7 ounces seasoned bread crumbs
6 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Pour beaten eggs into a shallow dish or bowl. In another shallow dish or bowl, mix together the grated Parmesan cheese and bread crumbs. Dip chicken breasts into beaten egg, then into bread crumb mixture to coat.
  • In a large skillet, heat oil over medium high heat. Add coated chicken and saute for about 8 to 10 minutes each side, or until chicken is cooked through and juices run clear.
  • Pour tomato sauce into a lightly greased 9x13 inch baking dish. Add chicken, then place a slice of Monterey Jack cheese over each breast, and bake in the preheated oven for 20 minutes or until cheese is completely melted.

Steps:

  • Preheat oven to 400 degrees F. Place Crispy Chicken Strips on a foil-lined baking sheet.
  • Bake in the preheated oven for 18 to 20 minutes.
  • Fill a large pot with lightly salted water and bring to a rolling boil; stir in vermicelli pasta and return to a boil. Cook uncovered, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes.
  • While Chicken Strips and vermicelli are cooking, heat oil in a large skillet over medium heat and saute garlic and onion for 5 minutes. Add tomatoes and heat for an additional 5 minutes. Stir in diced tomatoes and sauce; bring to a boil. Boil for 5 minutes. Reduce heat to low and stir in tomato paste, salt, pepper, and basil and continue to heat for 10 minutes.
  • When Crispy Chicken Strips are cooked, remove from oven and leave on the same baking sheet. Place 1 slice of mozzarella cheese on each Chicken Strip and cover with 1/4 cup of the basil tomato sauce. Return to the oven and heat for 5 minutes or until cheese has melted. Serve over drained vermicelli.

Steps:

  • Heat oven to 425 degrees. Slice the tomatoes in half crosswise and place in a 9-by-13-inch baking dish along with garlic, thyme and crushed red pepper flakes, if using. Season with salt and pepper.
  • Season chicken with salt and pepper and nestle into baking dish. Drizzle with olive oil and bake until chicken is about halfway cooked through, about 8 to 10 minutes. Remove from oven and grate Parmesan over chicken.

3 large ripe tomatoes (halved)
1 slice bread ( or ¾ cup fresh bread crumbs)
¼ cup parmesan cheese (freshly grated )
1 clove garlic (minced)
1 tablespoon olive oil
3 tablespoons of fresh herbs ((parsley, basil and oregano (or 1/2 teaspoon each dried basil & dill))
salt & black pepper to taste

Steps:

  • Preheat oven to 400°F.
  • Using a blender, food processor or Magic Bullet, process the bread into fresh breadcrumbs. (This took about 1 second in my Magic Bullet).
  • In a small bowl, combine breadcrumbs, cheese, garlic, olive oil, herbs, salt and pepper. Toss until well mixed.
  • Place sliced tomatoes in a shallow baking dish, season with salt & pepper. Top with breadcrumb mixture.
  • Bake for 10-15 minutes or until crumbs are lightly browned. Be sure not to over bake so the tomatoes don't become mushy.

Steps:

  • Preheat oven to 375°F.
  • Pound chicken breasts to ½ inch thickness.

4 chicken breasts, skinless
salt and pepper
flour, for dusting
75g/3oz fresh white breadcrumbs
50g/2oz finely grated Parmesan cheese
2 free-range eggs, beaten
olive oil, for cooking
large knob of butter
6 tomatoes, halved
1-2 cloves of garlic, thinly sliced
coarse sea salt
handful of fresh basil leaves
4 wedges of lemon

Steps:

  • Place the chicken breasts between cling film sheets and lightly bat, until about half to one centimetre/quarter to half an inch thick. Season with salt and freshly ground black pepper. Dust in flour to coat thoroughly, tapping away any excess.
  • Mix together the breadcrumbs and parmesan.
  • Dip the flattened chicken breasts (escalopes) in the beaten egg, followed by the Parmesan breadcrumbs.
  • Heat some olive oil with the butter in a large frying pan. Once sizzling, add the crumbed escalopes and cook for three to four minutes on each side until crispy and golden.
  • For the soft basil tomatoes, preheat the grill and put the tomato halves on a baking tray, topping each with a slice of garlic. Season with a good twist of fresh black pepper and a sprinkling of sea salt.
  • Drizzle with olive oil and grill until just overdone, their softness providing the escalopes with a sauce to dip into.
  • Tear the basil leaves and scatter them over the tomatoes with a drizzle of olive oil.
  • Serve the escalopes on a warm plate with the soft basil tomatoes and a wedge of lemon.

  • Chicken parmesan is a popular dish and one of the best things you can do with a chicken breast. Delicious crispy chicken fillet with tomato sauce and lots of melted cheese. You can serve this dish with pasta, polenta, salad or mashed potatoes. This is a simple dish that is popular for everyone.
  • Start by making the tomato sauce so it can become full-flavoured while you do the rest. Pour olive oil into a saucepan and add finely chopped garlic, onion and chili. Bake for a few minutes and add tomato purée, sugar and balsamic vinegar. Let fry for a few minutes and add canned tomatoes. Let it simmer for a few minutes and season with salt and pepper.
  • Put the chicken breasts in a zippo bag and flatten them with a rolling pin, kettle or something else hard you have in the kitchen. This is to get a smooth fillet that is fried evenly.
  • Now we are going to set up a "breading station". That means a plate of wheat flour, one with beaten egg and one with barbecue flour / panko / bread crumbs. In the breading flour I add a little grated parmesan. Season the chicken with salt and pepper on both sides.
  • Use a pan with high edges or a saucepan and add frying oil so that it covers the bottom with about 2 cm. Dip the chicken first in the flour and shake off the flour. Then dip in the egg mixture and then into the breading flour. Then carefully place the chicken in the hot oil. I heat the oil to about 175 degrees. Cook on both sides for a few minutes until the chicken has a crispy and golden surface.
  • Set the oven to 230 degrees hot air. Once you have fried the chicken, mix well with the tomato sauce and top the chicken with the rest of the cheese. There should be lots of cheese on this dish.
  • Bake the chicken in the oven for about 10 minutes until the cheese has melted and got a golden and nice color. Finish with some fresh basil and sliced red chili. Good luck.
