2 tablespoons cider vinegar
1 tablespoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups torn romaine lettuce
2 cups torn fresh spinach
1 cup torn iceberg lettuce
1 medium zucchini, shredded (1 cup)
2 ounces chopped fresh mushrooms (1/2 cup)
8 medium radishes, chopped (1/2 cup)
1 small red bell pepper, chopped (1/2 cup)

Steps:

  • In large bowl, mix all dressing ingredients with wire whisk or fork until well blended.

I use unfiltered apple cider vinegar and fresh honey from the bee keeper from the farmers market but you can use any cider vinegar and honey that you have on hand.
