All the creamy, eggy deliciousness of a quiche, but with a rustic look and simple preparation -- and did we mention the crispy bacon lattice topping?

9 strips bacon
Nonstick cooking spray, for greasing the pan
1 sheet frozen puff pastry (from a 17.3-ounce box), thawed
12 large eggs
1 1/2 cups half-and-half
12 ounces pepper jack cheese, shredded (about 3 cups)
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange 5 strips of the bacon in parallel rows on a baking sheet lined with parchment, the edges of the slices touching but not overlapping. Working with 1 strip at a time, arrange the remaining strips perpendicular to the first ones, weaving the strips over and under to form a lattice.
  • Spray an 8-inch square baking dish with cooking spray. Roll the puff pastry into a 12-inch square and press into the bottom and up the sides of the prepared dish. Trim the edges that overhang with a paring knife. Whisk the eggs, half-and-half, cheese, 1 teaspoon salt and a few grinds of black pepper in a large bowl until well combined. Pour into the puff pastry shell. Bake the bacon lattice and the eggs until the bacon is just starting to crisp and the eggs are still jiggly in the center but slightly set, about 15 minutes.
  • Use two spatulas to lift the bacon lattice and place it on top of the eggs. Continue baking until the bacon is golden brown and crisp and the eggs are set, about 25 minutes. The eggs will be very puffy (they will deflate as the pie rests). Let sit for 10 minutes before serving.

1 9" unbaked pie shell
16 ounces bulk breakfast sausage
1 cup shredded cheddar cheese (divided)
5 large eggs (beaten)
1 cup whole milk
½ teaspoon salt
¼ teaspoon pepper

Steps:

  • Preheat the oven to 375ºF.
  • Place the pie dough into a 9-inch pie plate and flute the edges.
  • Cook the sausage in a skillet over medium-high heat until browned and crumbled. Drain off any fat.
  • Sprinkle ½ cup of cheese over the bottom of the unbaked pie crust.
  • Sprinkle the cooked sausage evenly over the cheese.
  • Then sprinkle on the remaining cheese.
  • In a medium bowl, whisk together the eggs, milk, salt and pepper.
  • Pour the egg mixture evenly over the sausage and cheese.
  • Bake for 30-35 minutes. A knife inserted in the center of the pie should come out clean.

Pie filling -- the sky is the limit. Bacon, ham, broccoli, onion, tomato, cheese, sausage, mushrooms, asparagus, etc.

  • Layer desired ingredients into pie plate and pour batter over top. Bake for about 30 minutes at 350 F. Be sure to cook any meats prior to assembling the pie. 1 9-inch pie shell
1 1/2 cups grated swiss cheese
1/4 cup chopped green pepper (optional)
2 tablespoons chopped onions
4 eggs, slightly beaten
1 cup light cream

Steps:

  • Cook sausage until done.
  • Crumble, and then drain.
  • Mix cheese and sausage.
  • Sprinkle in pie shell.
  • Lightly beat eggs in a bowl.
  • Combine remaining ingredients and add to egg mixture.
  • Pour in shell.
  • Bake at 375 degrees for 40-45 minutes .

I made this meal when my family was looking for a small meal for dinner. We decided breakfast for dinner would be great and used stuff we had on hand. Super easy and delicious!

3 slices Italian bread or 3 slices Texas toast thick bread
4 eggs, divided
1 teaspoon vanilla
1/3 cup whole milk (can sub lower fat)
1/2 teaspoon cinnamon
6 slices bacon
salt, to taste
pepper, to taste
garlic powder, to taste
onion powder, to taste
paprika, to taste
6 tablespoons maple syrup or 6 tablespoons pancake syrup

Steps:

  • Place bacon slices on broiler pan, place in cold oven. Set oven temp to 400°F Set timer for 20 minutes. Bacon will be crisp when timer goes off.
  • When bacon has 10 minutes remaining, preheat skillet to just over medium heat. Spray with cooking spray just before placing bread on skillet. Mix 1 egg, milk, cinnamon and vanilla together with whisk. Dip bread in egg mixture and cook on prepared skillet for 3 minutes first side, 2 minutes second side, or until cooked to a golden brown. Remove from skillet and place on serving plate. Spread with butter or spread.
  • Spray skillet with cooking spray, again. Crack 3 remaining eggs on prepared skillet. Sprinkle with salt, pepper, garlic, onion, and paprika to taste. Cover, cook 2 minutes.
  • Place egg on top of frenched toast, drizzle each serving with 2Tbs syrup; serve with 2 pieces of bacon each.

A recipe that came in an email from Taste of Home. Sounds like something I would love, so posting here for safe keeping. You can make the pie the night before to make for a easy morning meal. Update 6/23/2013: After having another chef try this recipe with bad results, I quickly got the ingredients to try it myself (and then make any corrections), which is why I posted it anyways!! Since it was only myself eating this time, I scaled it back for 2-3 servings and did use the shredded hashbrowns as did the previous reviewer, and it worked out perfectly. I only had mine in the refrigerator for a few hours, before baking it for my lunch. I really loved the crunchy topping from the cornflakes and bacon bits on top and next time might increase the amount of cornflakes, so good and really enjoyed the contrast of textures. After the crunchy topping you cut into a creamy tasty inside. I am leaving the recipe as I originally posted as it worked out wonderfully for me.

1/4 cup bacon, cooked and crumbled
1 1/2 cups broccoli florets, frozen

  • Preheat oven to 375 degrees F.
  • In a small bowl, mix the three cheeses together, set aside until needed.

6 slice bacon, cut in pieces and fried (or can use 5 to 6 ounces bulk breakfast sausage, fully cooked)
6 large eggs, beaten
1 10 -count tube of refrigerated canned biscuits
3 to 4 oz shredded cheddar cheese (may use jack, swiss, mozzarella or any type of cheese you like)
1 1/2 c cooked hash brown potatoes (optional)

Steps:

  • 1. Preheat oven to 350 degrees. Open the tube of canned biscuits and place all of them in the bottom of a 9 inch glass pie pan. Press together with fingertips, pushing the dough up the side of the plate as much as you can. (After a few minutes, it will start to shrink back, so keep pushing it together and up the sides of the plate before you add the filling.)
  • 2. Fry diced bacon until cooked to your liking. (Or cook bulk sausage in loose pieces.) Drain most of the drippings off. Arrange meat in the bottom of the pie dish with your cooked hash browns (if you decide to use them) Break your eggs into a mixing bowl and whip until thoroughly blended. Pour this over the meat mixture in the pie dish. Remember the canned biscuits will rise a little, so be sure and do not over-fill the pie.
  • 3. Top evenly with shredded cheese. Place in preheated oven and bake uncovered 30 to 40 minutes... The edges of the biscuits should be browned. Using a toothpick, test for doneness. Remove from oven and cool about 10 minutes before slicing. Serve hot, or cool completely, slice and place slices in freezer bags. You can pull one out of the freezer at a time, and microwave it for your convenience as desired. (I recommend serving this with a delicious salsa of your choosing. I use ("La Costena" brand) green tomatillo salsa that isn't too spicy. This lends it a wonderful and savory Tex-Mex flavor!)
  • 4. As a side note... Feel free to add other ingredients, like carmelized onions with chunks of sweet bell peppers or spicy jalapenos, chorizo, etc.. You can also sprinkle some slices of black olive on top... Use your appetite and imagination to make this suit your own taste. Buen Probecho, Y'all!! Enjoy!
