1/2 cup pecans
2 cups all-purpose flour
1 3/4 cups sugar
1 1/4 teaspoons kosher salt
3 sticks unsalted butter, cut into small pieces, at room temperature
3 large eggs, plus 4 egg yolks
1 1/4-ounce packet unflavored gelatin powder
1/4 cup warm water
1 12-ounce bag cranberries (fresh or frozen)
1 vanilla bean, split
1/2 teaspoon finely grated lemon zest, plus 1/4 cup lemon juice

Steps:

  • Preheat the oven to 350 degrees F. Lightly coat a 9-by-13-inch baking dish with cooking spray, then line with parchment paper, leaving an overhang on two sides. Lightly coat the parchment with cooking spray. Spread the pecans on a baking sheet and bake until toasted, 8 to 10 minutes; let cool.
  • Finely grind the nuts in a food processor. Add the flour, 1/2 cup sugar and 1 teaspoon salt and pulse. Add 1 1/2 sticks butter and 2 egg yolks; process until the dough comes together. Transfer the dough to the prepared baking dish and press into an even layer (use a piece of parchment to help). Bake until the crust is golden brown, 30 to 35 minutes. Let cool.
  • Sprinkle the gelatin over 2 tablespoons warm water in a small microwave-safe bowl and stir to combine. Microwave in 10-second intervals, stirring after each, until melted.
  • Combine the cranberries, vanilla bean and 3/4 cup sugar in a medium saucepan. Stir in 2 tablespoons warm water and cook over medium-high heat, stirring, until thick, 10 to 15 minutes. Discard the vanilla bean. Transfer the mixture to a blender, add the gelatin mixture and puree on low speed until smooth but not too airy; set aside.
  • Meanwhile, whisk the 3 whole eggs, remaining 2 egg yolks, the lemon zest, lemon juice and the remaining 1/2 cup sugar and 1/4 teaspoon salt in a medium saucepan. Cook over medium heat, whisking, until thick enough to coat the back of a spoon, 5 to 10 minutes (do not boil). Remove from the heat and whisk in the remaining 1 1/2 sticks butter, one piece at a time, until creamy. Whisk in the cranberry mixture until combined. Spread the cranberry mixture over the cooled crust and refrigerate, uncovered, at least 6 hours and up to 1 day.
  • Lift the bars out of the pan and remove the parchment. Cut into small squares.

¾ cup sugar
2 tablespoons orange zest
1 ½ cups all-purpose flour
1 ½ cups rolled oats

Steps:

  • In a small saucepan over medium high heat, combine the cranberries, white sugar and orange zest. Bring to a boil, then reduce heat and cook until the mixture has reduced to about 1 cup.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking pan, line with foil, then grease the foil.
  • In a medium bowl, stir together the flour, oats, brown sugar, baking powder and salt. Cut in the butter using your hands or a pastry blender until the mixture resembles coarse crumbs. Press half of this mixture firmly into the prepared pan. Spread the cranberry sauce evenly over the base, then crumble the remaining oat mixture over the top.
  • Bake for 10 to 15 minutes in the preheated oven, until the top is golden brown. Cool completely before cutting into bars.

12 ounces fresh or frozen cranberries, thawed if frozen
1/3 cup fresh lemon juice
1 1/4 cup granulated sugar
Nonstick cooking spray
2 sticks (1 cup) unsalted butter, at room temperature
2/3 cup confectioners' sugar
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
3/4 cup almond flour
1/2 teaspoon fine sea salt
4 large eggs
2 large egg yolks
1/4 teaspoon fine sea salt
10 tablespoons unsalted butter, melted

Steps:

  • For the cranberry-lemon juice: Cook the cranberries, lemon juice and sugar in a medium saucepan over medium to medium-low heat, stirring occasionally, until the cranberries soften and begin to burst, 10 to 12 minutes. Use an immersion blender to puree the mixture until smooth inside the saucepan. Cool while you make the crust.
  • For the crust: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with nonstick cooking spray and line with parchment paper, leaving at least 2 inches of excess on either side to help you unmold the bars later.
  • Cream the butter, confectioners' sugar and vanilla in the bowl of an electric mixer fitted with the paddle attachment, until light and fluffy, 4 to 5 minutes. Add the all-purpose flour, almond flour and salt and mix on low speed until the mixture comes together. Scrape the bowl well, then mix on low speed again.
  • Crumble the crust into the prepared baking dish and carefully press into an even layer with your hands or the bottom of a measuring cup.
  • Bake until lightly golden brown at the edges, 15 to 17 minutes. Cool completely.
  • For the filling: Whisk the cooled cranberry-lemon juice mixture with the eggs, egg yolks and sea salt in a large bowl until well combined. Add the melted butter and whisk well to combine. Pour the filling into the cooled crust. Gently transfer to the oven and bake until the center of the custard sets, 24 to 28 minutes. Cool to room temperature, then chill for at least 2 hours before slicing and serving.

1 cup sugar
1/2 cup ground slivered almonds
1 teaspoon baking powder

Steps:

  • Heat oven to 375°F. Grease 13x9-inch pan with butter or cooking spray.
  • In large bowl, mix flour, 1 cup sugar, the almonds, baking powder and salt. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like coarse crumbs. Stir in egg. Press 2 1/2 cups of crumb mixture in bottom of pan. Stir cinnamon into remaining crumb mixture; set aside.
  • In medium bowl, stir all filling ingredients. Spoon evenly over crust. Spoon reserved crumb mixture evenly over filling.
  • Bake 45 to 55 minutes or until top is light golden brown. Cool completely. Refrigerate until chilled. Cut into 6 rows by 4 rows. Store tightly covered in refrigerator.

1 (12 ounce) package whole cranberries
1 cup white sugar
¾ cup water
1 (18.25 ounce) package yellow cake mix
¾ cup butter, melted
2 eggs
1 cup rolled oats
¾ cup packed light brown sugar
1 teaspoon ground ginger
1 teaspoon ground cinnamon

Steps:

  • In a saucepan over medium heat, combine the cranberries, white sugar, and water. Cook, stirring occasionally until all of the cranberries have popped, and the mixture is thick, about 15 minutes. Remove from heat, and set aside to cool.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together the cake mix, melted butter, and eggs. Stir in the oats, brown sugar, ginger and cinnamon. Set aside about 1 1/2 cups of the mixture, and spread the rest into the bottom of a 9x13 inch baking dish. Pack down to form a solid crust, getting it as even as possible. Spread the cooled cranberry mixture over the crust. Pinch off pieces of the remaining mixture and place evenly over the cranberry layer.

One of the photos shows you how to make the right cuts to create signature triangle shapes. Nov. 2013 note - the bars bought from Starbucks have gone down-hill this year with icing that is flavorless and no real ginger flavor to the bars. Skip Starbucks and make your own! For Valentine's Day, I used a heart-shaped cookie cutter and tinted the icing pink. They were beautiful!

Steps:

  • Preheat the oven to 350 degrees (325 for a glass or dark pan). Prepare a 10x15 by lining it with parchment paper or use a non-stick spray.
  • BARS: With an electric mixer, beat together softened butter and sugars 3-5 minutes until light; gently blend in eggs and orange extract (don't overbeat eggs). Add the flour, baking powder, and ginger and beat briefly. Add the cranberries and chips, stirring just until incorporated.
  • Spread thick batter in prepared 10x15 pan. Bake 350 for 20-24 minutes until light brown AT EDGES and a skewer tests clean. Don't overbake or your bars will be dry. Let it cool completely. NOTE: If you use a 9x13 pan, the bars will be thicker and will take 26-28 minutes.
  • FROSTING: Blend cream cheese and butter until fluffy. Add orange extract and confectioners sugar and beat until frosting is fluffy and spreadable (adding 1 t. milk if needed). Spread evenly over COOLED bars.
  • GARNISH: Use a zester to remove rind from an orange; sprinkle zest over frosted bars. Chop 1/3 cup Craisins coarsely; sprinkle over frosted bars.
  • DRIZZLE: Mix white chocolate and oil in a glass measuring cup. Microwave 1 minute; stirring every 15 seconds until melted. Use a fork or whisk to drizzle the white chocolate diagonally across the bars.
  • Allow one hour for the white chocolate to set before cutting. **To make signature Starbuck triangles, cut into 20 large squares (5 cuts by 4 cuts with the knife). Then cut each square in half diagonally to create triangles.

1 1/2 cups packed brown sugar
2 eggs
1 teaspoon orange extract

2 squares baking chocolate or almond bark, (melted)

Steps:

  • Preheat oven to 350 degrees F. Line a 15x10 or 13x9 inch jelly roll pan or rimmed cookie sheet with parchment paper. *see notes
  • Beat together melted butter and brown sugar over medium speed with an electric mixer. Add in eggs, 1 tsp orange extract, and 1 tsp vanilla extract and beat until mixed well. Add in ground ginger, baking powder, salt, and flour, beating until just blended. Don't overmix.
  • Stir in white chocolate chips and Craisins by hand. Spread evenly into the bottom of prepared pan. Bake in preheated oven for 18-22 minutes until set and golden brown at the edges. Don't overbake or bars will be hard. Remove from oven and place pan on a wire rack to cool. Allow bars to cool completely before topping with frosting.
  • To make the frosting, beat cream cheese and powdered sugar together with an electric mixer until smooth and creamy. Add 1/2 tsp orange extract and 1/2 tsp vanilla extract and mix well. Top cooled bars with frosting. Sprinkle with chopped Craisins and drizzle white chocolate over the top with a fork. I dip my fork into the chocolate then shake it gently over the top of the bars to create little streaks. You can either slice right away and enjoy, or place the bars in the refrigerator for about an hour (what I like to do) to help them set up before cutting. Cut into triangles and enjoy!

3 cups (375g) all-purpose flour (spoon & leveled)
1 cup (200g) granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 cup (2 sticks; 230g) unsalted butter, cold and cubed
1 large egg
1/4 cup (60ml) milk*
2 teaspoons pure vanilla extract
optional: 1/3 cup (30g) sliced almonds
4 cups fresh or frozen cranberries (do not thaw)
3/4 cup (150g) granulated sugar
1 Tablespoon cornstarch
2 teaspoons orange zest
1 Tablespoon (15g) fresh orange juice
2 Tablespoons (30ml) fresh orange juice
1 cup (120g) confectioners' sugar

Steps:

  • Preheat oven to 350°F (177°C). Line the bottom and sides of a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides to lift the finished bars out (makes cutting easier!). Set aside.
  • Whisk the flour, sugar, baking powder, salt, and cinnamon together in a large bowl. Add the cubed butter and using a pastry cutter, two forks, or a food processor, cut in the butter until all the flour is coated and resembles pea-sized crumbles. (See photo above for a visual.) This takes at least 5 minutes of cutting in with a pastry cutter.
  • Whisk the egg, milk, and vanilla together in a small bowl. Pour over the flour/butter mixture and gently mix together until the mixture resembles moist crumbly sand. See photo above for a visual.
  • You will have about 6 cups of the crust/crumble mixture. Set 2 cups aside. Pour the remaining into the prepared pan and flatten down with your hands or a flat spatula to form an even crust. It will be a little crumbly- that's ok. Set aside. (Almonds will be used in the topping in the next step.)
  • Mix all of the cranberry filling ingredients together. Spread over the crust. Sprinkle the remaining crumble mixture all over the cranberries. Sprinkle the almonds all over top.
  • Bake for about 40-50 minutes or until the top is lightly browned and a toothpick comes out *mostly* clean (with a few jammy cranberry specks!). Mine take about 45 minutes. Remove from the oven and allow the bars to cool completely in the pan set on a wire rack. After about 1 hour, I stick the whole pan in the refrigerator to help speed things up.
  • Whisk the icing ingredients together. Add more orange juice to thin out, if desired. Drizzle over cooled bars, then cut into squares.
  • Cover and store leftover cranberry bars (with or without icing) at room temperature for up to 2 days or in the refrigerator for up to 1 week.

Steps:

  • Preheat oven to 375 degrees and spray a 9x13 baking dish with baking spray.
  • To a stand mixer add butter and brown sugar on medium speed until light and fluffy.
  • On lowest speed add in rolled oats and flour until just combined.
  • Press mixture into baking dish.
  • Spread cranberry sauce evenly over the mixture.

100g self raising flour
100g porridge oats
100g light muscovado sugar
100g dried cranberries
100g butter , melted
1 tbsp golden syrup
1large egg , beaten
1 tsp vanilla extract or almond extract
3 tbsp flaked almonds
icing sugar , for dusting

Steps:

  • Heat oven to 180C/160C fan/gas 4. Line the base of a 20cm square tin with baking parchment.
  • In a large bowl, mix together the flour, oats, sugar and cranberries. Make a well in the centre and add the butter, golden syrup, egg and vanilla extract. Stir well until evenly damp.
  • Tip into the tin and spread out evenly. Sprinkle with almonds and bake for 20-25 mins until lightly golden. Cool in the tin for 10 mins, then cut into 6 one way and 2 the other to make 12 bars. Dust with icing sugar.

1 1/4 cups butter or 1 1/4 cups margarine, softened, divided
1 1/2 cups packed brown sugar, divided
3 1/2 cups old fashioned oats, divided
1 cup all-purpose flour
1 (16 ounce) can whole berry cranberry sauce
1/2 cup finely chopped pecans

Steps:

  • In a large mixing bowl, cream 1 cup butter and 1 cup brown sugar.
  • Stir in 2 1/2 cups oats and flour.
  • Press into greased 9x13 baking pan.
  • Spread with cranberry sauce.
  • In a microwavable safe bowl; melt remaining butter; stir in the pecans and remaining brown sugar and oats.
  • Sprinkle over cranberry sauce Bake at 375 for 25-30 minutes or until lightly browned.
  • Cool on wire rack.
  • Cut into bars.
  • I did not use the pecans and it turned out great.

1/2 cup water
2 cups fresh or frozen cranberries
1/4 cup orange juice
1 tablespoon grated orange zest

CRUST:
2 cups all-purpose flour
1/4 teaspoon salt
1-1/4 cups cold butter
1 cup sugar
3 cups quick-cooking oats

Steps:

  • In a saucepan, bring sugar and water to a boil. Add cranberries and cook until they pop, about 4-6 minutes. Add orange juice, orange zest, butter, cinnamon and salt. Cook 5 minutes longer or until mixture thickens. Remove from the heat; stir in walnuts and set aside. , For crust, combine the flour and salt in a bowl; cut in butter until mixture is crumbly. Add sugar and oats; mix well. Spoon half into an ungreased 13x9-in. baking pan; pat firmly into pan. Spread filling evenly over crust. Top with remaining crumb mixture; pat lightly. , Bake at 400° for 30-35 minutes. Cool on a wire rack. Cut into bars.

3 cups flour
1 cup sugar
1 teaspoon baking powder
1 cup butter (cold)
1 egg
1/2 teaspoon ground cinnamon
16 oz fresh or frozen cranberries
1 cup sugar
1 Tablespoon corn starch

Steps:

  • Preheat the oven to 375 degrees. Prepare a 9x13 baking pan with butter or cooking spray, and line with parchment if desired for easy removal.
  • Whisk together the flour, sugar and baking powder in a large bowl.
  • Cut the butter in small chunks and add to flour mixture. Using a pastry blender or your hands, work the mixture until crumbs are formed.
  • Add the egg and work into the mixture until fully combined.
  • Press about 3 cups of the mixture into the bottom of the prepared pan firmly. Set aside the remaining crumb mixture for the topping.
  • In a large bowl, combine the cranberries, sugar and cornstarch. Mix well.
  • Pour the cranberries over the crust, ensuring that leftover sugar from the bowl is also poured on top.
  • Using a spoon, sprinkle the remaining crumb mixture on top of the cranberries.
  • Bake for 50 minutes or until the top is slightly golden.
  • Cool to room temperature. You can serve at room temperature or put it in the refrigerator until slightly chilled.

1½ cups brown sugar (320 grams)
2 large egg yolks (28 grams)
1½ teaspoons pure vanilla extract (6 grams)
3 cups all-purpose flour (360 grams)
½ teaspoon kosher salt
1 cup white chocolate chips (170 grams)
1 cup chopped walnuts (113 grams)
12 ounces cranberries (340 grams, fresh or frozen)

Steps:

  • Preheat oven to 350°F. Grease a 9x13-inch baking pan with nonstick spray. Set aside.
  • Using a hand mixer, beat the butter and brown sugar together until light and fluffy.
  • Add the egg yolks and vanilla extract, beating to combine.
  • In a separate bowl, mix the flour and salt together.
  • Add the flour mixture to the wet ingredients until combined. The dough will be slightly crumbly.
  • Divide the dough into thirds.
  • Spread ⅔ of the dough in the bottom of the prepared 9x13-inch pan. Press until the dough lays flat and even along the sides. Bake for 25 minutes.
  • While the dough bakes, fold the chocolate chips and nuts into the remaining ⅓ of the dough.
  • Take the pan out of the oven and evenly spread a whole bag of cranberries over the dough, to the edges.
  • Quickly and evenly, put approximately 1-inch pieces of the remaining dough mixture on top of the baked dough and cranberries.
  • Put the pan back in the oven and bake for another 20 minutes.
  • Cover the pan loosely with aluminum foil and continue baking for another approximately 10 minutes, until it's cooked through. The top should be golden brown and the cranberries should be bubbly.
  • Let the bars cool for a few minutes before cutting. The bars can be served warm or cold.

16 ounces frozen cranberries
1 ¾ cup sugar, divided
4 teaspoons orange juice
1 teaspoon vanilla extract
zest of 1 orange (about 2 tablespoons)
1 tablespoon cornstarch
2 ½ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 cup cold butter
¼ teaspoon ground cinnamon
1 egg

Steps:

  • Preheat the oven to 375 F. Line a 9x13-inch baking pan with parchment paper.
  • Add the cranberries, ¾ cup sugar, orange juice, vanilla extract, orange zest, and cornstarch to a large saucepan and bring to a simmer. Simmer for about 5 minutes, or until the cranberries start popping and the liquid thickens. Remove the saucepan from the stove and let it cool.
  • Mix the flour, remaining 1 cup sugar, baking powder, salt, butter, and cinnamon together in the bowl of a food processor. Pulse until the mixture becomes coarse crumbs. Add the egg and continue pulsing until a crumbly dough forms. If you don't have a food processor, you can use a pastry blender
  • Press half the dough into the bottom of the prepared pan until it is an even layer. Spoon the cranberry filling over the dough, and top the filling with the remaining dough mixture.
  • Bake in the preheated oven for 35-45 minutes, or until the top is golden brown. Remove the baking dish from the oven, let it cool, then cut the crumble bars into squares.

1 cup plus 2 tablespoons granulated sugar, divided
3 cups fresh or frozen cranberries (not thawed if frozen; 3/4 pound)
1/4 cup water
Confectioners sugar for dusting

Steps:

  • Preheat oven to 350°F with rack in middle.
  • Line a 9-inch square baking pan with 2 crisscrossed sheets of foil, leaving an overhang on 2 opposite sides, then butter foil.
  • Blend butter, flour, salt, and 1/2 cup granulated sugar in a food processor until mixture begins to clump together. Press into bottom of pan.
  • Bake until pale golden and sides begin to pull away from pan, 25 to 30 minutes.
  • While crust is baking, cook cranberries, remaining 2/3 cup granulated sugar, and water in a 2-quart heavy saucepan over medium heat, stirring occasionally, until berries burst, 6 to 8 minutes.
