Spicy Ground Beef and Beans with Rice image

1 pound ground beef
2 garlic cloves (minced)
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce
1 cup beef stock
15 ounce can of black beans
2 tablespoons all-purpose flour
salt and pepper (to taste)
2 teaspoons crushed red pepper flakes (optional)
serve with white or brown rice

Steps:

  • In a large skillet, combine your ground beef, minced garlic, Worcestershire, and soy sauce. Stir occasionally until the ground beef is fully cooked.
  • In a medium pot, add in water and your rice. Follow the directions on the back of the package.
  • Add in the beef stock and allow it to simmer for 10 minutes. Stir in your black beans.
  • Whisk in the flour and allow it to simmer for another 5 minutes.
  • Taste and add in salt and pepper, to your liking.
  • Serve on top of rice.

1 lb lean ground beef
1 onion (chopped)
1 green bell pepper (roughly diced)
1 cup corn ((1 can drained))
10 oz ROTEL tomatoes with green chiles ((1 can))
15 oz black beans ((1 can drained and rinsed))
2 cups beef broth
3 tbsp taco seasoning
1 cup jasmine rice ((uncooked))
1 cup sharp cheddar cheese (shredded)
fresh cilantro (chopped)
pico de gallo
sour cream
fresh lime

Steps:

  • Brown the ground beef and onions in a large skillet by cooking over medium high heat for 4-5 minutes. Once done, drain any excess grease.
  • Add the green bell pepper, corn, black beans, ROTEL, broth, taco seasoning, and rice to the skillet and mix well. Turn the heat to high and bring to a boil, then cover and reduce the heat to low. Simmer for 20-25 minutes or until the rice is tender.
  • Remove from the heat, then sprinkle the cheddar cheese over the top. Place the lid back on for 1-2 minutes or until the cheese melts.
  • Garnish with your choice of fresh chopped cilantro, pico de gallo, sour cream, and fresh lime. Serve warm and enjoy!

Steps:

  • Gather the ingredients.

14 oz kielbasa sausage (sliced)
1 white onion (small diced)
2 bell peppers (medium diced)
5 garlic cloves (minced)
2 cups dry long-grain white rice (parboiled)
1 1/2 tsp ground cumin
1/2 tsp salt (or more if desired)
1/2 tsp ground black pepper ((or hot sauce if desired))
2 cups vegetable or chicken broth ((if cooking on the stove top, double amount of broth))
2 cups canned black beans (drained and rinsed)
1/2 cup canned corn (drained and rinsed)
2 tbsp lime juice
1/2 cup tomatoes (chopped)
2 tbsp parsley or cilantro (chopped)

Steps:

  • Pressure cooking method: Turn pressure cooker on high and let it heat up, or press the saute function and let it heat for at least 3-4 minutes.
  • Then, cook bacon for about 2-3 minutes or until enough to release the fat. Add sausage and let it cook for about 3 minutes, stirring every now and then. Add onion and bell peppers and cook for 2-3 minutes. Add garlic and cook for 1 minute. Do not let it brown!
  • Stir in rice, seasonings, and broth. Put lid on and close steam valve. Depending on your pressure cooker settings: Either cancel the saute function and press the rice function (it automatically sets the time, about 10 minutes) , or set to high pressure on manual and set for 3 minutes.
  • Let pressure release naturally. Then, remove lid and stir in beans, corn, lime juice, tomatoes, and parsley. Serve and enjoy
  • Stovetop method: Heat one large no stick pan over medium-high heat, add bacon and let it cook for about 2-3 minutes or until enough to release fat. Add sausage and cook for 3 minutes, stirring now and then.
  • Reduce heat to medium and add onion and bell peppers and cook for 2-3 minutes. Add garlic and cook for 1 minute. Do not let it brown!
  • Stir in rice, seasonings, and broth. Reduce heat to low and put lid on. Let simmer for 15-20 minutes, or until rice is tender and most of water is absorbed.
  • Fluff rice with a fork and stir in beans, corn, lime juice, tomatoes, and parsley. Serve and enjoy!

1 cup rice ((parboiled preferred; see notes))
1.5 cups broth (or more if it seems dry)
1 jar (16-oz) chunky salsa
1 can (15-oz) black beans
1 cup sweet corn (canned OR frozen)
Shredded cheese, lime wedges, sour cream, chopped tomatoes, cilantro, avocado, tortilla chips.... (optional, to serve)

Steps:

  • Brown meat:Heat the oil in a large skillet over medium-high heat. Add the onion and cook for 2 minutes. Add the garlic and beef and cook until browned. Stir in the diced peppers and cook for 1 more minute.
  • Add remaining ingredients:Stir in the tomato paste, taco seasoning, salt and pepper. Cook for 1 minute. Add the rice, broth, salsa, black beans and corn and stir well.
  • Cook:Bring to a simmer, cover the skillet with a lid, reduce the heat and gently cook for around 15 minutes, or until cooked through. Add more broth if necessary.
  • Serve:Top with shredded cheese and cover for another 2 minutes, if you like. Serve with your favorite toppings.

15 ounce can whole kernel corn, (drained)
15 ounce can black beans, (drained, rinsed)
3.8 ounce can slice black olives, (drained)
4 ounce diced green chiles
28 ounce can green enchilada sauce
10 ounce can Rotel
1 cup beef broth
1 cup white rice
2 cups Colby Jack cheese, (shredded)

Steps:

  • In a large skillet, add ground beef, onions, and all seasonings, and cook over medium-high heat until meat is no longer pink and onions are tender. Drain, if needed, and return to skillet.
  • Add corn, black beans, black olives, and diced green chilies to meat mixture. Stir.
  • Pour enchilada sauce, Rotel and beef broth into skillet. Stir to combine and bring to a boil over medium heat.
  • Add rice, stir, reduce heat to low. Cover and cook for 20-25 minutes or until rice is tender. Stir frequently.
  • Top with shredded cheese, stir and enjoy.

1 tablespoon olive oil
1 pound ground beef
1 onion, diced
2 cloves garlic, minced
1 (1.25-ounce) package taco seasoning
1 cup rice
1 cup vegetable broth
1 (15-ounce) can black beans, drained and rinsed
1 (10-ounce can) Ro*Tel® Mild Diced Tomatoes & Green Chilies
1 cup corn kernels, frozen, canned or roasted
1 teaspoon chili powder
1/2 teaspoon cumin
Kosher salt and freshly ground black pepper, to taste
Juice of 1 lime
2 tablespoons chopped fresh cilantro leaves
1 1/2 cups shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1 Roma tomato, diced

Steps:

  • Heat olive oil in a large skillet over medium high heat. Add ground beef, onion and garlic. Cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; stir in taco seasoning. Drain excess fat. Stir in rice, vegetable broth, beans, Ro*Tel®, corn, chili powder and cumin; season with salt and pepper, to taste. Bring to a boil; cover, reduce heat and simmer until rice is cooked through, about 16-18 minutes. Stir in lime juice and cilantro. Remove from heat and top with cheeses. Cover until cheese has melted, about 2 minutes. Serve immediately, garnished with tomato, if desired.

1 cup uncooked rice (long-grain)
1 pound lean ground beef (chuck or round)
1/2 cup onion (chopped)
1/4 cup bell pepper (green or red, chopped)
15 ounces black beans (1 can, drained and rinsed)
8 ounces tomato sauce (1 can)
1 cup sweet corn (use canned, drained or frozen, thawed)
1/2 teaspoon salt
Dash black pepper
1 1/2 teaspoons chili powder
Dash garlic powder
1/4 teaspoon ground cumin
2 tablespoons cilantro (fresh, chopped)
Garnish: cheddar cheese (shredded, or Mexican blend of cheeses)
Garnish: chopped cilantro or green onions

Steps:

  • Cook the rice as directed on the package; set aside.
  • Preheat the oven to 350 F.
  • Lightly grease a 2-quart casserole.
  • In a skillet over medium heat, cook the ground beef and onion until beef is no longer pink; add bell pepper and cook, stirring, for 2 minutes longer.
  • To the beef, add the beans, tomato sauce, corn, salt and pepper, chili powder, garlic powder, and cumin. Stir in the 2 tablespoons of chopped cilantro. Add the cooked rice and blend well.
  • Spoon the mixture into the prepared casserole.
  • Bake for 25 minutes.
  • Top with the shredded cheese and cook for 5 minutes longer, or until cheese is melted.
  • Garnish with more chopped cilantro or chopped green onions, if desired.

Green bell pepper 2
Garlic 2 tbsp
Olive oil ¼ cup
Cajun seasoning 2 tsp
Ground beef 1 lb
Kidney beans 4 cans
Sausages 1 (14 oz) package
Chicken broth 2 cups
Cooked rice 8 cups

Steps:

  • In a heavy bottomed 4-quart pot over medium heat, heat bacon fat, butter or oil and add 1 chopped, medium onion, 2 chopped green bell peppers, 2 tablespoons of minced garlic, and 3 chopped celery ribs, cook until soft.
  • Add 1 lb of ground beef and continue cooking until browned.
  • Add 4 cans of kidney beans, 2 cups of broth and 2 teaspoons of Cajun seasoning. Bring everything to a boil and then reduce heat to simmer.
  • Cut 1 package of beef sausages into bits and add to the pot. Simmer for about 30 minutes.
  • Serve red beans and ground beef over hot rice! Enjoy!

Stir in tomatoes, beans, and water and stir well. Simmer mixture for 15-20 minutes or until it has thickened. Stir in the chopped parsley or cilantro. Serve hot over rice with various toppings.
