlic, chopped
1/2 large jalapeno, with seeds
2 scallions (white and green parts)
1 cup coarsely chopped fresh cilantro leaves

Steps:

  • Prepare an outdoor grill with a medium-high fire. Without removing the shells, slit about 3/4 of the way through the shrimp down the ridged back and remove the vein that runs down the center. Rinse and pat the shrimp dry. Whisk thyme leaves, lime juice, 1 tablespoon of the olive oil, 1/2 teaspoon of the salt and black pepper, to taste, in a shallow nonreactive bowl or dish. Lay the shrimp cut side down in the lime mixture and refrigerate for 30 minutes.
  • In a food processor, pulse the garlic, jalapeno, scallions, remaining 1 tablespoon olive oil and remaining 1/2 teaspoon salt to make a coarse paste. Add the cilantro and pulse just enough to incorporate into the mixture. Spoon the mixture into the opening in the shrimp and close the shrimp. Grill the shrimp shell side down (to keep filling from falling out) for 3 minutes. Turn to the other shell side, cover, and grill another 2 minutes or until the shrimp turn pink and are slightly firm to the touch. Sprinkle with salt and serve.
  • Jumbo shrimp in the shell can be a knife and fork sort of deal unless you're outside and it's summer and you are feeling very relaxed. Serve these with lots of napkins if your crowd is the peel-and-eat type.

16 bamboo skewers, 12 inch
1 cup olive oil
1 teaspoon chopped fresh basil
1 cup mayonnaise
1 teaspoon chopped fresh cilantro
16 medium shrimp (size 21/25)
3 teaspoons chopped fresh garlic
4 romaine lettuce leaves
2 ounces fresh lemon juice
1/2 ounce honey

Steps:

  • Peel and devein the shrimp, leaving only the tail attached.
  • Take 4 shrimp for each bamboo skewer and skewer through the the center of the tail and set aside.
  • In a 12" flat pan mix the olive oil, basil and 2 teaspoon of chopped garlic.
  • Add the shrimp to the olive oil, marinate, cover and place in cooler for at least one hour.
  • For Aioli: Mix the mayonnaise, lemon juice, cilantro and honey in a small mixing bowl and keep cool until ready to serve.
  • Light coals on grill until ready to cook.
  • Take shrimp skewers out of marinade, lightly dry on paper towel and place on grill.
  • Cook on each side 3-4 minutes or until pink.
  • For each serving, place one lettuce leaf on a plate and put one grilled shrimp skewer on top of lettuce.
  • Put 3 oz of cilantro aioli in a small ramekin and place next to the gripped shrimp for dipping and serve.

For the Marinade:
1/4 cup olive oil, plus more for the grill
1/4 cup chopped fresh cilantro, plus more for garnish
3 tablespoons freshly squeezed lemon juice, from 1 large lemon
1/2 medium shallot , diced
1 to 2 cloves garlic, minced
1 teaspoon finely chopped fresh basil, plus more for garnish
1/4 teaspoon kosher salt
Pinch white pepper, optional

Steps:

  • Gather the ingredients.
  • Peel and devein shrimp. Blot dry with paper towels and place in a resealable plastic bag.
  • Combine marinade ingredients: oil, cilantro, lemon juice, shallot, minced garlic, chopped basil, salt, and white pepper (if using) in a bowl or large mixing cup.
  • Pour mixture over shrimp. Seal bag and place in the refrigerator for 20 to 30 minutes-but no longer than that because the acid from the lemon juice will begin to soften the shrimp.
  • Preheat the grill to medium-high heat. Right before placing shrimp on the grill, oil the grill grates well-use tongs and paper towels dipped in oil. Make about 4 passes to create a nonstick surface.
  • Remove shrimp from the bag and discard marinade. Place shrimp on the grill and allow to cook for 2 to 3 minutes on each side or until they appear pink and firm all the way around.
  • Remove from heat and serve immediately with a little extra chopped cilantro or basil on top. Enjoy!

16 jumbo shrimp, in their shells
4 skewers (wooden or metal, if wooden, soak prior to grilling)
1/2 cup sweet Asian chili sauce
4 tablespoons tomato paste
4 teaspoons fresh lemon juice
4 garlic cloves, crushed
4 teaspoons sesame oil
6 tablespoons mayonnaise
1/2 fresh red chili, seeded and finely chopped
1/2 small red onion, finely chopped
2 tablespoons fresh cilantro, chopped
2 tablespoons fresh lemon juice
salt & freshly ground black pepper

Steps:

  • Mix the marinade ingredients together in a bowl. Add the shrimp to the marinade and toss to coat evenly. Cover and refrigerate for two hours, if time permits.
  • Mix the mayonnaise ingredients together, cover, and refrigerate until required.
  • Thread four shrimp onto each skewer and cook them on a prepared grill for 4-5 minutes on each side, turning them once. To serve, remove shrimp from skewers, if preferred, and serve with the cilantro mayonnaise.
