Number Of Ingredients 6

4 pounds boneless, skinless chicken thighs
4 ounces your favorite BBQ rub seasoning
1 cup low-sodium chicken stock
2 tablespoons extra-virgin olive oil
2 pounds fresh kielbasa ("white" kielbasa) links or fresh sausage links
Your favorite BBQ sides, such as BBQ sauce, corn on the cob, sweet rolls, pickles, coleslaw, potato salad, chips and pretzels

Steps:

  • In a large baking dish, arrange the chicken in a single layer and sprinkle with the BBQ seasoning. Toss to coat. Cover and refrigerate overnight or up to 24 hours.
  • When ready to cook, position the oven racks in the top and bottom levels. Clip 2 medium metal binder clips 12 to 14 inches apart in the center of the top rack of the oven, positioning them so that the clips are facing each other and the handles of the binder clips are hanging downwards. Preheat the oven to 325 degrees F.
  • Heat a small cast-iron skillet on the stove until searing hot. Add 2 cups dry cherry wood chips to the skillet and let the chips start to smolder and smoke.
  • Remove the baking dish with the chicken from the refrigerator and drizzle the stock and olive oil over the chicken.
  • Leaving the kielbasa connected in links, lightly prick each link with a skewer or the tip of a sharp knife. Drape the kielbasa links over a 16-inch-long, 1/4-inch-thick wooden dowel.
  • Place the baking dish in the center of the bottom rack of the oven, directly underneath the binder clips. On the top rack, carefully slide the ends of the dowel through the handles of the binder clips so that the sausages are hanging above the baking dish. Note: You can also lay the sausages directly on the top oven rack, in the center.
  • Place the skillet with the smoking wood chips on the bottom rack next to the baking dish.
  • Bake until the chicken is very tender, about 1 hour and 15 minutes. Remove the sausage and the chicken from the oven. Use two forks to shred the chicken, and taste for seasoning. Transfer to a large bowl and drizzle with the remaining juices in the baking dish. Slice the kielbasa on the bias into 1-inch-thick pieces and transfer to a bowl.
  • Build the meat tower with the chicken, kielbasa, BBQ sauce, corn, sweet rolls, pickles and your other favorite BBQ sides.

1 teaspoon minced fresh dill
1 teaspoon BBQ spice rub
1/2 teaspoon granulated garlic
1/2 teaspoon honey

Steps:

  • In a small bowl, combine the mayonnaise, buttermilk, dill, BBQ spice rub, granulated garlic and honey. Whisk to combine and serve cold with your favorite dippers.

MY MOM'S BAR-B-QUE SAUCE



My Mom's Bar-B-Que Sauce image

My mom taught me how to make this sauce. It can be used on chicken or ribs. It's especially good made into ham or pork bar-b-que sandwiches! It is also a great marinade. This recipe is easy to make and can be stored in the refrigerator for weeks.

2 cups ketchup
1 cup water
1/4 cup vinegar
4 tablespoons Worcestershire sauce
2 teaspoons yellow mustard
1 cup light brown sugar

Steps:

  • Combine all ingredients in a medium saucepan. Stir well to make sure the brown sugar and mustard is disolved. Bring to a boil, then simmer uncovered for 15 minutes, stirring occasionally.
  • Can be brushed on cooked chicken or ribs and grilled for ten minutes, or made into ham or pulled pork bar-b-que sandwiches using 3 lbs. of meat.
  • Enjoy!

1/3 cup reduced sodium Worcestershire sauce
1/3 cup apple cider vinegar
2 tablespoons amber agave syrup
2 tablespoons onion powder
2 tablespoons paprika
1 tablespoon dark chili powder
1 tablespoon garlic salt
1 tablespoon liquid smoke
2 teaspoons Mexican-style hot sauce
2 teaspoons dry mustard
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
One 28-ounce can no-salt-added whole plum tomatoes (pureed)

Steps:

  • Combine the Worcestershire, vinegar, agave, onion powder, paprika, chili powder, garlic salt, liquid smoke, hot sauce, mustard, black pepper, garlic powder, cayenne and tomatoes in a medium sauce pot and bring to boil. Reduce the heat and simmer uncovered, stirring occasionally, until desired thickness is reached, 30 minutes to 1 hour.

1/4 c Bacon drippings or margarine
2 tb Chili powder
1 c Ketchup
1/2 c Molasses
2 tb Worcestershire Sauce
2 c Water
1 ts Dry mustard
1/4 c Wine vinegar
1/2 ts Salt
1/2 ts Garlic powder

Steps:

  • In a saucepan, combine Bacon Drippings, Ketchup, Molasses, Worcestershire Sauce and Vinegar. Begin cooking over low heat. Slowly stir in the water. Add the remaining ingredients, mixing well. Raise the temperature to medium high and bring the sauce to a boil. Reduce heat and simmer for 30 minutes. Let sauce cool and stand at room temp. for an hour or more. When ready to serve, reheat. Serve warm over barbecued meats. Sauce will keep refrigerated for several weeks. Enjoy! Jeff Duke

1 cup prepared mustard
1 cup white vinegar or 1 cup apple cider vinegar
1 tablespoon ReaLemon juice
3 tablespoons Worcestershire sauce
1 teaspoon salt
2 tablespoons dark brown sugar
1/2 teaspoon onion powder
1/2 teaspoon celery salt
6 beef bouillon cubes
1/2 teaspoon chili powder
Tabasco sauce
1/2 teaspoon black pepper

Steps:

  • In saucepan add mustard and slowly add vinegar with a whisk keeping mustard from being lumpy.
  • Then add rest of ingredients, stirring until smooth; let simmer for 2 hours stirring often.
  • To thicken sauce you can add cornstarch.
  • Tou can store sauce in a clean mustard bottle and put in frig.
  • Will keep about a year in frig.
