- In a medium glass or enamel lined sauce pan over high heat, combine oil, peppers, garlic, onion and salt; saute for 4 minutes. Add the water and cook for 20 minutes, stirring often. Remove from heat and allow mixture to cool to room temperature.
- Transfer the mixture to a food processor and puree until smooth. With the processor running, slowly add the vinegar.
- Pour into a sterilized jar with a tight lid. This sauce will keep for 6 months when stored in the refrigerator.

- Set aside 1 jalapeno pepper. Cut the stems off the rest; slice in half lengthwise, and remove the seeds.
- Place all of the peppers in a large pot of boiling water. Boil peppers about 15 minutes. Reserve about 2 tablespoons of boiling water, and drain the rest.
- Cut the stem off the remaining whole pepper, and place all of the the peppers into a blender. Pour in reserved water and canola oil, and season with salt and pepper. Blend until smooth and creamy. Serve hot or chilled.

- Wash a wide-mouth pint mason jar and and its lid in hot soapy water. Then rinse and let air dry.
- Thinly slice the jalapeño peppers. Fill the jar with the slices.
- Peel the garlic cloves, leaving them whole. In a small saucepan, combine the garlic, vinegar, water, sugar, kosher salt, peppercorns and bay leaf. Bring to a boil, stirring occasionally to dissolve the sugar and salt (this will take only a few minutes).
- Once boiling, pour the brine into the jar (including the bay leaf). Tap the jar on the counter to release any air bubbles. Discard any remaining brine, or top off the jar with extra water if any peppers are exposed at the top.
- Screw on the lid tightly and allow to cool to room temperature (about 1 hour). Eat immediately, or refrigerate until serving. Keeps up to 1 month refrigerated.

JALAPEñO BROWN BUTTER
Mixing diced jalapeños into a classic brown butter makes for a delightfully bright accompaniment for steamed clams or lobster. The mixture can be used on corn bread to great effect as well. You can easily omit the peppers if you don't like spice. Brown butter on its own is pretty great.

- Melt the butter in a small sauce pan set over medium heat, and when it foams, add the diced jalapeño.
- Continue cooking, swirling the mixture occasionally and stirring with a spoon to prevent the milk solids from sticking to the bottom of the pan, until the butter has turned brown and gives off a toasted, nutty aroma, approximately 4 to 5 minutes.
- Remove from heat, allow to cool slightly before tasting and add salt and pepper if desired. Serve immediately with steamed clams, or as a sauce for sautéed fish.

PECAN BONIATO CRUSTED FISH WITH JALAPENO CREAM SAUCE
Steps:
- For the fish: First set your oven to 350 degrees F and get it warm. Mix together the pecans and brown sugar in a medium bowl mix, and then spread onto a baking sheet and toast for 7 minutes, making sure not to burn them. Let cool to room temperature - do not put them in the refrigerator! Once the pecans are cool, transfer them to a food processor with the breadcrumbs and boniatos and blend. Once you have your mixture you can bag it up and keep leftover mix in the refrigerator for up to 2 days.
- Coat your fish using a standard breading procedure: dredge in the flour, then the egg, and then your pecan-boniato mixture. You're going to want to saute this fish with the butter or olive oil. Heat the butter or oil in a saute pan over medium heat for about 3 minutes, and then saute the fish until golden brown on both sides, 4 to 6 minutes per side. Do not burn. Once you have that golden color place the fish in the oven for 5 minutes to make sure it's completely cooked through.
- For the jalapeno cream sauce: Meanwhile, mix together the onions, garlic, jalapeno and bell peppers. Heat the oil in a medium saucepan and saute the vegetables until the garlic is slightly golden in color, then add your wine to deglaze the pan, scraping up the bottom, and cook until reduced by half. Pour in the heavy cream, then the milk and bring to a slight simmer over medium heat. Stir in the butter, jalapeno juice and salt and black pepper, then reduce the heat to low and cook until the butter melts.
- Serve the fish topped with the jalapeno cream sauce.
JALAPENO BUTTER SAUCE
I created this quick, flavorful sauce to go with grilled rare, sashimi grade tuna. Grill your tuna and then serve this on the side. Play around with the amounts if you are using another brand of jalapeno hot sauce, some are saltier than others. This is such a great sauce for any grilled fish, hope you enjoy it!

- In a small bowl combine the butter, jalapeno, garlic, and salt and pepper until well blended.
- Preheat the grill to medium high. Carefully oil the grill rack.
- Season the steaks generously with salt and pepper on both sides. Grill the steaks, turning once about halfway through the cooking time for simple grill marks on each side. Or, turn the steaks every two minutes or so three times, so that you achieve cross-hatch grill marks (turn the steaks a quarter turn as you flip them), until the steaks are done to your liking. This should take about 12 minutes total for rare (120°F internal temperature), 14 minutes for medium rare (125°F internal temperature) and 16 minutes (130°F for medium).
- Remove the steaks from the grill to a cutting board and immediately place half of the butter mixture on each of the steaks. Let sit for a few minutes before serving and cutting into them. You can also leave the steaks on the cutting board for 3 to 4 minutes, then slice and serve the steak sliced.

- Slice the stem end of you jalapenos off discard, slice the jalapenos in half. At this point you can remove all, or some of the seeds and membrane from the jalapenos, or keep them in. This is where the spice lives. Since jalapenos can vary quite a bit in how spicy they are here is my suggestion: remove the seeds and membrane, but reserve them. Proceed with making the sauce, taste, and add the seeds and membrane into the sauce to increase the heat, as you like it. This way you don’t end up with a super spicy sauce if you don’t want it. At this time, also remove the stem end, and slice the poblanos in half, removing their seeds, discard the seeds. Peel the garlic cloves, you can leave them whole.
- Transfer all of the ingredients (except for the jalapeno seeds, if you want to wait to see how spicy your sauce is) to a blender. Blend on high, scraping down sides as needed. The sauce should be mostly smooth and creamy. Taste and adjust seasoning as needed, or add those jalapeno seeds in to make the sauce more spicy. Also, at this time add the agave nectar if you need to round out the acidify of the lime juice a little – it’s not so much that it will make the sauce sweet.
- You can use the jalapeno sauce immediately if you’re in a rush, but it is best if it’s chilled for at least 2 hours. This is especially nice when you are serving it as a dip with tortillas. It’s less important to chill the sauce if you are drizzling it over an entrée.
- There are so many ways you can use this jalapeno sauce. We really love it as a dip with tortilla chips for an appetizer, or a side dish. However, I know it would be delicious as a sauce drizzled on almost any Mexican dishes: tacos, enchiladas, quesadillas, burritos etc. I also think it would be good on eggs and chicken.
