1 (15.5 ounce) can garbanzo beans (chickpeas), drained and liquid reserved
8 slices jarred jalapeno peppers, diced
1 tablespoon juice from jarred jalapeno peppers
1 tablespoon lemon juice
1 tablespoon olive oil
1 tablespoon tahini
2 teaspoons minced garlic
2 teaspoons cayenne pepper
½ teaspoon ground cumin
½ teaspoon dried oregano
ground black pepper to taste
1 pinch paprika, or to taste

Steps:

  • Blend garbanzo beans, jalapeno peppers, juice from jalapeno peppers, lemon juice, olive oil, tahini, and garlic in a blender or food processor until smooth; add reserved garbanzo bean liquid and blend to reach desired consistency. Add cayenne pepper, cumin, oregano, black pepper, and paprika; blend until smooth.
  • Chill hummus until flavors blend, about 4 hours.

  • In a blender or food processor, mix the garbanzo beans, jalapeno peppers and reserved juice, tahini, garlic, and lemon juice. Season with cumin, curry powder, and crushed red pepper. Blend until smooth.

This quick bread is moist with the flavors of spicy garlic hummus. Could also be made as muffins, but I don't know how many it would make or the cooking time. The spiciness can also be adjusted by using more or less jalapeno. Serve instead of corn bread.

1 (15 1/2 ounce) can garbanzo beans
1 teaspoon garlic, chopped
1 jalapeno, fresh, seeded and diced
1/4 cup olive oil
1 teaspoon salt
2 teaspoons dried onion, minced
2 tablespoons parsley, chopped
2 cups self-rising flour
1 teaspoon salt
1/2 teaspoon garlic powder
2 eggs
2/3 cup milk
1/4 cup vegetable oil

Steps:

  • Heat oven to 400 degrees F. Grease a loaf pan and set it aside.
  • Place all the ingredients for the hummus in a food processor and puree until mostly smooth. It will still have a few small lumps of beans and will be drier than a hummus dip.
  • In a large bowl mix together the flour, salt and garlic powder.
  • Mix the remaining bread ingredients in a separate bowl then add to the dry. Stir once or twice then add the hummus to the mixture. Mix until combined and pour into the pan.
  • Bake for 40mins. It should be golden brown on top and a knife inserted in the center should come out clean. Let cool for at least 10 minutes before removing from pan.

A smooth hummus with a kick, great for a healthy snack and quick and easy to make. The dried jalapeno can be found in your local grocery store and looks like dried parsley. Add sun-dried tomatoes or roasted red pepper if you want to change up the flavor, but this is completely optional. Garnish with a sprig of parsley and serve with pita bread or as a dip for veggies!

4 lbs jalapeno peppers
2 lbs onions
3 cups white vinegar
2 cups sugar
2 tablespoons mustard seeds
2 teaspoons turmeric powder
2 teaspoons celery seeds
1 teaspoon ginger powder

Steps:

  • Thinly slice jalapenos and onions and cold pack into jars. Use rubber gloves for handling jalapenos.
  • Place remaining ingredients in large pan and bring to a boil.
  • Pour hot mixture into jars, over the peppers and onions, leaving 1/4 inch headspace. If you run short of the juice, top with boiling water.
  • Remove air bubbles by running a knife around the inside of the jars. Adjust caps.
  • Process 10-minutes in boiling water bath.
  • Yield: about 5-6 Pints.

With store bought hummus, the quantity is small and prices are high... plus I like to be able to control the ingredients, so I adapted this recipe from ingredient labels. Please note that I use Bertolli Extra Light "Tasting" olive oil for the mild flavor. This hummus will taste significately different if you use Extra Virgin Olive Oil and I don't recommend it... unless you like the strong taste. If you don't have a Kitchen Aide Garlic Press, I highly recommend one... I bought mine at Fry's Electronics... it is easy to use and clean. This Jalapeno and Lime Hummus is great as a dip, on pita or as a sandwich spread.

Another nice hummus recipe that makes use of my garden's peppers by way of The Wichita Eagle who got it from the North American Olive Oil Association. This one is a little lighter on the lemon & tahini - adjust to your taste of course. Use a potato masher to crush the garbanzos if you do not have food processor or blender - did it that way myself for years & now I prefer a chunkier hummus to the ultra-smooth, go figure. Serve with baked pita bread or pita chips or stuff into tomatoes (big cherries piped with smooth spicy hummus are great heavy hors d'oeuvres).
