JACQUES PEPIN'S CHICKEN WITH CREAM SAUCE
Jacques Pepin's Chicken with Cream Sauce

Steps:
- Cut the chicken into eighths with a knife or poultry shears, leaving most of the bones and removing only the back and ribs
- (You can also have your butcher or meat counter cut the chicken for you or just buy parts
- ) Peel the onion, leaving the root intact
- Cut in half
- Prepare the bouquet garni
- Season the chicken pieces evenly with salt and pepper
- Preheat a heavy-bottomed, 12-inch (30 cm) skillet with a lid over medium
- Add the oil and the 2 tablespoons (28 g) butter
- Sauté the chicken pieces, skin-side down, for 6 to 8 minutes
- The skin should only be slightly browned
- Turn the chicken pieces over
- Add the white wine, chicken stock, bouquet garni and onion
- Simmer gently, covered, for 30 to 35 minutes
- Knead together the softened butter and the flour (beurre manie)
- When the chicken is fully cooked (internal temperature should be at least 165°F [74°C]), remove the pieces from the skillet to a serving platter
- Discard the bouquet garni and the onion
- Bring the sauce to a boil and reduce to 1 cup (235 ml)
- Whisk in the beurre manie
- Add the cream and bring back to a simmer for 3 to 5 minutes
- Whisk to avoid scorching
- Stir in the tarragon, pour over the chicken, and serve
CRANBERRY-JALAPENO RELISH
Steps:
- Place half of the orange segments, the zest, and the jalapenos in the food processor and pulse until finely chopped. Add the sugar and pulse 3 to 4 more times. Add the cranberries and continue to pulse until berries are roughly chopped. Adjust seasonings with sugar, if needed. Transfer cranberry mixture to a bowl and toss with the remaining half of chopped orange segments and the mint. Allow relish to chill for at least 30 minutes, and up to 2 days. Serve relish chilled or at room temperature.
JALAPENO CRANBERRY SAUCE

- Put all but 1 cup cranberries in a saucepan. Add the lime juice, sugar, cumin, a pinch of salt, the jalapenos and brine and 1/4 cup water. Bring to a simmer over medium heat; cook, stirring occasionally, until the berries burst and the sauce thickens, 15 to 20 minutes.
- Stir in the remaining 1 cup cranberries and cook until softened, 3 to 4 minutes. Remove from the heat and stir in the lime zest. Let cool, then transfer to a serving dish and refrigerate at least 3 hours.
CRANBERRY SAUCE WITH JALAPENO PEPPERS
Through some experimintation, I finally developed a most marvelous Cranberry Sauce that has just enough peppery taste without being overpowering.

Steps:
- Rinse cranberries in cold water; drain.
- In a medium size saucepan mix water and sugar and bring to boil on medium-high heat; stir to dissolve.
- Add cranberries and Jalapeno peppers and return to boil.
- Reduce heat, cover and boil gently, for 10 minutes, stirring occasionally.
- Add lemon juice and sherry and stir well to blend.
- Remove from heat and let cool completely at room temperature.
- Refrigerate in a glass container with lid.
- Serve with turkey or chicken.
- CAUTION when handling the Jalapeno peppers.
- Wear plastic gloves, or wash hands thoroughly after handling, using any toothpaste.
- Then wash again with soap and water.
- You can also use a mixture of bleach and water to remove all pepper heat.

JALAPENO CRANBERRY SAUCE

Steps:
- Add enough water to the orange juice to make one cup of liquid.
- Combine cranberries, orange zest, juice and water, tequila, and sugar in a large pot.
- Bring to a slow boil, stirring occasionally.
- When the cranberries begin to pop, add the chopped jalapeno cook for about 5 minutes, stirring frequently.
- If the sauce seems a little thick, add a bit more water.
- Remove from heat, transfer to a bowl and chill.
CRANBERRY-JALAPENO RELISH
Taken from the Backwoods Home magazine. I recently made this as per directions. However, after using it I decided to cook it and add a tad more sugar, we liked it better this way. So, I have added the sugar amount to include the addition of more sugar. I would also encourage anyone who makes this to use a lime that does not have alot of pith. I used a regular lime this time, but would use a key lime next time. All in all I would make this again, however, it does not replace plain ol jellied cranberry sauce according to my daughter.

- Wash cranberries, lime and jalapenos.
- Deseed and remove pith of the lime.
- Grind the cranberries, lime, and jalapenos, I used a food processor.
- Add the sugar and mix well.
- Refrigerate the mixture for at least three hours so flavors can meld.
- Or as we liked it simmered for 1/2 an hour or so (until desired thickness) and cooled.

JALAPENO CRANBERRY RELISH
This is a great recipe I found in the San Antonio Express News. So far we've tried it with turkey and fish, and it was great! I also think it would go nicely with beef or pork. Very simple and quick to make. I'm thinking about adding a little orange zest next time. Cooking time is actually refrigeration time.

- Chop jalapenos and cranberries finely.
- Add sugar.
- Refrigerate for 2 days before using. NOTE: The first time I made this, I only refrigerated it for 1 day and it was really good. However, it was even better after 2 days.

JACQUES PEPIN'S JALAPENO CRANBERRY RELISH

- Combine all the ingredients for the cranberry relish in a stainless steel saucepan, cover, and bring to a boil. Reduce the heat to low, cover, and boil gently for 10 to 12 minutes. Set off the heat until cool, then cover and refrigerate. (This relish is best made a day ahead, as it develops taste after a few hours.) The relish will keep, refrigerated, for several weeks and is excellent with cold roasts or pâtés.

Steps:
- Preheat oven to 175F.
- Cut extra skin and fat off each thigh. Cut a 1/2 " slit into meat on either side of the bone, so that chicken will cook faster and evenly.
- Season thighs with 1/2 tsp of salt and 1/2 tsp of pepper.
- Place chicken into non-stick skillet, skin side down, on high heat.
- When chicken starts to sizzle, cover and reduce heat to medium. Cook for 16-18 minutes. If browning too quickly after 10 minutes, reduce heat to low.
- Transfer chicken, skin side up, to a heat proof platter and place in oven to keep warm. Pepin recommends keeping your serving plates in the oven so that they will be warm when you plate the chicken.
- Remove all but 2 tbsp of fat from the skillet. Add onions, garlic and mushrooms. Cook 3 minutes, stirring frequently.
- Add 1/4 tsp salt and 1/4 tsp pepper and white wine. If any liquid has accumulated on the platter in the oven, add that liquid to the pan.
- Cook over high heat for 1 minute, to reduce the liquid a bit.
- Divide the mushroom mixture between 4 plates. Place one piece of chicken on top and garnish with chives to serve.
