SAVOURY MINCE
Savoury mince is the perfect frugal meal on its own or adjusted to make cottage pie, chilli or bolognaise.

Steps:
- Peel the onions garlic and carrot and cut into small pieces. Mince the garlic.
- Put the oil in a large pan over a medium heat and cook the onions and carrot for 5 minutes until softened, stirring occasionally.
- Add the garlic and cook, stirring for 1 minute then use a slotted spoon to transfer the vegetable to another dish.
- Return the pan to the heat and add the mince. Break it up with a spoon and spread into an even layer, turning regularly to brown the mince and break it up completely.
- Add the flour to the pan and stir through for a minute.
- Pour in the stock, Worcester sauce, Bovril, stock, herbs and pepper. Return the vegetables to the pan.
- Bring the savoury mince to a boil and simmer for 15 minutes, stirring occasionally.
- Add the peas and cook for 5 minutes more then check the seasoning and consistency before serving. Mix a teaspoon of cornflour with water and stir into the mixture if it seems too thin.

- Preheat the oven to 200C/400F/Gas 6.
- Heat the oil in a deep frying pan and fry the beef mince for 4-5 minutes, breaking it up with a wooden spoon as it browns.
- Add the onion,leeks,carrot's, and cook for 2-3 minutes, then stir in the tomato Puree, and cook for 2-3 more minutes. Stir in the flour and cook for a further minute, then add the chopped mushrooms, the stout or beef stock and a couple of dashes of Worcestershire sauce. Bring to the boil, then reduce the heat, cover the pan with a lid and leave to simmer for 20 minutes. Set aside and leave to cool, then turn the meat mixture into a one litre pie dish.
- Roll out the pastry on a floured work surface until it is slightly larger than the pie dish. Gently drape the pastry over the dish, pressing firmly onto the edges. Trim, then shape the edges into a fluted shape.
- Cut some leaf shapes out of the pastry trimmings and decorate the top of the pie, sticking them to the pastry with the beaten egg yolk.
- Make three or four slits in the pastry to allow the steam to escape, then brush the pie with the rest of the beaten egg yolk and bake in the oven for 20-25 minutes, or until golden-brown.
JAMIE'S SPICY MINCE LINGUINE
A quick spicy mince pasta dish that packs a punch.

- Half fill a saucepan with water and bring to the boil. Crumble in the stock cube and add the linguine. Cook as per the pack instructions.
- Heat the oil in a large frying pan, add the garlic and ginger and cook for 1 minute. Add the spices and cook for another minute. Add the mince and cook until completely brown.
- Add the tomatoes, sweetcorn and spinach to the mince along with 250ml of the pasta stock water. Bring to the boil and then simmer for around 15 minutes, stirring every now and again, until the liquid has reduced and you are left with a silky mince mixture. Add ground black pepper to taste should you need it.
- Drain the pasta and divide between two plates, top with the mince mixture and sprinkle the parmesan over the top to finish then serve immediately with garlic bread.
