Steps:
- Place hot dogs between two paper towels and microwave on high for 20 seconds. Remove from towels and reserve the hot dogs hot.
- Lay one slice of American cheese on the center of each tortilla.
- Place hot hot dogs on top of each slice of cheese. Roll up each tortilla/cheese/hot dog by simply rolling from one end to the other.
- Place all four hot dog roll ups in the microwave and cook for an additional 10 to 12 seconds to fully melt the cheese and warm the tortillas.
- Remove from microwave and serve each hot dog roll up whole.

SLOPPY HOT DOGS
Kids love 'em! Two of their favorites in one, sliced hot dogs in an easy homemade sloppy joe sauce.

- Heat oil in 10-inch skillet over medium heat. Cook bell pepper and onion in oil, stirring occasionally, until onion is tender.
- Stir in barbecue sauce, tomato sauce and hot dogs. Simmer uncovered 10 minutes, stirring occasionally. Fill buns with hot dog mixture.

So yummy, so easy, and so cheap. The story is that my father-in-law made this up. It's the most asked for dinner by my kids. We usually serve with mac and cheese. Makes enough to serve our family of 6 w/large portions and to have left overs for tomorrow (which are always eaten).

MEXICAN CHICKEN SLOP
I love this recipe!!! it comes out a bit runny so don't worry. Also, it tastes even better the next day as leftovers! My suggestions are to maybe fry the tortillas a bit before layering, and if you want, add even more hot salsa to the chicken mixture. If you don't want it to spicy, you can spread mild salsa on top of the cheese when layering, but be sure to use hot salsa for the final layer. ENJOY!

- Spread a spoonful of chicken mixture onto the bottom of a deep casserole dish.
- Place a layer of corn tortillas ontop of chicken.
- Sprinkle about a cup of cheese ontop of chicken.
- Add a layer of hot salsa ontop of the cheese.
- Do another layer of tortillas, repeating until dish is full and ending with tortillas and salsa. NO CHICKEN!
- Add about 1-2 cups of cheese on top of salsa and bake in a 340'f oven for 50-60 minutes.

- Prepare hot dogs in slow cooker using NO water. Just drop the dogs (or knockwurst, or polish sausage) and cook them in their own juices on high for 1-2 hours. In about hour the dogs will begin to "brown" wherever thy touch the sides of the pot. A few minutes before serving, warm up some hot dog buns in the pot. This is a winning combination!

This is a favorite dish in my family, it's so easy to make and tastes great! My mom couldn't think of a good name for the casserole so she asked my brother and I for help coming up with the name. We named it 'Pig Slop' and as gross as the name sounds, it just works. You can call it Bean Casserole if the original name grosses you out! My mom would always serve this dish with cornbread, either on the side or she'd put the Pig Slop over the cornbread.
