A Passover flourless chocolate pecan torte, served with berries sweetened with shaved piloncillo, raw Mexican brown sugar, and flavored with lime juice.

1/4 cup plus 1 tablespoon unsalted butter or pareve margarine
6 ounces bittersweet chocolate
1 cup pecans
6 large eggs
1 teaspoon vanilla extract
1 cup sugar
Dash of salt
3 tablespoons grated piloncillo sugar or brown sugar
Finely grated zest of 1 lime
Juice of 2 limes (about 1/4 cup juice)
1 pint strawberries, washed, hulled and halved
1 pint blackberries, washed
Lightly sweetened whipped cream, optional

Steps:

  • For cake: Preheat oven to 350 degrees. Line a 9-inch springform pan with parchment paper and grease with 1 tablespoon butter.
  • Using a double boiler or pan over simmering water, melt together chocolate and remaining 1/4 cup butter. Set aside to cool.
  • Using a blender, chop pecans finely. Add eggs, vanilla, sugar, salt and melted chocolate mixture, blending until smooth. Pour batter into pan and bake until a toothpick inserted in center comes out clean, 40 to 45 minutes; cake should be moist but not wet. Allow to cool completely.
  • For the garnish: In a large mixing bowl, combine piloncillo or brown sugar, lime zest and lime juice. Add strawberries and blackberries, and toss gently. Just before serving, toss again and spoon on top of cake. If desired, serve with lightly sweetened whipped cream.

8 large eggs, separated
1-1/2 cups sugar, divided
1-1/2 cups ground pecans
2/3 cup all-purpose flour
2/3 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup water
2 teaspoons vanilla extract
CHOCOLATE FROSTING:
3 cups heavy whipping cream
1 cup confectioners' sugar
1/2 cup baking cocoa
2 teaspoons vanilla extract
CHOCOLATE GLAZE:
2 tablespoons baking cocoa
2 tablespoons water
1 tablespoon butter
1 cup confectioners' sugar
1/4 teaspoon vanilla extract

Steps:

  • Let eggs stand at room temperature for 30 minutes. In a large bowl, beat egg yolks. Gradually add 1 cup sugar, beating until thick and lemon-colored. Combine pecans, flour, cocoa, baking soda and salt; add to yolk mixture alternately with water. Stir in vanilla. , In another large bowl, beat egg whites until foamy. Gradually add remaining sugar, 1 tablespoon at a time, beating until stiff peaks form; fold into batter. , Spoon into two greased and floured 9-in. round baking pans. Bake at 375° for 20-22 minutes or until cake springs back when lightly touched. Cool for 10 minutes before removing from pans to wire racks to cool completely. , For frosting, in a large bowl, beat cream until soft peaks form. Beat in confectioners' sugar, cocoa and vanilla until stiff peaks form. Cut each cake horizontally into two layers. Place bottom layer on a serving plate; top with about 1 cup frosting. Repeat layers twice. Top with remaining layer., For glaze, in a small saucepan, combine cocoa, water and butter. Cook and stir over medium heat until butter is melted. Remove from the heat; stir in confectioners' sugar and vanilla until smooth. Spread over top of cake. Spread remaining frosting over sides of cake. Store in the refrigerator.,

I've had this recipe written in my personal recipe book for so long that I can't even begin to imagine it's source...but it's GOOD. This is a dense cake, so make sure to serve it with a light, complimentary side like fresh whipped cream or vanilla ice cream.

1 1/2 cups water
1/2 cup Jack Daniels Whiskey
1 tablespoon instant coffee powder
1 1/4 cups sweet butter
1 cup cocoa powder
2 cups sugar
2 eggs
2 cups flour
2 teaspoons baking powder
1 cup pecans, toasted and coarsely chopped
2 tablespoons Jack Daniels Whiskey

Steps:

  • Preheat oven to 325.
  • In a very large saucepan, heat and stir the water, Jack Daniels whiskey, coffee powder, butter and cocoa until the butter melts.
  • Remove from the heat and beat in the sugar.
  • Cool slightly and whisk in the eggs, blending thoroughly.
  • In a bowl, stir together the flour and baking powder.
  • Beat into the chocolate mixture until incorporated.
  • Stir in the pecans.
  • Turn the batter into a greased and floured 9 inch tube or bundt pan.
  • Smooth top with a spatula.
  • Bake in a 325 oven for 60-75 minutes (until a toothpick comes out clean).
  • Immediately sprinking with the 2 Tbsp of Jack Daniels whiskey.
  • Let cake cool on a wire rack for 15 minutes, then remove from cake pan.
  • Serve with gobs of fresh whipped cream or vanilla ice cream.

2 cups oreo chocolate cookie crumbs
1/2 cup butter, melted
1 cup pecan pieces
1 1/2 cups butter
1 cup firmly packed brown sugar
2 (8 ounce) packages cream cheese, softened
1/2 cup confectioners' sugar
1/3 cup firmly packed brown sugar
4 ounces semisweet baking chocolate
1/3 cup whipping cream

Steps:

  • Crust: Mix cookie crumbs and butter; press firmly onto bottom of 9-inch springform pan.
  • Praline Nut Layer: Sprinkle pecans over crust.
  • Place butter and brown sugar in saucepan; cook over medium heat until mixture comes to boil.
  • Boil 2 to 4 minutes or until thickened, stirring constantly.
  • Pour over pecans; cool slightly.
  • Cover; freeze 3 hours or until set.
  • Cream Cheese Layer: Beat cream cheese, confectioners’ sugar and brown sugar with electric mixer on medium speed until light and fluffy.
  • Spread over Praline Nut Layer.
  • Refrigerate until chilled.
  • Ganache: Melt chocolate with cream in small heavy saucepan; cook on very low heat just until chocolate is melted, stirring frequently.
  • Remove from heat; cool completely.
  • Spread chocolate mixture over cream cheese layer.
  • Refrigerate at least 2 hours before serving.

  • For Easier Cutting: Rinse knife in hot water, a wet knife will slice through this dessert easier and prevent the layers from sticking to the knife.

My husband's Christmas party was catered by L'Auberge du Lac and this was the best dessert served out of many. It has a strong hint of the liquor, and a gooey chocolate taste, almost like a perfectly undercooked brownie with the pecan bits inside. Absolutely delicious, it was a phenomenal hit, served at room temperature without topping. I found the recipe posted on our local news site by the pastry chef who catered the event, Bill Foltz.

10 ounces granulated sugar

  • Melt together butter and dark chocolate.
  • Using a paddle mixer, mix sugar, cocoa, whiskey and eggs.
  • Add melted chocolate mixture.
  • Scrape well.

  • Bake in a water bath at 350°F for approximately 50 minutes; or until center is 170°F.

175g soft butter
75g golden caster sugar
2 eggs , yolks only
250g plain flour , plus more for dusting
20g cocoa powder , sieved
200g Madagascan 64% dark chocolate , broken into pieces
200ml whipping or double cream (whipping cream gives a slightly lighter texture)
200g light muscovado sugar
5g sea salt
100g caster sugar
a pinch of sea salt
100g pecan halves

Steps:

  • To make the pastry, cream the butter and sugar with a wooden spoon or in an electric mixer until light and creamy. Add the egg yolks and 35ml water and mix well until all the liquid has been incorporated. Gradually mix in the flour and cocoa powder until a paste is formed. It will be quite a soft dough.
  • Wrap the pastry in foil, flatten it with your hand and chill for 1 hr. The pastry can be made two days ahead, though in this case, you may want to remove it from the fridge for a few minutes before rolling to soften it.
  • Sprinkle your work surface with a light dusting of flour and roll out the pastry until it's about 5mm thick. Line a 23cm tart tin with the pastry using the rolling pin to help you lift it over, pushing the pastry well into the edges and folding the excess over the top. Trim off the excess. Chill for 15 mins to relax the pastry and to help prevent it from shrinking during cooking.
  • Heat oven to 180C/160C fan/gas 4. Line the tart with a sheet of baking parchment (scrunch it up first to soften it), then tip in baking beans, rice or lentils and bake blind for 15 mins. Lift out the beans and bake for a further 10-12 mins until the base is dry. Allow to cool.
  • To make the filling, put all the ingredients in a glass or metal mixing bowl, place it over a pan of very hot water and allow them to melt together until glossy and thick. Pour into the cooled pastry case and chill for 4 hrs or overnight.
  • For the topping, heat the sugar in a saucepan on a medium heat, tilt the pan rather than stirring, until you have an even golden liquid caramel. Add the salt and mix well with a wooden spoon or heatproof spatula. Pour in the pecans and, mixing thoroughly, quickly pour the mixture on to a piece of baking parchment and spread out with the back of the spoon. Allow to cool thoroughly, then break or chop up into shards or chunky pieces to sprinkle over the ganache.

Chocolate Lovers' Fudge with Jack Daniel's® Whiskey image

This dense, rich fudge has a special secret--a couple of shots of Jack Daniel's® Whiskey! Not enough to overpower, but there is just enough to let you know it's there. No special equipment is required other than a double boiler, and if you don't have one, you can create one by using a bowl or smaller pot over a larger pot for the hot water. Just make sure the smaller bowl or pot doesn't touch the water as it bubbles. Store in an airtight container in the refrigerator or freezer.

3 fluid ounces whiskey (such as Jack Daniel's®)
4 tablespoons Nuts, pecans
3 (4 ounce) bars Candies, milk chocolate
3 (3 ounce) bars dark chocolate, cut into chunks
1 (14 ounce) can sweetened condensed milk
2 tablespoons unsalted butter, melted
1 teaspoon kosher salt

Steps:

  • Pour whiskey into a small bowl, add pecan halves, and allow them to soak in the whiskey for about 3 hours.
  • Line 8-inch square pan with aluminum foil. Cut 2 pieces of foil about 14 inches long, and cut or fold each to an 8- inch width. Cover the bottom and 2 sides of the pan from left to right with 1 piece of foil. Use the remaining foil piece to cross the first layer of foil from top to bottom of the pan. Press foil firmly into the corners, and fold any excess over the sides of the pan. You will now have a double foil sling to lift the finished fudge from the pan.
  • Drain pecans, reserving 2 ounces of the whiskey, and set aside.
  • Place milk and dark chocolate in the top of a double boiler over 1 inch of simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, smooth, and shiny, about 5 minutes.
  • Remove melted chocolate from the heat and slowly pour in sweetened condensed milk, stirring until well blended. Add melted butter and salt, stirring continuously. Mix in reserved whiskey and stir until mixture is creamy and smooth.
  • Pour into the prepared pan. Use an offset spatula to spread smoothly and evenly. Arrange 16 pecans on top, in 4 rows of 4 pecans each. Refrigerate until firm, at least 2 hours.
  • Use the foil sling to lift the fudge from the pan. Place the fudge on a cutting board and cut into 16 pieces with a bench scraper or sharp knife.

3 large eggs, beaten
1 cup sugar
2 tablespoons butter, melted
1 cup dark corn syrup
1 teaspoon vanilla extract
1/4 cup Jack Daniels Whiskey
1/2 cup semi-sweet chocolate chips
1 cup pecan halves
1 unbaked 10-inch pie shell

Steps:

  • In a medium sized bowl combine the eggs, sugar, butter, syrup, vanilla, and Jack Daniel's whiskey. Mix well. Sprinkle the chocolate chips over the bottom of the unbaked pie shell. Cover the chips with pecan halves starting around the outside edge and working your way in towards the center, with the pecans. Pour the filling over the chips and pecans. Pecans will rise to the top during baking. If they flip over after pouring in the filling, turn them so they are turned the same way and will "look pretty." (as my ggmother used to say) Bake at 375 degrees for 35-40 minutes, or until a knife inserted about halfway from the center to the edge comes out clean. You may want to cover the pie crust edge with aluminum foil or a ring to keep from browning too much.

For cake layers:
2 1/2 cups pecans (about 10 ounces)
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 tablespoon fresh orange juice
4 large eggs
1 cup sugar
For filling:
1/2 cup well-chilled heavy cream
1 teaspoon finely grated fresh orange zest
For frosting:
6 ounces semisweet chocolate
1/2 cup sour cream

Steps:

  • Preheat oven to 350°F. and butter two 8- by 2-inch round cake pans. Line each pan with a round of wax paper and butter paper.
  • Make cake layers:
  • In a food processor pulse 2 cups pecans with flour, salt, and baking powder until finely ground (do not pulse to a paste). Transfer mixture to a bowl and stir in orange juice. Separate eggs and in a large bowl with an electric mixer beat yolks until pale yellow. Gradually add sugar, beating until thick and pale, and fold in pecan mixture gently but thoroughly. In another bowl with cleaned beaters beat whites until they hold stiff peaks. Stir about one fourth whites into pecan mixture to lighten and fold in remaining whites gently but thoroughly.
  • Divide batter between cake pans and bake in middle of oven 25 minutes, or until cakes pull away from sides of pans. Cool cake layers in pans on a rack 10 minutes and invert onto rack to cool completely. Carefully remove wax paper from bottoms of cake layers.
  • While cake layers are cooling, on a baking sheet toast remaining 1/2 cup pecans until fragrant and a shade darker, about 8 minutes. Cool nuts and chop.
  • Make filling:
  • In a medium bowl with cleaned beaters beat cream with zest until it just holds stiff peaks.
  • Arrange 1 cake layer, top side up, on a serving plate and spread filling evenly onto layer. Put remaining layer, bottom side up, on filling.
  • Make frosting:
  • Chop chocolate. In a double boiler or a metal bowl set over a saucepan of barely simmering water melt chocolate, stirring until smooth. Remove chocolate from heat and stir in sour cream and a pinch salt until smooth.
  • Immediately spread frosting on top and side of torte and pat toasted pecans around side. Chill torte, loosely covered, until frosting is set, at least 1 hour, and up to 3 days.
  • Serve torte chilled or at room temperature.

6 ounces semi-sweet chocolate chips
1/3 cup unsalted butter
3/4 cup granulated sugar
1 1/2 teaspoons pure vanilla extract
3 egg yolks
1/2 cup all-purpose flour
3 tablespoons water
3/4 cup finely chopped pecans
3 egg whites
1/8 teaspoon cream of tartar
1/8 teaspoon salt
1/4 cup semi-sweet chocolate chips
2 tablespoons unsalted butter
2 tablespoons water
1 cup sifted confectioners' sugar
1/2 teaspoon pure vanilla extract

Steps:

  • Remove the side from an 8" springform pan.
  • Line the bottom of the pan with waxed paper, extending the paper over the bottom edge.
  • Attach side to bottom of the springform pan, making sure paper is secured to the pan.
  • Trim paper to just beyond edge of pan.
  • Grease paper and 1 inch up sides of pan with shortening or butter; set aside (or, grease the bottom of a 9x1 1/2" round baking pan; line bottom of pan with waxed paper. Grease the paper and side of pan. Set aside).
  • Place the 1 cup of chocolate pieces and the 1/3 cup butter in a large microwave-safe bowl.
  • Microwave on 100 percent power (high) for 1 minute to 1 minute and 15 seconds or until chocolate is smooth when stirred; cool slightly.
  • Add granulated sugar and the 1 1/2 tsp vanilla to melted chocolate mixture.
  • Beat with an electric mixer on medium speed until well mixed.
  • Add egg yolks, one at a time, beating well after each addition.
  • Beat in flour and water on low speed, just until combined.
  • Stir in the 3/4 cup pecans.
  • Thoroughly wash beaters.
  • In a bowl, beat egg whites, cream of tartar, and salt with electric mixer on high speed just until stiff peaks form (tips stand straight).
  • Stir a small amount of the beaten egg white mixture into the chocolate mixture to lighten the batter.
  • Carefully fold the remaining egg white mixture into the chocolate mixture.
  • Pour batter into prepared pan.
  • If using the springform pan, place it in a shallow baking pan on the oven rack.
  • If using the 9" baking pan, place it directly on the oven rack.
  • Bake cake in a 350°F oven about 45 minutes for the springform pan or about 35 minutes for the 9" pan or until the top is evenly puffed.
  • Torte will not test done in center.
  • Top will have a sugary crust that will crack.
  • Remove springform pan from baking pan.
  • Cool cake in pan on wire rack.
  • Loosen edge of cake from pan.
  • Remove side of pan.
  • Invert onto serving plate.
  • Remove pan bottom.
  • Peel off paper.
  • If using 9" pan, cool cake in pan on wire rack for 30 minutes; loosen side of cake and invert onto plate.
  • Peel off paper.
  • Cool.
  • Spoon Chocolate Glaze over cake, spreading to cover top and allowing glaze to drip over sides.
  • If desired, sprinkle top with chopped pecans.
  • Cover; refrigerate about 30 minutes or until glaze is set.
  • Chocolate Glaze.
  • In a medium microwave-safe bowl, combine the 1/4 cup semisweet chocolate chips, 2 Tablespoons unsalted butter and 2 tablespoons water.
  • Microwave on 100 percent (high) about 45 seconds.
  • Add 1 cup sifted confectioners' sugar and 1/2 teaspoon pure vanilla extract; beat until smooth.
  • If necessary, add hot water, 1 teaspoon at a time to make a glaze consistency.
  • Notes:.
  • Because the torte has very little flour and lots of sugar, the top will puff up during baking and crack.
  • Don't worry about the cracks.
  • Before glazing, invert the cake so the smooth bottom becomes the top.
  • My cake did not crack on top.
  • Use a large spoon to spread the glaze on the torte, letting some of the glaze spill oven the side.
  • For a fancier dessert, use a spatula to carefully smooth the glaze around the sides of the torte and over the top.
