1 small broiler-fryer chicken
1 stalk celery (cut into bit size pieces with leaves)
1 onion (quartered)
4 garlic cloves
2 cups converted long grain rice
1 lb cooked and peeled shrimp
1 lb smoked sausage (sliced)
1 lb ham (cubed)
1/4 cup butter
1 cup yellow onion (chopped)
3/4 cup green bell pepper (chopped)
1/4 cup fresh parsley (chopped)
2 garlic cloves (minced)
1 (6 ounce) can tomato paste
1 large bay leaf
1/4 teaspoon thyme
2 teaspoons salt
1/2 teaspoon ground black pepper

Steps:

  • In a large pot, cover chicken with water and add the celery, quartered onion, and the 4 cloves of garlic. Boil until tender, approximately 1 hour.
  • Reserve the stock. Remove the chicken from the bones & either cut, slice, cube or shred.
  • In 5 cups of stock, cook rice until liquid is absorbed, about 25 minutes. The rice should be slightly moist.
  • In a Dutch oven, saute the sausage and ham until slightly browned, about 3 to 5 minutes.
  • Remove the sausage and ham from the Dutch oven and set aside.
  • Add butter to Dutch oven and saute the chopped onion, green bell pepper and parsley until tender, about 3 minutes.
  • Into the Dutch oven, add the chicken, sausage, ham, the 2 cloves of minced garlic, tomato paste, bay leaf, thyme, salt and pepper.
  • Mix, and then add the rice and the cooked shrimp and mix thoroughly.
  • Cook over low heat, stirring constantly, about 15 minutes.
  • Remove bay leaf and serve.

1 large onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
2 cloves garlic, minced
1/2 teaspoon salt, plus more, to taste
1/4 teaspoon freshly ground black pepper, plus more, to taste
1 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1 bay leaf
1/4 teaspoon cayenne pepper
1 tablespoon tomato paste
6 ounces diced, smoked ham
2 1/2 cups low sodium chicken broth
One 14 1/2-ounce can no-salt added diced tomatoes
1 cup uncooked long-grain white rice
1 pound peeled and deveined medium shrimp
Hot pepper sauce

Steps:

  • Heat the oil in a large Dutch oven over a medium heat. Add the onion, peppers and garlic and saute until they begin to soften, about 10 minutes. Mix in the next 11 ingredients, salt through the diced tomatoes. Bring to a boil. Stir in the rice, cover, reduce heat and simmer for about 20 minutes, or until rice is done and most of the liquid is absorbed. Add the shrimp and cook, covered, for 5 minutes more, or until shrimp is cooked through. Season with salt and pepper, to taste. Serve with hot pepper sauce.

1 1/2 to 2 cups diced or shredded ham (reserved from Slow-Cooked Ham and Beans, recipe follows)
3 cups stewed beans (reserved from Slow-Cooked Ham and Beans)
Hot sauce, for serving (optional)
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
2 teaspoons red pepper flakes
1 tablespoon hot paprika
One 4- to 5-pound bone-in picnic ham
1 pound dried butter beans or lima beans
1 bay leaf
4 sprigs thyme
One 28-ounce can whole fire-roasted tomatoes
1 bunch scallions, chopped
4 cloves garlic, minced

Steps:

  • Heat the vegetable oil in a Dutch oven or heavy-bottomed pot over medium-high heat. Add the onion, bell pepper, celery, garlic, and salt to taste. Cook, stirring occasionally, until the onion is translucent, about 7 minutes. Add the rice, ham, beans and 2 cups water and stir to combine.
  • Reduce the heat to medium low, cover and cook until the rice is tender and almost all of the liquid is absorbed, 15 to 20 minutes. (Adjust the heat as necessary to maintain a gentle simmer; this will prevent the rice from sticking.) Remove from the heat and let stand 5 minutes before serving. Season with salt. 1/2 pound smoked sausage, halved and sliced
2 cups cubed fully cooked ham
2 celery ribs, chopped
1 large onion, chopped
1 medium green pepper, chopped
5 green onions, thinly sliced
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
2 cans (14-1/2 ounces each) chicken broth
1 cup uncooked long grain rice
1/3 cup water
4-1/2 teaspoons Worcestershire sauce
2 pounds peeled and deveined cooked shrimp (31-40 per pound)

Steps:

  • In a Dutch oven, heat oil over medium-high heat. Add sausage and ham; saute until lightly browned. Remove and keep warm. In drippings, saute celery, onion, green pepper and green onions until tender. Add garlic; cook and stir 1 minute longer. Stir in tomatoes, thyme, salt, pepper and cayenne; cook 5 minutes longer., Stir in broth, rice, water and Worcestershire sauce. Bring to a boil. Reduce heat; simmer, covered, until rice is tender, about 20 minutes. Stir in sausage mixture and shrimp; heat through. , Freeze option: Prepare jambalaya as directed, omitting rice and shrimp. Freeze shrimp and cooled jambalaya in separate freezer containers. Store rice in an airtight container at room temperature. To use, partially thaw jambalaya in refrigerator overnight. Place jambalaya in a 6-qt. stockpot; heat through. Add rice; cook, covered, about 10 minutes. Add frozen shrimp; continue cooking until shrimp are heated through and rice is tender, 5-7 minutes.

1/8 teaspoon each cayenne pepper, chili powder and pepper
1 bay leaf
1 cup uncooked long grain rice
1 pound uncooked medium shrimp, peeled and deveined

Steps:

  • In a large skillet, cook the ham, onion and garlic in oil until onion is tender. Stir in the broth, tomatoes, parsley and seasonings. Bring to a boil. Stir in rice. Reduce heat; cover and simmer for 15 minutes. Add shrimp; cook 5 minutes longer or until the shrimp turn pink and rice is tender. Discard bay leaf.

3 (14 1/2 ounce) cans chicken broth
1 (14 1/2 ounce) can diced tomatoes with juice, undrained
4 cloves garlic, crushed
1 teaspoon dried thyme
1 teaspoon dried marjoram
1/2 teaspoon cayenne pepper
1 1/2 cups chopped onions
1 cup thinly sliced celery
2/3 cup long grain rice (white or brown)
1 (3 ounce) fully cooked andouille sausages or 1 (3 ounce) chorizo sausage, diced
8 skinless chicken drumsticks (about 2 LBS.)
1 red bell pepper, diced
1/2 lb cleaned medium shrimp (optional)
1/2 lb fresh okra, sliced 1/2 inch thick (optional)

Steps:

  • In a saucepan,bring broth,tomatoes,garlic,herbs and cayenne to a boil.
  • In a 5-or6-qt slow-cooker, mix onion,celery,rice and sausage.
  • Add broth.
  • Tuck in drumsticks,meaty side down,to cover.
  • Scatter bell peppers on top.
  • Cover;cook on low-heat setting 7-8 hrs,or on high for2 1/2-3 hrs,until rice has softened and chicken is tender.
  • Uncover then turn to high.
  • Add shrimp and okra;cover.
  • Simmer 5 minutes,until shrimp are cooked and okra is crisp tender.
  • Remove drumsticks;remove bones,if desired.
  • Ladle in soup bowls and add chicken to each bowl.
  • MY NOTES:You may add or subtract to your liking.
  • I have used chicken thighs and chicken breasts and I have also used smoked sausage.
  • Use more or less seasonings or add different ones.
  • I also make this in my dutch oven on the stove top.
  • If you do it this way cook everything but the shrimp and okra for about an hour&10 min,then add shrimp and okra and simmer for about 5 more minutes.
  • Have fun!

  • Cook the onion, sweet pepper and garlic in the oil for about 5 minutes or until tender.
  • Stir in the can of tomatoes, chicken broth, ham and seasonings.

1 slice onion
1 cup celery leaves
2 to 3 parsley sprigs
1/4 teaspoon ground red pepper
1 cup chopped celery
1/2 cup chopped onion
1 small clove garlic, minced
2 tablespoons butter
1 8-oune can tomato sauce
1/4 cup catsup
1/4 cup long-grain rice
1 10-ounce package frozen cut okra
1 4 1/2-ounce can shrimp

Steps:

  • Combine ham bone, onion slice, celery leaves, parsley springs, red pepper, 5 cups water, and 1/4 teaspoon black pepper. Bring to boiling; reduce heat. Cover, simmer 30 to 45 minutes. Remove bone. Cool and cup off meat; chop. Discard bone. Strain broth. Cook chopped celery, onion, and garlic in butter till tender. Stir in broth, ham, tomato sauce, catsup, and uncooked rice. Bring to boiling; reduce heat. Cover; simmer 15 minutes. Add okra and drained shrimp. Return to boiling; reduce heat. Cover; simmer 5 minutes. Garnish with cooked crawfish and mustard greens. Adapted from a recipe in a magazine. Add more chicken, shrimp, and ham to suit your personal taste. The Pico De Gallo is optional. However, I really like the addition of this ingredient. Instead of the diced tomatoes and hot sauce, substitute a 10 ounce can of Ro*Tel Diced Tomatoes and Green Chilies. The Ro*Tel really gives it a nice kick.

  • Sprinkle chicken evenly with salt, black pepper, and red pepper.

  • Remove chicken using a slotted spoon.

  • Add tomatoes and next 3 ingredients and bring to a boil over medium-high heat.

  • Stir in shrimp and hot sauce; cook, covered, 10 more minutes or until liquid is absorbed and rice is tender.
