MARINATED STEAK

Marinated Steak image

Simply the best steakhouse steak sauce! One of my favorite summer dishes is cooking steak on the grill with an assortment of cooked vegetables.

Provided by Jessica (swankyrecipes.com)

Number Of Ingredients 21

----serves 3
1 tablespoon olive oil
1 garlic clove (, minced)
1 tablespoon Worcestershire sauce
1 tablespoon balsamic vinegar or 1 tablespoon white vinegar
1 teaspoon yellow mustard
1 tablespoon soy sauce
pepper
----makes 1 cup
2/3 cup water
1 tablespoon olive oil 1
cup pineapple juice
3 tablespoons lemon juice
¼ cup teriyaki sauce
1 tablespoon soy sauce
1 tablespoon Jack Daniels Whiskey
1 1/3 cups dark brown sugar
3 tablespoons white onion (, minced)
1 head garlic
1 tablespoon crushed pineapple
¼ teaspoon cayenne pepper

Steps:

  • Mix all ingredients together and place steaks into freezer bag with marinade, preferably overnight.
  • Preheat oven to 325 degrees F. Cut 1/2 inch off the top of garlic head. Cut roots so that the garlic will sit flat. Remove papery skin, leaving enough so cloves stay together. In a small oven safe casserole dish, place garlic in dish and drizzle olive oil over it then cover with foil. Place in oven and allow to bake for 1 hour. Remove from oven and let cool until safe to touch. In a medium saucepan, combine water, soy sauce, teriyaki sauce, pineapple juice and brown sugar. Heat over medium/high heat, stirring occasionally until mixture boils then reduce heat until mixture is just simmering. In a small bowl, squeeze the sides of the head of garlic until the pasty roasted garlic is squeezed out. Measure 2 teaspoons into the saucepan and whisk. Add remaining ingredients to the pan and whisk to combine. Allow mixture to simmer for 40 to 50 minutes or until the sauce has reduced by 1/2 and is think and syrup like. Do not allow to boil over.

WHISKEY GLAZED FLAT IRON STEAKS AND GRILLED POTATOES

Whiskey Glazed Flat Iron Steaks and Grilled Potatoes image

The flat iron steak is the second most tender cut of beef, after the petit filet mignon. It comes from the top blade of the chuck. You may see a flat iron steak incorrectly labeled if it has a thick muscle that runs down the center of the steak. A true flat iron is cut horizontally just above and below that tough muscle (rather than vertically through it) so the muscle can be discarded and all that is left is very flavorful and tender beef. If you don't see these steaks in your grocery store, ask your butcher to cut them for you. In most cases, the butcher would be happy to comply and it is well worth it.

Time 45m

Yield 4 servings

Number Of Ingredients 10

1/2 cup whiskey, such as Jack Daniels
1 tablespoon brown sugar
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1/4 cup olive oil
4 cloves garlic, smashed
Four 8-ounce flat iron steaks or filet mignon steaks
1 1/2 pounds Yukon gold potatoes
2 tablespoons chopped fresh chives
1 teaspoon white wine vinegar

Steps:

  • Preheat a grill on medium-high heat. Whisk together the whiskey, brown sugar, 1 1/2 teaspoons salt and 1 teaspoon pepper until the sugar and salt are dissolved. Stir in 2 tablespoons of the oil and the garlic. Add the steaks, turn a few times to coat with the marinade and let stand at room temperature for 20 minutes.
  • Meanwhile, quarter each potato lengthwise to form wedges and put in a medium pot. Cover with cold water to cover by 1-inch and add salt until the water tastes like sea water. Bring to a boil over medium-high heat, reduce the heat to medium and simmer until tender (but not falling apart), about 15 minutes. Drain well. Toss with 1 tablespoon olive oil.
  • Remove the steaks from the marinade and pat dry with paper towels. Pour the marinade into a small pot and bring to a boil. Boil for 2 to 3 minutes until slightly reduced, making sure the sugar does not burn, to make a glaze and sauce for the steak.
  • Grill the steaks until an internal temperature on an instant-read thermometer reads about 130 degrees F, 3 to 4 minutes per side, brushing with the boiled marinade several times in the last few minutes of grilling time. (If you are cooking the filet mignon steaks, you will need to increase this time to 8 to 10 minutes per side to account for the thicker cut). Transfer to a large plate to rest for 5 to 10 minutes. While the steaks grill, add the potatoes to the grill and grill until well-marked and crispy, turning to grill all sides, about 5 minutes total. Transfer the potato wedges to a bowl.
  • Toss the grilled potatoes with the remaining 1 tablespoon oil, chives, vinegar and salt and pepper to taste. Remove the garlic cloves from the remaining glaze and serve drizzled over the steaks with the potatoes on the side.

JACK DANIEL'S MARINADE

Jack Daniel's Marinade image

I stole this off of a Deep South web-page. If you wanted to make this more like the verities of the original marinade, use a touch of Mesquite smoke. If you wish to have it more like a teriyaki, then use a bit of brown sugar and substitute the vinegar for pineapple juice, but watch it carefully, or it will burn on the grill.

Time 20m

Yield 2 cups, 2-4 serving(s)

Number Of Ingredients 10

1 cup ketchup
1/4 cup Jack Daniels Whiskey
1/4 cup molasses
1/4 cup apple cider vinegar
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1/2 teaspoon pepper
1/2 teaspoon dry mustard
1 garlic clove, crushed

Steps:

  • Combine in saucepan. Bring to boil, then reduce heat and simmer 10 minutes. When it's cool, put in one of your own double-locked gallon sized zip bags so you can throw it away and NO MESS!
  • Use to marinate shrimp or scallops for 1 hour or beef, chicken, or pork in the refrigerator overnight. Flip the package over a few times during the marinating time.
  • It will do about 2 - 4 medium 1 inch stakes or about 1/2 of a chicken.
  • Be careful with shellfish and only marinade for an hour or less, as the taste will take over!
  • Use to baste the shellfish or meat as it is grilled or broiled.
  • Makes about 2 cups of Marinade.

HOW TO MAKE JACK DANIEL'S MARINADE: 3 EASY RECIPES

How to Make Jack Daniel's Marinade: 3 Easy Recipes image

For a marinade that's packed full of flavor, reach for Jack Daniel's whiskey. The warm smoky taste of the whiskey works perfectly in a classic marinade or a marinade with Coca-Cola-either is great on steak, chicken, and seafood. If you'd...

Number Of Ingredients 8

1⁄4 cup (59 ml) of Jack Daniel's whiskey
1⁄4 cup (59 ml) of soy sauce
1⁄4 cup (59 ml) of Dijon mustard
1/4 cup (25 g) of green onions, minced
1/4 cup (50 g) of light brown sugar, packed
1 teaspoon (5.5 g) of salt
1 dash of Worcestershire sauce
Black pepper, to taste

Steps:

  • Pour whiskey, soy sauce, and Worcestershire sauce into a bowl. Get out a medium-sized bowl and pour in 1⁄4 cup (59 ml) of Jack Daniel's whiskey, 1⁄4 cup (59 ml) of soy sauce, and 1 dash of Worcestershire sauce. It's fine to use low-sodium soy sauce. You can use any Jack Daniel's product you like-try Tennessee Honey for a slightly sweet marinade or Tennessee Apple for a light fruity flavor.
  • Add Dijon mustard, green onions, brown sugar, salt, and pepper. Spoon 1⁄4 cup (59 ml) of Dijon mustard into the bowl with the liquid ingredients and add 1/4 cup (25 g) of minced green onions, 1/4 cup (50 g) of packed light brown sugar, 1 teaspoon (5.5 g) of salt, and black pepper according to your taste. For a sweeter marinade, swap out pineapple juice for the Dijon mustard. For a more savory flavor, add 1 teaspoon (2 g) of onion or garlic powder.
  • Whisk the marinade until the sugar dissolves. Don't worry if the marinade is thin-it will coat the meat or seafood, and it's definitely packed full of flavor. You can make the marinade ahead of time, but don't add the meat or seafood until you're ready to start marinating them. If you'd like to make the marinade really hands-off, put all of the marinade ingredients into a large sealable plastic bag. Seal the bag and shake until the sugar dissolves.
  • Pour the marinade over meat or seafood. Put your choice of steak, chicken, pork chops, or seafood like shrimp or scallops into a dish. Then, pour the marinade over the food and flip them over, so they're coated in the marinade. If you're marinating the food in a bag, just put the food into the bag and seal it shut. Turn the bag over a few times to coat the food in the marinade.
  • Marinate the food for at least 1 hour before you cook it. If you're marinating seafood, don't marinate it for more than an hour or it will lose its firm texture. If you're marinating beef, chicken, or pork, you can marinate it in the fridge overnight. This gives the meat a chance to absorb a lot of flavor. It's fine to leave the food marinating at room temperature if you're cooking it within the hour. If not, cover the dish and stick the food in the fridge while it marinates.
