PULLED PORK WITH JACK & COKE BBQ SAUCE



Pulled Pork With Jack & Coke BBQ Sauce image

These great sandwiches are from a recipe sent me by a friend. (Times listed do not include 24-hour marinating time.) I use the marinade and sauce recipes for other dishes, since we enjoy it so much.

5 -6 lbs boneless center cut pork loin roast (remove the fat back from the shoulder , sliced in half at its widest point, This can also be made wi) or 5 -6 lbs pork shoulder (remove the fat back from the shoulder , sliced in half at its widest point, This can also be made wi)
4 cups black cherry soda or 4 cups root beer
1 cup Worcestershire sauce
2 tablespoons cider vinegar
12 garlic cloves, chopped
1 tablespoon Tabasco sauce
2 teaspoons celery salt
1 cup ketchup
2/3 cup cola
1/3 cup Jack Daniels Whiskey
1/4 cup frank's hot sauce (or brand of your choice)
2 tablespoons honey
1 tablespoon soy sauce
goya adobo seasoning or kosher salt
8 kaiser rolls
salt and pepper

Steps:

  • Combine the ingredients for the marinade in a glass or plastic container large enough to hold all the pork (or beef brisket).
  • Add the pork, turning to be sure it is well coated, Cover and marinate in the refrigerator for 24 hours, turning occasionally.
  • Preheat the oven to 350 degrees F.
  • In heavy saucepan, combine the ingredients for the Jack & Coke BBQ Sauce, adding adobo seasoning or salt to taste, heat to almost boiling, and reduce heat to simmer 20 minutes. Cover and set aside.
  • Place the marinated meat in a roasting pan. Cover the roasting pan with aluminum foil and cook the pork in the preheated oven for 1-1/2 hours. Pour off 2/3 of the liquid in the pan and spread the meat with the barbecue sauce and return it to the oven, uncovered, for another 1-1/2 hours.
  • When the pork is done, it will shred easily with a fork. Test it, and if it's still a bit difficult to shred, return it to the oven for another 15 minutes and try again.
  • When the meat is done, taste to see of more salt and pepper is needed, remove it from the oven and shred it with a fork. Slice the rolls in half, pile on the pork, and serve with creamy coleslaw.

1 cup Coca-Cola
1 cup ketchup
1/4 cup Worcestershire sauce
1 teaspoon liquid smoke
1/4 cup A-1 steak sauce
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon black pepper

Steps:

  • Combine the ingredients in a heavy saucepan and gradually bring to a boil over medium heat. Reduce the heat slightly to obtain a gentle simmer. Simmer the sauce until reduced by 1/4, 6 to 8 minutes. Transfer the sauce to clean jars and let cool to room temperature, then refrigerate until serving. The sauce will keep for several months, refrigerated.
  • Use as you would any sauce, noting the strong affinity this sauce has for chicken, ribs, and pork.

2/3 cup cola
1/3 cup Jack Daniels Whiskey
1/4 cup frank's hot sauce (or brand of your choice)
2 tablespoons honey
1 tablespoon soy sauce
adobo seasoning (I use Goya brand) or kosher salt

Steps:

  • Combine ingredients in heavy-bottomed saucepan and bring to just boiling.
  • Reduce heat to simmer and cook for 20 minutes.
  • Remove from heat, cool, and refrigerate in container until needed.

The sweetness of cola and whiskey are the ideal foundation for a complexly layered barbecue sauce that works brilliantly as a rib glaze as well as a sauce to pass around the table for slathering over grilled chicken, pulled pork or slices of brisket. Be careful to stir the onions often so they brown evenly but don't burn. Otherwise, they'll make the sauce bitter.

Number Of Ingredients 11

2 tablespoons vegetable oil
1 small yellow onion, minced
2 tablespoons double-concentrate tomato paste
2 large garlic cloves, finely grated
2/3 cup whiskey
2/3 cup ketchup
1/3 cup apple cider vinegar
1/3 cup packed light brown sugar
3 tablespoons Worcestershire sauce
3/4 teaspoon Diamond Crystal kosher salt
1 bottle or can (12 ounces) Coca-Cola, preferably Mexican

Steps:

  • Heat the oil in a small saucepan over medium-high heat. Add the onions and cook, stirring, until soft and evenly browned at the edges, 8 to 10 minutes. Add the tomato paste and garlic and cook, stirring to combine both with the onions, for 30 seconds. Pour in the whiskey, bring to a boil and cook until reduced to a thick sauce, 2 to 3 minutes.
  • Add the ketchup, vinegar, brown sugar, Worcestershire, salt and soda, and bring to a boil. Reduce the heat to maintain a steady simmer and cook, stirring occasionally, until reduced by about a third and thickened, 15 to 20 minutes.
  • Remove the pan from the heat and pour the sauce into a bowl. Let the sauce cool to room temperature, then transfer to an airtight container and refrigerate until ready to use.

1 teaspoon liquid smoke
3 tablespoons steak sauce
1 teaspoon onion flakes
1 teaspoon garlic flakes
1/2 teaspoon freshly ground black pepper

Steps:

  • Combine all the ingredients in a heavy non-reactive saucepan and gradually bring to a boil over medium heat. Reduce the heat slightly to obtain a gentle simmer. Simmer the sauce until reduced by a quarter, 6 to 8 minutes. Use right away or transfer to a large jar, cover, cool to room temperature and refrigerate. The sauce will keep for several months.
