EASY FLAPJACKS



Easy flapjacks image

Classic, chewy and good for your soul, Lorraine Pascale's easy flapjacks are simple to make and hard to beat! Each serving provides 318 kcal, 3.5g protein, 43g carbohydrates (of which 25.5g sugars), 14g fat (of which 8g saturates), 2.5g fibre and 0.1g salt.

175g/6oz butter
175g/6oz golden syrup
175g/6oz light muscovado sugar
350g/12oz porridge oats
½ unwaxed lemon, finely grated zest only (optional)
pinch ground ginger (optional)

Steps:

  • Preheat the oven to 150C/130C Fan/Gas 2 and line a 20cm/8in square baking tin with baking paper.
  • Melt the butter in a medium pan over a low heat. Dip a brush in the butter and brush the baking tin with a little bit of it. Add the golden syrup and sugar to the butter and heat gently. Once the sugar is dissolved and the butter is melted, remove the pan from the heat and stir in the porridge oats, lemon zest and ginger.
  • Pack the mixture into the baking tin and squash down. Bake in the oven for 40 minutes.
  • Once cooked, remove from the oven, leave to cool for 15 minutes, then turn out onto a chopping board and cut into squares.
  • These flapjacks are delicious in a packed lunch or as a grab-and-go breakfast.

1 3/4 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon fine salt
1/8 teaspoon freshly ground nutmeg
3 tablespoons unsalted butter, plus more as needed
2 large eggs, room temperature
1 1/4 cups milk, at room temperature
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg.
  • In another bowl, beat the eggs and then whisk in the milk and vanilla.
  • Melt the butter in a large cast-iron skillet or griddle over medium to medium-low heat.
  • Whisk the butter into the milk mixture, add to the flour mixture, and whisk until a thick batter is just formed.
  • Keeping the skillet at medium to medium low heat, ladle about 1/4 cup of the batter onto the skillet, to make a pancake. Make one or two more pancakes, taking care to keep them evenly spaced apart. Cook, until bubbles break the surface of the pancakes, and the undersides are golden brown, about 2 minutes. Flip with a spatula and cook about 1 minute more on the second side. Serve immediately or transfer to a platter and cover loosely with foil to keep warm. Repeat with the remaining batter, adding more butter to the skillet as needed.

CHOCOLATE & CARAMEL FLAPJACKS

Number Of Ingredients 7

200g soft brown sugar
200g butter , plus extra for greasing
2 tbsp golden syrup
350g whole oats
397g can caramel (we used Carnation Caramel)
200g plain chocolate
1 tbsp unflavoured oil , like sunflower

Steps:

  • Heat oven to 150C/130C fan/gas 2. Place the sugar, butter and golden syrup together in a saucepan and gently heat until the butter has melted, stirring occasionally. Take the saucepan off the heat and stir in the oats, mixing thoroughly. Pour the mixture into a lined and lightly greased 22cm square tin, pressing it out evenly using the back of a wooden spoon. Bake in the centre of the oven for 40-45 mins.
  • Allow the mixture to cool in the tin for 10 mins (or for best results, leave to cool completely overnight), then evenly spread over the caramel. There can be discrepancies between the thickness of caramel, and the more you stir the runnier it gets. If it looks too thin pop it into a pan and boil for a few minutes, stirring. Then leave to cool - it should be thicker. Chill until firm.
  • Melt the chocolate in a heatproof bowl over a pan of barely simmering water, then stir in the oil and pour over the chilled caramel flapjack base. Let the chocolate set, then cut into squares. Setting chocolate on top of something squidgy can make it difficult to cut, this is why the oil is added.

Steps:

  • Grease a baking tin of about 30x20cm (11"x7") and line with baking parchment
  • Pre-heat oven to 180C or Gas Mark 4
  • Melt the margarine, syrup and sugar in a hot pan
  • Take off the heat and stir in the porridge oats
  • Pour and spread evenly into the baking tin for 20mins (or until golden) at 180C/Gas Mark 4

CHEWY FLAPJACKS

A basic flapjack recipe. Add to it anything you like: grated apple and cinnamon, mixed seeds, sultanas, raisins, cranberries, etc. You could drizzle melted chocolate over the top, once it's cooled.

Number Of Ingredients 4

375g unsalted butter or baking margarine
225g golden syrup
200g soft brown sugar
500g porridge oats

Steps:

  • Set oven to gas mark 3, 160 C.
  • Grease a 20x30cm baking tray and line the bottom with baking parchment.
  • In a large saucepan melt butter, sugar and syrup until all mixed and runny.
  • Take the saucepan off the heat and stir in the oats until all combined.
  • Pour the mixture into the prepared baking tray and smooth even with a spatula.
  • Place in the centre of the pre-heated oven and bake for 20 - 25 minutes, until golden. (If you prefer a more chewy flapjack, it should still have a slight wobble when you take it out of the oven).
  • Allow to cool in the tin for 15 minutes, then mark lightly where you want to cut into squares. Cover with a clean tea towel until completely cooled.
  • Cut into squares and turn out.
