This icing dries hard and shiny and the colors stay bright. Choose as many different food colorings as you desire.

1 cup confectioners' sugar
2 teaspoons milk
2 teaspoons light corn syrup
¼ teaspoon almond extract
assorted food coloring

Steps:

  • In a small bowl, stir together confectioners' sugar and milk until smooth. Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup.
  • Divide into separate bowls, and add food colorings to each to desired intensity. Dip cookies, or paint them with a brush.

You will not find a better sugar cookie anywhere you search, this will most likely be the only sugar cookie you will use, not only are these cookies buttery delicious, the dough is an absolute dream to work with, it rolls out easily and is easy to handle, also the cookies hold their shape when baked something many sugar cookies do not do --- make as many different colors as desired in separate bowls with the icing, the cookies must be completely cooled before icing --- plan ahead the dough must be chilled for at least 2 hours before rolling -- since these are topped with icing they are not a sweet cookie if you want a sweeter taste then increase the sugar amount

1 cup sugar
2 eggs
1/2 teaspoon vanilla
1/2 teaspoon almond extract
3 1/4 cups all-purpose flour
1/2 teaspoon baking soda

2 cups sifted confectioners' sugar (the sugar must be sifted)
1 tablespoon milk (adding in more if needed for proper spreading consistency)
1 tablespoon light corn syrup
1/4 teaspoon almond extract (can use 1/2 teaspoon vanilla in place of the almond)
food coloring (use your choice of colours)

Steps:

  • For cookies; in a large bowl combine butter with sugar, eggs, vanilla and almond extract; beat using an electric mixer on high speed until light and fluffy.
  • In another bowl combine the flour with baking powder, baking soda and salt; gradually stir into the butter mixture until well blended.
  • Cover bowl with plastic wrap and chill for 2 hours.
  • Set oven to 400°F.
  • Line cookie sheets with parchment paper (do not grease cookie sheets use parchment paper only).
  • On a very lightly floured surface roll out the dough into about 1/4-inch thickness.
  • Cut into desired shapes using cookie cutters.
  • Place cookies 2-inches apart on cookie sheet.
  • Bake 4-6 minutes.
  • Remove cookies to wire racks to cool completely before icing.
  • For the frosting; in a small bowl mix the confectioners sugar with milk (start with 1-2 tablespoons, you will likely need more milk for the perfect spreading consistency).
  • Beat in corn syrup and almond extract until the icing is smooth and glossy (if the icing is too thick add in a small amount more of corn syrup).
  • Divide into as many separate bowls as you wish for different colours.

1 egg
1 teaspoon vanilla
3/4 teaspoon salt
3 cups flour
3 teaspoons baking powder
1/2 cup milk

3 tablespoons milk
1 pinch salt
2 cups powdered sugar
1/2 teaspoon vanilla

Steps:

  • Thoroughly cream butter and sugar.
  • Add egg and beat well.
  • Add dry ingredients alternately with milk and vanilla and mix thoroughly.
  • Roll on lightly floured surface and cut with floured cookie cutter.
  • Bake on greased cookie sheets at 375 for 5 minutes or until firm. Cool dough before icing.
  • For icing, cream all ingredients. Add enough milk to make icing spread easily. Add food coloring if desired.

1/2 cup confectioners¿ sugar
1 1/2 tablespoons water
3 to 4 drops food coloring, plus more as needed
Colored sprinkles, optional

Steps:

  • Preheat oven to 350 degrees F.
  • In a bowl, stir together flour and baking powder. In another bowl, beat butter with sugar until fluffy and light. Beat in eggs and vanilla. Stir in flour mixture, a third at a time to make a stiff dough. Divide dough into 4 pieces. Roll out a portion of cookie dough to 1/4 inch thick. Cut out shapes using cookie cutters. Place on lightly greased or nonstick cookie sheets. Bake until lightly golden, about 10 minute, rotating baking sheet halfway through cooking time. Cool completely on pans about 5 minutes, transfer to cooling racks and cool completely before decorating.
  • In a small bowl, mix sugar and water to form a thick, smooth icing. Stir in food coloring to reach desired shade. Drop icing onto cookies using a small teaspoon and smooth with the back of the spoon. Make additional bowls for additional colors.
  • Additional multi-colored sprinkles can be added on top of icing before it dries for more decorative cookies, if desired.

2 tablespoons softened butter (NO MARGARINE)
1/4 teaspoon vanilla
food coloring (if using liquid coloring, may need to add a little more confectioners sugar to bring to decorating c)

Steps:

  • Place sugar into mixing bowl.
  • Combine milk, corn syrup and vanilla, and blend.
  • Add liquid mixture to powdered sugar and mix thoroughly.
  • Add softened butter and blend until thoroughly incorporated.
  • Divide frosting into several cups, and add food coloring to each. If using liquid coloring, add a little more powdered sugar until it reaches good spreading consistency.
  • Spread onto cookie with knife, or place in zip-loc sandwith bags with the corner nipped off 1/16" to pipe onto cookies.
  • Decorate with sprinkles or colored sugars.
  • Once cookies are decorated, place on flat surface to allow frosting to dry. Store cookies in covered container.
  • NOTE: Differences in humidity may require more or less liquids to make a good consistency frosting. Sugar can be added or milk lessened to achieve the best consistency.

4 cups sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
2 cups granulated sugar
2 large eggs
2 teaspoons pure vanilla extract

Steps:

  • Sift flour, baking powder, and salt into a bowl.
  • Put butter and sugar in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy. Mix in eggs and vanilla. Reduce speed to low. Gradually mix in flour mixture. Divide dough in half; flatten each half into a disk. Wrap each in plastic. Refrigerate until firm, at least 1 hour or overnight.
  • Preheat oven to 325 degrees with racks in upper and lower thirds. Let one disk of dough stand at room temperature just until soft enough to roll, about 10 minutes. Roll out dough between two pieces of plastic wrap to 1/4 inch thick. Remove top layer of plastic wrap. Cut out cookies with a 4-inch one-piece-shaped cookie cutter. To make an ornament, cut out a hole from the center of the neck about 1/4-inch from the edge using a straw. Transfer cookie dough on plastic wrap to a baking sheet. Transfer baking sheet to freezer, freeze until very firm, about 15 minutes. Remove baking sheet from freezer and transfer shapes to baking sheets lined with nonstick baking mats. Roll out scraps, and repeat. Repeat with remaining disk of dough.
  • Bake, switching positions of sheets and rotating halfway through, until edges turn golden, 15 to 18 minutes. Let cool on sheets on wire racks.

I had misplaced this recipe and recently found it again. When DD was in Kindergarten the children had to take turns bringing a snack to school for everyone to share and DD loved to bring these cookies. I love this recipe because it doesn't require refrigeration before rolling out and because the cookies always turned out beautifully. The recipe is from a little booklet called Wilton Christmas Recipes & Ideas. Note: If you're using margarine, be sure to use the hard margarine that comes in a brick like butter, not soft tub margarine.

1 cup butter or 1 cup margarine, softened
1 cup sugar
1 large egg
1 teaspoon vanilla extract
2 teaspoons baking powder
3 cups flour
cocoa powder (optional)
decorating gel (optional)
colored crystal sugar (optional)

Steps:

  • Preheat oven to 400°F.
  • In a large bowl, cream butter and sugar with an electric mixer.
  • Beat in the egg and vanilla.
  • In another bowl, mix together the flour and baking powder.
  • Add the flour/baking powder mixture one cup at a time, mixing after each addition. (The dough will be very stiff; blend the last flour in by hand.).
  • Do NOT chill the dough.
  • Divide dough into 2 balls.
  • On a floured surface, roll each ball into a circle approximately 12 inches in diameter and 1/8 inch thick.
  • Cut cookies into desired shapes, dipping cookie cutters in flour before each use.
  • Decorate with gel and crystal sprinkle decorations, if desired.
  • Bake on ungreased baking sheet on middle rack of oven for 6 to 10 minutes, or until cookies are lightly browned.
  • Cool 2 to 3 minutes before removing and cooling on a baking grid/cooling rack.
  • You can sprinkle cocoa powder on the cookies if desired (looks good if you're making reindeer shaped cookies).
  • Cookies may be frozen in a tightly sealed container for up to 2 months.

I got this recipe from a friend of mine years ago who was a cake baker. I love this recipe because there is no chill time for the dough and they are flaky, light, melt-in-your-mouth goodness! You can easily double or triple this recipe. I use a buttercream frosting for icing.
