LIGHT DANISH DESSERT
A light and easy recipe for a Danish pastry dessert. For a variety, try substituting fruit jam for the pie filling.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 13x9-inch baking dish.
- Unroll one of the cans of crescent dough and place into prepared baking dish; press onto bottom of pan to form a crust, firmly pressing seams together to seal.
- Beat cream cheese, 3/4 cup confectioners' sugar, egg white, and vanilla extract with an electric hand mixer on medium speed in a bowl until well blended; spread onto crust. Spread cherry pie filling over the cream cheese mixture.
- Pat remaining crescent dough onto a large sheet of waxed paper forming a 13x9-inch rectangle, pressing seams together to seal. Invert over pie filling to form top crust; discard waxed paper.
- Bake in the preheated oven until golden brown, 30 to 35 minutes; cool at least 20 minutes.
- Stream milk into remaining 3/4 cup confectioners' sugar in a bowl, while beating until well blended and thick; drizzle over warm dessert. Cut into 24 rectangles to serve. Store leftovers in refrigerator.

Original recipe for Danish Aebleskiver also known as Danish Pancake Balls. These traditional pancake balls are traditinal served during Christmas. However, they are also perfect the rest of the year.

- Separate the egg whites and yolks in separate bowls.
- Whisk the sugar and egg whites fluffy and stiff. The bowl must be completely clean and dry. A tiny bit of water will make the eggs whites impossible to whisk stiff. Set aside.
- Mix the egg yolks, all-purpose flour, natron (baking soda), salt and vanilla sugar together in a separate bowl.
- Use a hand mixer to mix the ingredients while gradually adding the buttermilk. Keep mixing until the batter is uniform.
- Melt the butter and let it cool off a bit. Slowly add the cooled butter to the buttermilk mixture while whisking.
- Use a wooden spoon or similar to slowly mix the stiff eggs whites in the batter.
- You need a special Aebleskive pan for frying. You can get one online or maybe at your local kitchen store.
- Heat up the Aebleskive pan at medium heat and add a small piece of butter in each hole. Fill the holes 3/4 with the Aebleskive batter.
- When the batter starts to get firm and you can turn them over without cracking, then turn the Aebleskiver 90 degrees (using a wooden stick or similar) and let the batter flow into the pan.
- At this point there is a hole in the side of the Aebleskive. Pour a little extra batter into the hole and turn the Aebleskive another 90 degrees so that the hole gets closed.
- When the Aebleskiver have a solid surface turn them regularly so they get an even and light-brown crust.
LIGHT AND CREAMY TROPICAL DESSERT

- Heat oven to 400°F. In large bowl, beat flour, butter and powdered sugar with electric mixer on low speed 1 minute, scraping bowl constantly. Beat on high speed about 2 minutes or until creamy. Stir in almonds. Press mixture evenly in bottom of ungreased 13x9-inch pan. Bake 12 to 15 minutes or until edges are golden brown. Cool completely, about 30 minutes.
- In large bowl, mix cream cheese, granulated sugar and vanilla with spoon. Reserve 1/2 cup of the pineapple. Stir remaining pineapple into cream cheese mixture.
- In chilled medium bowl, beat whipping cream with electric mixer on high speed until stiff peaks form. Fold whipped cream and marshmallows into cream cheese mixture. Spread over crust. Cover and refrigerate at least 4 hours until set but no longer than 48 hours.
- In 1-quart saucepan, place cornstarch. Gradually stir in reserved 1 cup pineapple juice. Cook over medium heat, stirring constantly, until thickened and bubbly. Cook and stir 2 minutes longer. Cool completely, about 30 minutes. Fold in reserved 1/2 cup pineapple, the papaya and kiwifruit. For servings, cut dessert into 5 rows by 3 rows. Serve with fruit mixture. Store covered in refrigerator.

DANISH DESSERT
Found this in an amish cookbook. It was a fundraiser for a traditional Amish school where the students stop their education after 8th grade. It tastes like a German dessert called Rote Grutze or a packaged mix Danish Dessert made by Junket. This is better and easier.

- Combine Kool-Aid, 7 cups water and sugar in a large saucepan.
- Heat until boiling.
- In a separate bowl mix clear jel and 1 cup water.
- Add to hot mixture in saucepan.
- Cook until thickened.
- Remove from heat.
- Add Jello.
- Refrigerate Serve with whipped cream or cool whip.

Steps:
- Combine Kool-aid packet, granulated sugar, and cornstarch in a 1 quart sauce pan. Mix well.
- Add two cups cold water and bring to a boil over medium high heat. Stir constantly.
- As mixture is getting close to coming to a boil it will begin to slightly thicken.
- Once mixture is boiling, turn the heat down to medium or medium low and let it continue to boil (stirring constantly) for 1 minute.
- Remove from heat and allow to cool completely before adding fruit. If you do not plan to add fruit for a cake topping and want to eat it like pudding, pour danish dessert into prepared dishes and let cool.
- I prefer to let mine cool in the fridge before adding the fruit.

- Old-fashioned Danish Apple Cake. I know it’s called apple cake, but this recipe is actually more of a cold apple pie parfait. You will need layers of cold apple filling made by boiling chopped apples with water, vanilla, and sugar.
- Lagkage (Danish Layer Cake) One thing you’ll notice about our Scandinavian friends is that they love their cakes! But they don’t usually cover them with frosting.
- Kanelstang (Danish Cinnamon Twist) There’s not a country on the planet (probably) that doesn’t have some kind of cinnamon pastry they’re proud of. Just the smell of it as it bakes is enough to have me waiting in the kitchen.
- Aebleskiver (Danish Pancake Balls) Almost all European Christmas markets will have a stall dedicated to these little bites. They’ll have a large flat top full of holes to pour the batter into, making hundreds a day.
- Kransekage (Danish Almond Cake) One of my favorite holiday recipes, this takes a little time but is so worth it in the end. Made with just four ingredients, this almond tower is quite the show-stopper.

- Fresh seafood. Denmark is surrounded by the sea, so it’s only natural that we have a lot of seafood. Herring and fiskefrikadeller are among the most popular everyday food in Denmark, but the best – in my opinion – is the plaice fillet, cod and the shellfish (crab claws and Norway lobster tails).
- Tarteletter. Chicken and asparagus in tartlets. Tarteletter are puff-pastry tart shells filled with chicken, white asparagus and a white sauce made of butter, flour, and milk with carrots and peas.
- Flæskesteg. Danish Pork roast. Another typical Danish food is flæskesteg, which is a pork roast. Flæskesteg is served with red cabbage, caramelized potatoes and boiled potatoes with gravy.
- Pickled herring. Most Danes love pickled herring, and it’s one of the most popular toppings for rye bread. Even my 2-year old eats it at day care. One of the most beloved versions is herring in a creamy curry sauce, but you can also get it marinated or in cognac, just to name a few.
- Danish hot dog. Hot dogs, known as pølser in Denmark, are the most popular street food. You can get them all over from a pølsevogn (“sausage wagon”) or any gas station.
