CLASSIC MEATLOAF

- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
- Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
- Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
- Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.
EASY MEATLOAF RECIPE

- Heat the oven to 190C/fan 170C/gas 5. Put bread in processor and blitz to make crumbs, then tip into a bowl with the pork.
- Tip the onion, garlic and herbs into the food processor and process until finely chopped. Add to the bowl with the parmesan and egg. Finely chop 2 slices of the prosciutto and add to the mix with some salt and pepper. Mix well with a fork or your hands.
- Use the rest of the prosciutto to line a 1.5 litre loaf tin. Spoon in the meatloaf mix and press down well. Flip the overhanging prosciutto over the top, then put the loaf tin into a roasting tray.
- Pour hot water from the kettle into the roasting tray to come halfway up the loaf tin and bake for 1 hr until loaf shrinks from the sides of tin.
- Cool in the tin for 10 mins, then drain off any excess liquid and turn out onto a board. Cut into thick slices and serve warm or cold with salad.

- Preheat oven to 400F. Cover 2 cooling racks with tin foil and place each on a baking sheet.
- If you don't have oat flour on hand, simply use a heaping 1/2 cup of old-fashioned oats and pulse it in your blender until it resembles flour.
- To shred your zucchini, place chunks of it in your food processor and blend until you do not see any chunks. Pour the mixture into a large kitchen towel and squeeze out as much liquid as possible. if you do not have a food processor, it works just as well to finely shred your zucchini with a grater and wring out as much water as possible with a towel.
- Mix together all meatloaf ingredients in a large bowl until well blended. Divide the meat mixture into two parts. Make each part into a flat loaf on top of the tin foiled cooling racks and place in the oven for 45-60 minutes.
- While the meatloaf is baking, mix together all of the glaze ingredients.
- Remove the finished meatloaves from the oven and cover with glaze. *The meatloaf is done when you see all the juices and fat dripping from the bottom of the meatloaf. The loaf should look browned.
- Return to oven for another 10-15 minutes. Remove the glazed meatloaf from the oven and enjoy with your favorite sides!

- Preheat oven to 350°F.
- In a small bowl mix together all the season mix ingredients.
- In a sauce pan melt the butter and add onion, celery green peppers, green onions, garlic, Tabasco, Worcestershire and season mix.
- Saute until mix starts to stick to the pan, about 5 minutes.
- Then add evaporated milk and ketchup. Cook a few minutes and allow to cool to room temperature. Remove bay leaves.
- Mean while, mix together ground beef, with ground pork, eggs and breadcrumbs.
- When veggie mix reaches room temperature mix it into the the ground beef mixture.
- Bake in a 9x13 inch pan at 350 degrees for 25 minutes.
- Raise heat to 400 degrees and cook an additional 35 minutes or until done.

- Combine eggs, milk, and Worcestershire.
- Stir in crumbs, onion, parsley, salt, pepper, sage, chili powder, and garlic powder.
- Add beef and mix well using wet hands; place in a 8x4x2 inch loaf pan.
- Bake in a 350F oven for 1 1/4 hours; drain off any excess fat.
- Mix together catchup, brown sugar, and mustard; spread over meat and return to oven for 10 minutes.

- 1. In a large bowl add all ingredients and mix making sure the stuffing mix is mixed in well. (The kids and I like to do this with our hands)
- 2. Spray the bottom of a small roasting pan. Form mixture into a loaf and put in pan. Squirt some ketchup on top of loaf and spread.
- 3. Bake at 350 Degrees for 30 to 35 min.
