I love "jello" salads, especially in the summer. This one is light, fluffy and looks as good as it tastes (and you can't taste the buttermilk). I take it to my office when we have our "food fest" and I never have any to bring home!

1 (6 ounce) package apricot or peach flavored Jell-O® mix

  • Place the pineapple in a medium saucepan, and bring to a boil. Stir in the gelatin mix until completely dissolved. Remove to a bowl, and chill until partially set, about 1 hour. Stir in buttermilk, and chill again until thickened. Fold in whipped topping, and refrigerate until firm, at least 4 hours.

1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1 pinch salt (optional)
1 teaspoon ground cinnamon
1/2 cup raw sugar
1 cup dried apricot, diced
1 1/4 cups buttermilk
1 teaspoon vanilla extract
2 eggs
1 cup ripe banana, mashed (about 2 large bananas)

Steps:

  • Preheat oven to 180ºC. Line a loaf pan (base about 22cm long x 10cm wide) with non-stick baking paper.
  • Sift flours, baking powder, bicarbonate of soda, salt and cinnamon into a large bowl. Stir in sugar and dried apricots.
  • Combine buttermilk, vanilla, eggs and mashed banana in a large jug. Whisk until well combined. Make a well in the centre of dry ingredients. Using a metal spoon, gently fold egg mixture into dry ingredients until well combined.

  • 1. Combine dry Jello and pineapple in medium sized sauce pan. Heat to simmer and stir until jello is well dissolved. Set off heat and allow to cool slightly.

2 3/4 cups heavy cream, divided
2/3 cup plus 3 tablespoons sugar
3 cups buttermilk
3/4 cup dried apricots, preferably Californian, finely chopped
1 tablespoon fennel seeds

Steps:

  • Place 1/4 cup cold water in a small bowl. Sprinkle gelatin over; let stand 10 minutes.
  • Heat 1/2 cup cream in a medium saucepan over medium heat until very warm (it will deactivate the gelatin if it gets too hot). Remove from heat, add gelatin and 2/3 cup sugar, and whisk until they are completely dissolved. Gradually stir in remaining 2 1/4 cups cream, then buttermilk. Divide among eight small bowls or 6-ounce ramekins and chill until set, at least 4 hours.
  • Meanwhile, bring apricots, 2 tablespoons sugar, and 1 cup water to a boil in a small saucepan, reduce heat, and simmer, stirring occasionally, until thickened and jam-like, 20-25 minutes. Let compote cool completely.
  • Bring remaining 1 tablespoon sugar and 2 tablespoons water to a boil in a small saucepan over medium-high heat and cook, swirling often, until thick and syrupy (do not let it take on any color), about 4 minutes. Add fennel seeds and reduce heat to medium. Cook, stirring constantly, until sugar starts to become dry and crystallized, about 2 minutes. Remove from heat and stir until sugar is completely dry and crystallized, about 1 minute longer. Transfer seeds to a small bowl; set aside.
  • Serve panna cotta topped with compote and candied fennel seeds.
  • DO AHEAD: Panna cotta can be made 3 days ahead; cover and keep chilled. Compote can be made 1 week ahead; cover and chill.

1 cup miniature marshmallows
4 cups boiling water

¾ cup white sugar
1 egg, beaten
2 tablespoons butter
1 tablespoon all-purpose flour
1 (8 ounce) package cream cheese, softened
1 (8 ounce) tub frozen whipped topping (such as Cool Whip®), thawed

Steps:

  • Lightly spoon flour into dry measuring cups; level with knife(prevents measuring too much flour, thus resulting in tough scones).
  • Combine flour with next 4 ingredients in a bowl; cut in butter with a pastry blender until mixture resembles coarse meal. Add apricots; toss well.
  • Combine egg, buttermilk, and nectar; add to dry ingredients, stirring just until moist(dough will be sticky).

1 cup chopped dried apricots
1 cup boiling water
2 cups all-purpose flour
¾ cup white sugar
1 teaspoon baking soda
½ teaspoon salt
¼ cup melted butter
¼ cup vegetable oil
1 cup buttermilk
1 egg

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 12 cup muffin pan, or line with paper muffin cups. Place apricots into a small bowl, and pour the boiling water over them. Let stand for 5 minutes.
  • In a medium bowl stir together the flour, sugar, baking soda and salt. In a separate bowl, whisk together the melted butter, oil, buttermilk and egg. Pour the wet ingredients into the dry ingredients, and stir until just blended. It is okay for the batter to have some lumps. Drain water from apricots, and mix them into the batter.
