HAM AND CHEESE LOAF

Steps:
- Thaw the bread dough overnight, then bring to room temperature before rolling (but don't let it rise).
- Preheat the oven to 325 degrees F. Spray a loaf pan with nonstick cooking spray.
- On a lightly floured work surface, roll the bread dough into a 9-by-12-inch rectangle. When rolling, if the dough springs back, cover with a dry towel and let it rest for 5 minutes.
- Shingle the ham slices onto the dough, leaving a 1/4 inch of exposed dough on all sides. Sprinkle with the cheese and roll the dough into a large log, pinching together the seam and tucking the ends under to seal completely.
- Place the log, seam-side down, in the prepared loaf pan and bake until golden brown and cooked through and the internal temperature is 200 degrees, for 50 minutes to 1 hour.
- Let it sit for at least 10 minutes. Remove from the pan. Slice and serve.

- In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. Bake at 350° for 30 minutes. , Meanwhile, combine glaze ingredients. Spoon over loaf. Bake 40 minutes longer or until the thermometer reads 170°, basting occasionally with glaze.

- In a large, heavy stockpot, heat the oil over medium-high heat. Add the ham hocks, onions, celery, bell pepper, red pepper flakes, oregano, thyme and bay leaves, and saute until soft, about 5 minutes. Add the garlic, and saute for 1 minute. Add the stock and bring to a boil over high heat. Reduce the heat to medium-low and simmer covered for 1 1/2 hours, stirring occasionally.
- Add the navy beans and stir. Continue simmering over medium-low heat for 45 minutes to one hour, or until the beans are almost cooked and ham hocks are very tender. Season with salt and continue cooking 15 to 30 minutes, until beans are done and ham hocks are beginning to fall apart.
- Remove from the heat. Serve the ham hocks with the beans at the table, sprinkled with parsley and green onions, or cut the meat from the bones in the kitchen before serving, return the meat to the pot and serve with the beans at the table.
HAM LOAF (WITH TASTY BROWN SUGAR DIJON GLAZE)
Ham loaf may not be the most appetizing name, but my ham loaf with tasty brown sugar Dijon glaze is totally delicious! The tangy-sweet Dijon glaze will get you hooked and you'll be putting ham loaf on your list of favorite weekly dinners!

- Preheat your oven to 350°F (175°C) and line a rimmed baking sheet or baking dish with parchment paper.
- Melt the butter in a small skillet or frying pan over medium heat, then saute the diced onion for 4-5 minutes or until it reaches your desired level of tenderness. Remove from heat when done and allow to cool.
- Place cubed ham into a food processor and pulse until broken up and ground, but not turning into a paste consistency. Transfer the ham into a large mixing bowl.
- Add the remaining ingredients (ground pork, egg, seasoned breadcrumbs, milk, ground black pepper, and sauteed onion) and mix until well combined.
- Transfer the ham loaf mixture to your prepared baking sheet or pan and form into a loaf shape, approximately 8x4-inches in size. Place the loaf into your oven in the middle of the center rack and bake for 1 hour at 350°F (175°C) or until the internal temperature of the ham loaf reaches 160°F (71°C).
- Combine the glaze ingredients in a small bowl (light brown sugar, Dijon mustard, and apple cider vinegar) until smooth. Coat the ham loaf with the glaze and top with optional pineapple rings and maraschino cherries then return to the oven for an additional 15 minutes.
- Remove the cooked ham loaf from your oven and tent a sheet of aluminum foil over the loaf loosely. Allow the ham loaf to rest for 10 minutes before slicing and serving.

- combine eggs, milk, saltines, onion and 1/2 tsp dry mustard, and pepper.
- Add ham and pork.
- Mix well.
- Shape into loaf and place in a 13x9x2 baking pan.
- Bake at 350 for 1 hours
- For Glaze: combine Brown sugar, vinegar, and 1/2 tsp dry mustard.
- Spoon glaze over loaf.
- Bake additional 20 minutes, basting with glaze.

- 1. Rinse and pick over beans. Place ingredients in pressure cooker pot in the order given.
- 2. .Add the beans and carrots
- 3. .Add the onions and olive oil
- 4. Set pressure cooker (I used an electric pressure cooker) on LOW PRESSURE for one hour. Then let the steam release gradually on its own.
- 5. I used a pork butt ham bone. Lots of wonderful, flavorful broth for ham and beans as a side dish, main entrée, or a delicious soup.

NANCY'S HAM LOAF (USING LOTS OF HAM)
There are many ham loaf recipes around but this one uses a much higher ratio of ham to ground pork which I happen to like. It produces a very tasty loaf with a nice tangy sauce on top. Here's a good way to use up leftover Easter ham.

- Preheat oven to 350 degrees F. Have ready 2 8-x4-inch loaf pans.
- Mix all ingredients (except sauce ingredients) together. Divide among loaf pans. (It may also be made in a 9- x 13-inch pan.).
- Bake 1 hour in preheated oven. Remove from oven and pour the sauce over the tops of the loaves. Return to oven and continue baking 1/2 hour longer.
- To make sauce: Combine sauce ingredients in a saucepan and bring to a boil, stirring to make sure everything is combined well and sugar is melted.
