  • Store in an airtight container or jar for up to 1 year, and use in any recipe that requires Italian seasoned bread crumbs.

These are so much better than any store-bought bread crumbs, use in any recipe calling for seasoned breadcrumbs, they make a wonderful breading for baked chicken and fish --- store in the fridge or freezer and use when needed --- the recipe can be reduced to one loaf of bread if desired, since I use these on a regular basis I most always make two loaves.

2 loaves unsliced Italian bread
2/3 cup grated parmesan cheese
1 tablespoon italian seasoning
2 teaspoons garlic powder
2 tablespoons dried parsley flakes
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon black pepper (optional)

Steps:

  • Slice the loaves of bread into quarters and leave out on the counter for 1-2 days (or you may also oven-dry the bread slices).
  • Cut or break the bread in small cubes and place in a processor (you might have to do this in two batches) process until fine.
  • Place the breadcrumbs into a bowl and add in all the remaining ingredients; mix gently.
  • Pour the crumbs into a ziploc freezer bag and store in the freezer to use as needed.

This is a straight forward shortcut recipe if you need just plain breadcrumbs OR seasoned breadcrumbs or stuffing. I have made this dozens of times for both seasoned breadcrumbs and for plain croutons to make make homemade stuffing. Link to the Shortcut is listed in the Recipe Notes section.

8 slices white bread
1/2 teaspoon salt
1 teaspoon Italian seasoning (Shortcut)
1/2 teaspoon onion powder
1/2 teaspoon garlic powder

Steps:

  • Preheat your oven to 180° C (350° F). Line a baking sheet with parchment paper or foil. Mix together the salt, Italian seasoning, onion and garlic powders in a small bowl if needing seasoned croutons or crumbs.
  • Cube the bread and spread out on the baking sheet, sprinkle on the seasoning mixture. Place in the preheated oven. You need to pay attention to the bread now.
  • When the bread cubes are about half toasted, remove and use your hands to toss the bread cubes around on the sheet, place back in the oven.
  • When the bread is nicely toasted, remove from the oven and place on a rack to cool.
  • Now you just made toasted croutons for use in stuffing, OR you can crush them in your hands to make breadcrumbs (no seasoning) or seasoned breadcrumbs for use in other recipes.

8 tablespoons (1 stick) unsalted butter
1 large onion, chopped
3 medium celery ribs with leaves, chopped
15-ounce bag cubed seasoned stuffing or 1 pound firm white sandwich bread, cut into 1/2-inch cubes (10 cups) and dried overnight or in the oven
1/4 cup chopped fresh parsley
3 cups homemade turkey stock or canned reduced-sodium chicken broth \
2 teaspoons poultry seasoning, preferably homemade (recipe follows), optional
Salt and freshly milled black pepper

Steps:

  • In a large skillet, melt the butter over medium heat. Add the onion and celery. Cook, stirring often, until the onion is golden, about 10 minutes.
  • Scrape the vegetables and butter into a large bowl. Add the stuffing and parsley. Stir in enough of the stock to moisten the stuffing, about 2 1/2 cups. Season with the poultry seasoning, if desired, and salt and pepper to taste. Use to stuff turkey, or place in a buttered baking dish, drizzle with an additional 1/2 cup stock, cover, and a bake as a side dish.

4 ounces stale bread, cut or torn into 1-inch pieces
1 tablespoon Italian seasoning
1/2 teaspoon garlic powder
1/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 300 degrees F.
  • Place all of the ingredients into a blender carafe, cover and pulse until coarse crumbs form, about 2 minutes. Spread the crumbs evenly on 2 half sheet pans and bake until the crumbs just begin to brown and are crisp, about 5 minutes. Cool the crumbs on the pans for 15 to 20 minutes, and then transfer to an airtight container and store at room temperature for up to 2 weeks.

2 cups water (or beer)
2 (1/4 ounce) packages dry yeast
2 tablespoons sugar
2 teaspoons salt
2 tablespoons butter or 2 tablespoons margarine
1/2 cup parmesan cheese, good quality
1 tablespoon parmesan cheese
1 1/2 tablespoons dried oregano or 3 tablespoons fresh oregano
4 1/2 cups flour

Steps:

  • In a quart bowl or measuring cup, put the warm water, the margarine or butter, the sugar, the salt, and a tablespoon of the flour. Stir well.
  • Add in the yeast and then set aside for five minutes.
  • In a very large bowl, mix 2 cups flour, 1/2 cup of the parmesan, and the remaining ingredients. Stir to mix.
  • Slowly stir in the yeast mixture.
  • Beat in the rest of the flour.
  • Leave the bread mix in the bowl, and cover with a damp dish towel and then plastic wrap.
  • Let rise 45 minutes, until light and bubbly.
  • Preheat the oven to 375°F.
  • Butter a two quart casserole.
  • Stir the bread mix until it collapses, and then flop it into the greased dish.
  • Sprinkle the remaining parmesan on top of the bread mix.
  • Let rise 30 minutes and then put in oven.
  • Bake 35 minutes until lightly browned.
  • Turn the bread out onto the counter.
  • Lightly thump bottom.
  • If it sounds hollow it's done.
  • Otherwise, return to casserole for a few minutes.
  • Let partially cool.
  • Serve warm with real butter.

2 tablespoons butter
1 large onion, finely chopped
2 stalks celery, finely chopped
2 eggs, lightly beaten
2 cups chicken broth
2 teaspoons rubbed sage

salt and pepper to taste

Steps:

  • Allow the toasted bread to sit approximately 24 hours, until hard.
  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking dish.
  • Crush the bread into crumbs with a rolling pin. Place the crumbs in a large bowl.
  • Melt the butter in a medium saucepan over medium heat. Stir in the onion and celery and slowly cook until soft. Remove from heat and drain.
