Serve your grain with cucumber, apricot, peppers, olives and tomatoes then drizzle with lemon-infused oil for a mellow finish

400g couscous
2 tbsp lemon-infused oil
500g soft dried apricot , chopped
1 cucumber , deseeded and chopped
1 large yellow pepper , deseeded and chopped
140g pitted black olive , chopped
140g sundried tomato , chopped
small bunch parsley , chopped
12 cherry tomatoes , halved

Steps:

  • Place the couscous in a bowl and cover with 700ml boiling water. Cover with cling film and leave for 10 mins, until all the liquid has been absorbed.
  • Pour over the oil and some seasoning, mix and fluff up the couscous with a fork.
  • Gently stir through the remaining ingredients and serve.

3 cups vegetable stock
12 ounces uncooked couscous
1 lemon, grated rind only
4 tablespoons extra virgin olive oil
2 ounces toasted sliced almonds
3 ounces dried apricots, chopped
2 ounces sultanas or 2 ounces golden raisins
3 tablespoons chopped fresh parsley
salt & freshly ground black pepper

Steps:

  • Boil stock in a saucepan.
  • Pour in the couscous in a thin stream and stir in lemon rind.
  • Cover the pan, remove from heat and leave for 5 minutes, fluffing with a fork after 2 minutes.
  • Drizzle over olive oil and stir in almonds, apricots, sultanas and parsley.
  • Season.
  • Either serve immediately or cover with foil and keep warm in the oven for up to 30 minutes, or allow to cool, cover with plastic wrap and reheat in a microwave oven.

700 ml chicken stock or 700 ml vegetable stock
350 g couscous
1 lemon, grated rind only
4 tablespoons extra virgin olive oil
50 g toasted sliced almonds
75 g ready-to-eat dried apricots, chopped
50 g sultanas
3 tablespoons chopped fresh parsley
salt & freshly ground black pepper

Steps:

  • Boil stock in a saucepan.
  • Pour in the couscous in a thin stream and stir in lemon rind.
  • Cover pan, remove from heat and leave for 5 minutes, fluffing with a fork after 2 minutes.
  • Drizzle over olive oil and stir in almonds, apricots, sultanas and parsley.
  • Season.
  • For Vegetarians use vegetable stock.
  • Either serve immediately or cove with foil and keep warm in the oven for up to 30 minutes, or allow to cool, cover with clingflim and reheat in a microwave oven.
