BLUEBERRY JELLO SALAD
Steps:
- Bring 4 cups of water to a roaring boil in a saucepan.
- Remove from heat and quickly whisk in the jello and pudding mixes. Add 1/2 cup cold water.
- Pour jello into a glass dish (the larger it is, the thinner the jello layer).
- Add the blueberries throughout the jello.
- Cover with plastic wrap and refrigerate for 4-5 hours.
- After 4-5 hours, beat together softened cream cheese and Cool Whip or whipped cream.
- Spread on top of the jello and sprinkle with the mixed nuts.
BLUEBERRY JELLO SALAD
This is a great side dish that everyone in my family really likes. It's great for holiday dinners since it can be made ahead of time. Even my mother who doesn't like jello likes this recipe. It's also very good using cherry jello and cherry pie filling.

- Dissolve Jello in boiling water. Pour into 12"x8"x2" dish. Add pineapple and blueberries. Chill or flash freeze until soft set. Combine cream cheese, sour cream, sugar and vanilla; beat until smooth and creamy. Spread evenly over salad. Sprinkle nuts on top.

BLUEBERRY GELATIN SALAD
This is a delicious salad or dessert that requires little effort but looks and tastes heavenly. I used raspberry gelatin in place of cherry because it's what I had. I also threw in some raspberries with the blueberries. Don't make your cream cheese mixture too soon or you'll sample a little too much before the jello is ready...cooks beware! I used frozen fruit, but I'd love to try it when fresh fruit is in season. I found the recipe in Taste of Home Parties, Potlucks, and Barbecues from Mildred Livingston in Phoenix, Arizona. Cook time excludes chilling time.

- Add pineapple and pie-filling, reserving 1/4 cup of pie-filling for garnish.
- Place Jell-O mixture in a large decorative glass bowl (one that holds about 6-8 cups) and chill until it sets up.
