2 ¼ cups all-purpose flour
2 tablespoons baking powder
1 tablespoon pumpkin pie spice
½ teaspoon salt
2 cups white sugar
1 ¾ cups mashed pumpkin
½ cup vegetable oil
2 eggs
1 cup dried cranberries
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 1/2-inch fluted cake pan (such as Bundt®).
  • Whisk flour, baking powder, pumpkin pie spice, and salt together in a bowl.
  • Beat sugar, pumpkin, vegetable oil, and eggs together in a bowl until smooth. Slowly beat flour mixture into pumpkin mixture until batter is smooth. Fold in cranberries and walnuts. Pour into prepared cake pan.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 35 minutes.

Every spring, Annabelle Lenderick of La Tercera Farm in Marin County sows seeds for a particular kind of pumpkin specifically for this cake of ours. Throughout the summer, it delights me to think about my pumpkins, called Galeux d'Eysines, growing in their special plot of land in Bolinas, at the very tip of the San Andreas fault. This variety of pumpkin is not known for the beauty of its outer skin, which is covered in warts and bumps. Indeed, the first year Annabelle grew the Galeux, at the end of the market she had plenty leftover that did not sell. I took them back to the bakery and discovered just how gorgeous this pumpkin is for baking. The flavor is subtle and earthy, with a high water content that gives the cake a light and delicate crumb, distinguishing it from the average pumpkin loaf, which is often dense as a brick. You can make a puree from any variety of small sugar pumpkins or use canned pumpkin; stir in 1/4 cup water to loosen the puree. This cake can also be made in two 8-by-4-inch loaf pans. It is delicious glazed with chocolate ganache.

1 3/4 cups (9 ounces) all-purpose flour
1 1/2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
3/4 teaspoon kosher salt
4 large eggs
1 2/3 cups (12 ounces) sugar
1 cup vegetable oil
1 3/4 cups homemade pumpkin puree or one 14-ounce can pure solid-pack pumpkin mixed with 1/4 cup water
1 cup (3 1/2 ounces) small walnut pieces, toasted
1/4 cup chocolate ganache (optional)

Steps:

  • Liberally butter a 10-inch bundt pan and dust with flour. Tap out the excess flour. Preheat the oven to 350 degrees F. Sift together the flour, baking soda, cinnamon, nutmeg, cloves, and salt into a bowl and set aside. In the bowl of a stand mixer fitted with the whisk attachment, combine the eggs and sugar and whisk on medium speed until well combined and lightened in color, about 2 minutes. Reduce the speed to low, slowly drizzle in the oil, and whisk until combined, then whisk on high speed for 1 minute to emulsify. Switch to the paddle attachment. Add the pumpkin puree to the egg mixture and mix on medium speed just until combined. Add the dry ingredients in 3 additions, mixing just until combined after each addition, approximately 5 seconds each time. Remove the bowl from the mixer and scrape down the sides with a rubber spatula. Fold in the walnuts by hand. Pour the batter into the prepared pan. Bake until the cake springs back when touched and a tester inserted in the center comes out clean, 40 to 50 minutes. Transfer to wire racks and cool in the pan for 10 minutes. Run an offset spatula around the edges of the pans, then invert the cakes onto the racks and let cool for about 20 minutes longer. Serve right away, or wrap tightly in plastic wrap and refrigerate until you are ready to serve and up to 3 days. To freeze, wrap tightly in a second layer of plastic wrap and store in the freezer for up to 2 months. Serve at room temperature. Note: To make your own pumpkin puree, preheat the oven to 400 degrees F. Scrub a small (about 4 pounds) sugar pumpkin well and wipe dry. Cut the pumpkin in half and place the halves, flesh-side down, on a greased cookie sheet and bake until very soft, about 1 hour. Let the pumpkin cool. Scrape out the seeds and stringy fibers and discard. Scoop out the flesh of the pumpkin and process until smooth in a food processor or pass through a food mill to make a puree. Makes about 2 1/2 cups puree.
  • Chocolate Ganache: We make 20 gallons of chocolate ganache every week at Miette as it is used in or on many of the things we make. Miette's recipe for this exquisite, velvety ganache is based on a recipe by Robert Linxe in the cookbook from La Maison du Chocolat in Paris, La Maison du Chocolat: Transcendent Desserts by the Legendary Chocolatier, which is why we call it the "MDC" in the bakery. We use chocolate with 62 percent cacao. Guittard and Scharffen Berger are our preferred brands, but feel free to try any chocolate to your taste. Makes about 3 cups 10 ounces 62 percent cacao chocolate, chopped 2/3 cup (2 1/2 ounces) sifted powdered sugar 3/4 cup plus 1 tablespoon heavy cream 2 large egg yolks 3 tablespoons unsalted butter, at room temperature Combine the chocolate and powdered sugar in a heatproof bowl. In a saucepan over medium heat, bring the cream to a gentle simmer. Pour the hot cream over the chocolate and stir until the sugar is dissolved. Nest the bowl over a pan of simmering water to make a bain-marie. Heat, stirring, until all of the chocolate is melted and the mixture is smooth. Remove the bowl from the heat. Whisk the egg yolks together in a small heatproof bowl. Pour about 1/2 cup of the melted chocolate mixture into the yolks while whisking, to temper them. Pour the tempered mixture back into the pan of chocolate and whisk to combine. Add the butter and stir until smooth. Pour the hot ganache through a fine-mesh sieve into a clean heatproof bowl. Use the ganache immediately, or transfer to an airtight container and refrigerate for up to 2 weeks. Ganache does not freeze well. Next, microwave on 50 percent power for 10-second intervals, stirring between each, until the ganache reaches the desired consistency. You will usually need to add 1 or 2 tablespoons of hot water to loosen a cold ganache. For a glossy shine, it needs to return to the mixer for beating. 1 1/4 cups packed dark brown sugar (250 gms)
1/2 cup butter, softened (114 gms)
2 large eggs (100 gms)
1 (15 ounce) can canned pumpkin (425 gms)
1/2 cup half-and-half (236 gms) or 1/2 cup milk (236 gms)
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour (350 gms)
1 1/2 teaspoons baking soda
1 teaspoon salt
1 -2 teaspoon ground cinnamon, to taste
1/4 teaspoon ground ginger, to taste
1/2 teaspoon ground nutmeg, to taste
1 cup chopped walnuts (120 gms) (optional)
1/2 cup raisins (optional) or 1/2 cup chopped dates (optional)
1/2 cup mini chocolate chips (optional) or 1/2 cup cinnamon baking chips (optional)

Steps:

  • Move your oven rack so that the top of the loaf will be in the center of the oven.
  • Heat the oven to 325ºF.
  • Grease a large loaf pan with with shortening.
  • Line with parchment if desired.
  • Cream sugar and butter in a large bowl until light and fluffy.
  • Stir in eggs until blended and smooth. Add pumpkin, milk, and vanilla.
  • Beat until smooth.
  • Mix remaining dry ingredients in ziplock bag and gently combine with pumpkin mix. Stir in nuts and/or raisins/chips. Pour into pan and bake for 75- 90 minutes (until wooden skewer inserted into the center comes out clean).
  • Start testing after an hour.
  • Cool 5 minutes on wire rack still in pan.
  • Then remove from pan and place top side up.
  • Cool completely before slicing.
  • Can be served with a simple glaze or White Chocolate Cream Cheese Buttercream (#73474). Wrap tightly and store a room temperature for 4 days or in the refrigerator for up to 10 days.

1 cup molasses
1 (16 ounce) can solid pack pumpkin

I love, love, love this bread! The ingredients may seem sweet to you, but it really isn't. It's a little spicy, a little sweet, a little savory. I made my first batch when I was pregnant, ate one entire loaf right out of the oven, and then started another batch that same day so I wouldn't run out! I couldn't stop eating it, it's that good. It does require some long rising times, but the actual work you put into it is minimal. You need to allow 2 full days to make this bread. You will be rewarded, though - it's incredible. 2 2/3-3 cups bread flour (don't use all-purpose!)
1 teaspoon cinnamon
1/2 teaspoon grated nutmeg
1/2 teaspoon salt
2 tablespoons tepid water (80 - 90 degrees F)
2 teaspoons active dry yeast
5 tablespoons unsalted butter, room temp
1/3 cup sugar
1 cup pumpkin puree or 1 cup butternut squash, fresh or canned solid packed
1 large egg, room temp
3/4 cup walnut pieces, toasted
2/3 cup plump golden raisins or 2/3 cup dark raisin
2/3 cup cranberries (if frozen, thaw and pat dry)

Steps:

  • Note: This bread has an overnight rise.
  • [b]Mixingand Kneading[/b]: whisk 2 2/3 cup flour with the cinnamon, nutmeg and salt.
  • Set aside.
  • Sprinkle the yeast on the water and allow to bloom about 5 minutes.
  • In a mixer with the paddle attachment, cream the butter and sugar on medium speed until light.
  • Add the pumpkin and egg and beat until well blended.
  • Don't be concerned if the mixture looks curdled.
  • Set the mixer to low speed and add the yeast, then begin to add the dry ingredients about 1/2 cup at a time.
  • As soon as the mixture starts to form a dough that comes together, scrape the paddle clean and switch to the dough hook.
  • If your dough doesn't come together (it might be because the pumpkin had too much liquid) add a bit more flour, a tablespoon at a time, until it does.
  • Mix and knead the dough on med-low spped for 10-15 minutes, scraping down the bowl and dough hook now and then.
  • At the start, the dough will look more like a batter than a dough, but as you continue to work, it will develop into a soft, very sticky dough that will ball up on the hook.
  • The dough develops much the way brioche does.
  • With the machine on low speed, add the walnuts and raisins, mixing only until incorporated, about 1 minute.
  • Add the cranberries and mix as little as possible to avoid crushing them, although some cranberries will pop and stain a patch of the dough red; think of this as charming and proceed.
  • [b]FirstRise[/b]: scrape the dough into a lightly buttered large bowl, cover tightly with plastic wrap and set aside at room temperature to rise until nearly doubled- 2-3 hours.
  • [b]Chillingthe dough[/b]: when the dough has doubled, fold it over on itself a couple of times to deflate it, wrap it tightly in plastic and refrigerate overnight.
  • [b]Shapingthe dough[/b]: at least 6 hours before you want to begin baking, remove the dough from the refrigerator.
  • Leave it covered, in its bowl, until it reaches at least 64 degrees F.
  • on the insta-read thermometer.
  • This will take as long as 3-4 hours- don't rush it.
  • If you don't have an insta-read, look for the dough to be slightly cool and just a little spongy.
  • Lightly butter 2 loaf pans.
  • Working on a lightly floured surface, divide the dough in half and pat each piece of dough into a rectangle, keeping the short end facing you.
  • Start at the top and roll the dough toward you and seal the seam by pressing it with your fingertips.
  • Seal the ends, then place each roll in the pans, seams down.
  • [b]SecondRise[/b]: cover the pans lightly with a kitchen towel and allow to rise at room temperature for 1 1/2 to 2 hours or until the dough has nearly doubled.
  • It will rise to just above the rim of the pans.
  • [b]Baking[/b]:preheat the oven to 350 degrees F.
  • Bake about 50-55 minutes or until deep golden.
  • Remove the pans to cooling racks.
  • After resting 5 minutes, turn the loaves out of the pans to cool to room temp.
  • The breads can be kept at room temperature for a day or two or frozen, wrapped airtight, for up to 1 month.
  • Thaw, still wrapped, at room temp.
  • NOTE 1: I have made this bread in small loaf pans and given them as gifts.
  • They will bake in about 30 minutes if formed into the small loaves.
  • NOTE 2: The rising times are approximate.
  • They definitely rise on the longer side of the time-table, but whatever you do, dont' rush the rising.
  • Give yourself 2 full days to make this.
  • But- the result will be totally worth it.

I love pumpkin spice bread, walnuts, and cranberries, and found this fantastic recipe at epicurious.com. It was published in Gourmet magazine in October 2003.

Number Of Ingredients 14

2 cups all-purpose flour
2 teaspoons pumpkin pie spice
1 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
6 tablespoons unsalted butter, room temperature
1 cup sugar, plus
1 tablespoon sugar
2 large eggs
1 cup canned pumpkin puree
1 teaspoon vanilla extract
2/3 cup buttermilk
1/2 cup dried sweetened cranberries (I plan to use fresh.)
1/2 cup coarsely chopped walnuts

Steps:

  • Preheat oven to 350°F.
  • Butter 9 1/4x5 1/4x3-inch loaf pan.
  • Line bottom and 2 long sides with waxed paper.
  • Whisk flour, pumpkin pie spice, baking powder, salt, and baking soda in medium bowl to blend.
  • Using electric mixer, beat butter in large bowl until fluffy.
  • Gradually add 1 cup sugar, beating until blended.
  • Beat in eggs, 1 at a time.
  • Beat in pumpkin, then vanilla.
  • Beat in dry ingredients alternately with buttermilk in 2 additions each.
  • Fold in cranberries and nuts.
  • Transfer batter to pan.
  • Sprinkle with 1 tablespoon sugar.
  • Bake bread until tester inserted into center comes out clean, about 1 hour 10 minutes.
  • Cool bread in pan on rack 15 minutes.
  • Cut around bread at short ends to loosen from pan.
  • Turn bread out onto rack; peel off waxed paper.
  • Cool bread completely.
  • (Can be made 2 days ahead. Wrap and store at room temperature.).

Easy Pumpkin Black Walnut Bread (Cake) image

The original recipe came from my G.S. leader back in the 1973. Our troop made and sold cranberry, cranberry nut, banana or banana nut bread to help pay for a troop trip. I have also made blueberry nut, cherry nut bread and apple nut bread using the same recipe minus the pumpkin pie spices and pumpkin pie filling. If you make the banana nut bread it calls for two ripe bananas. My DD has also made muffins from the recipe for Thanksgiving dinner.

3/4 cup sugar
1/2 cup milk
3 cups complete biscuit mix (I use Bisquick)
1 egg
1 1/2 cups pumpkin pie filling (I use Libby's)
1 teaspoon pumpkin pie spice
1/2 cup finely chopped black walnut

Steps:

  • Mix ingredients together. Receipe makes two 4"x 8" loaves.
  • Bake in 350° F oven for 45 minutes, or until toothpick inserted in center comes out clean.
  • (Refrigerate leftovers, as it will get moldy fast if left out.).
