My husband loves blue cheese and I like a hearty salad that eats like a meal, so I put the two things together to make this steak salad recipe. The sweet-tartness of dried cranberries pairs deliciously with the cheese, creamy avocado and balsamic vinegar. It's irresistible! -Marla Clark, Albuquerque, New Mexico

1/4 cup balsamic vinegar
1/4 cup olive oil
2 teaspoons lemon juice
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1/4 teaspoon salt
1/8 teaspoon coarsely ground pepper
1 beef flat iron steak or top sirloin steak (3/4 pound)
1 package (9 ounces) ready-to-serve salad greens
8 cherry tomatoes, halved
4 radishes, sliced
1/2 medium ripe avocado, peeled and thinly sliced
1/4 cup dried cranberries
Crumbled blue cheese and additional pepper, optional

Steps:

  • For dressing, whisk together first six ingredients. Place steak and 1/4 cup dressing in a resealable plastic bag; seal bag and turn to coat. Refrigerate 8 hours or overnight. Reserve remaining dressing; cover and refrigerate until serving., Drain beef, discarding marinade. Grill steak, covered, over medium heat or broil 4 in. from heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 160°), 6-8 minutes per side. Let stand 5 minutes before slicing., To serve, divide salad greens among four plates. Top with steak, tomatoes, radishes and avocado; sprinkle with cranberries and, if desired, cheese and pepper. Serve with reserved dressing.

This is the steak salad of your dreams! It's loaded with a juicy steak, your favorite veggies, and a creamy balsamic vinaigrette. It makes a delicious healthy lunch or dinner salad!

10 ounce grilling steak (boneless prime rib)
½ teaspoon EACH: salt and pepper
1 teaspoon avocado oil
4 ounces arugula
1 cup cherry tomatoes (cut in half)
½ English cucumber (diced)
½ avocado (sliced)
¼ cup thinly sliced red onions
½ tablespoon EACH: grainy mustard, dijon mustard, and balsamic vinegar
2 tablespoons olive oil
A pinch of salt and pepper

Steps:

  • Take the steak out of your fridge and evenly coat both sides with the salt and pepper. Add all the salad ingredients to a salad bowl.
  • Heat a cast iron or heavy-bottomed pan over high heat. Drizzle the avocado oil over both sides of the steak. When the pan starts to smoke, add the steak and let it cook undisturbed for 2 minutes. Flip the steak over and let it cook for 2-3 minutes more. Transfer the steak to a cutting board and let it rest.
  • While the steak is resting, whisk the salad dressing ingredients in a small bowl. Thin the dressing with up to a tablespoon of water, as needed. Pour the dressing over the salad and toss.
  • Thinly slice the steak across the grain and serve it over the salad.

Inexpensive steaks get an upgrade from a Dijon balsamic vinaigrette and a dollop of blue cheese butter. The vinaigrette also makes an earthy, tangy dressing for a crunchy celery salad.

1/2 small red onion, thinly sliced
Four 4-ounce top blade steaks
Kosher salt and freshly ground black pepper
1/3 cup Food Network Kitchen™ Inspirations French Style Dijon Balsamic Vinaigrette
3 tablespoons crumbled blue cheese
2 tablespoons unsalted butter, at room temperature
3 tablespoons chopped flat-leaf parsley
4 stalks celery, thinly sliced
1 tablespoon olive oil

Steps:

  • Soak the onions in a bowl of cold water for 10 minutes (this helps remove some of the pungent bite).
  • Pierce the steaks with a fork and sprinkle with salt and pepper. Coat them in 3 tablespoons of the French Style Dijon Balsamic Vinaigrette in a shallow bowl or baking dish. Set aside while you prepare the blue cheese butter and salad.
  • Mash the blue cheese, butter and 1 tablespoon of the parsley in a small bowl and season with salt and pepper.
  • Drain the onion and pat dry. Toss with the celery and the remaining 2 tablespoons parsley in another bowl. Season with salt and pepper.
  • Heat the oil in a large cast-iron skillet over high heat. Cook the steaks until browned on the bottom, 3 to 5 minutes. Flip and continue to cook 3 to 5 more minutes for medium-rare. Transfer to a plate and let rest 5 minutes.
  • Divide the celery salad among 4 plates. Top each with a steak and drizzle with any pan juices or collected juices on the plate. Top each steak with a mound of blue cheese butter. Drizzle with the remaining vinaigrette.

Our Balsamic Steak Salad is the perfect summer salad - loaded with fresh cucumber, sliced avocado, cherry tomatoes, cubed mozzarella, then topped with grilled steak, there's just so much to love.

2 pounds sirloin steak
1 (16 ounce) bottle balsamic vinaigrette dressing (divided)
12 cups spring salad mix
1 (8 ounce) block Mozzarella cheese (cubed)
1 cup cherry tomatoes (halved)
1 cucumber (thinly sliced)
1 avocado (sliced)

Steps:

  • Place steak in a resealable plastic bag.
  • Add 1 cup balsamic vinaigrette, then seal and shake to coat. Marinate in the refrigerator for at least 2 hours (we like it best marinaded overnight).
  • Remove steak from marinade (then discard marinade).
  • Grill steak over medium heat (or broil) until meat reaches desired doneness, about 6-8 minutes per side.
  • While steak is cooking, divide salad greens, mozzarella cheese, cherry tomatoes, cucumber, and avocado over 6 plates. Top with steak once it's finished cooking and serve with remaining balsamic vinaigrette.

1 yellow bell pepper, seeded and cut into strips
1 red bell pepper, seeded and cut into strips
1 orange bell pepper, seeded and cut into strips
1/4-1/2 cup olive oil
1 cup balsamic vinegar
1/2 lb steak, marinated, cooked and cut into 1 1/2-inch thin strips across the grain
6 cups mixed lettuce greens
roasted red pepper salad dressing or tequila lime salad dressing
crumbled feta, to taste

Steps:

  • Combine your favorite marinade ingredients. Marinate meat overnight.
  • Broil or grill steak for 12-15 minutes until done to your taste.
  • Cut across grain into 1 1/2" thin strips.
  • Char peppers in a skillet in olive oil until slightly blackened and blistered on medium high heat.
  • Reduce heat to medium low and add balsamic vinegar to the skillet.
  • Cover and cook on medium low heat until vinegar is reduced to a syrup consistency.
  • Put salad in bowl.

1 boneless beef sirloin steak (1/2 lb.), 1/2 inch thick
1/2 lb. fresh asparagus spears
1 large red pepper, cut into 2-inch-wide strips
1 Tbsp. olive oil
1 pkg. (6 oz.) torn mixed salad greens
1/4 cup crumbled blue cheese

Steps:

  • Pour 1/4 cup dressing over steak in shallow dish; turn to evenly coat both sides of steak. Refrigerate 30 min. to marinate.
