PINEAPPLE MOJITO RECIPE

Pineapple Mojito Recipe image

Transform your favorite mojito cocktail by adding a little pineapple into the mix. This easy, fruity Pineapple Mojito recipe is a perfect summer drink.

Provided by Colleen Graham

Categories     Beverage     Cocktail

Time 35m

Number Of Ingredients 7

2 slices fresh pineapple
4 to 5 lime wedges
6 to 8 mint leaves
3 ounces aged rum
1 ounce triple sec
1 ounce pineapple juice
Garnish: mint sprig

Steps:

  • Gather the ingredients.
  • In a small saucepan over medium heat, bring the water and pineapple juice to a low boil. Add the raw sugar and stir until completely dissolved.
  • Remove from the heat. The light foam caused by the warm pineapple juice will dissipate after a few minutes; stirring speeds this up.
  • Let the syrup cool completely before bottling in a jar with a tight seal. Store in the refrigerator for up to 2 weeks.
  • Gather the ingredients.
  • In a collins glass , add the raw sugar pineapple syrup, pineapple chunks, lime wedges, and torn mint leaves. Muddle well to mash the fruits.
  • Add the rum and fill the glass with ice.
  • Top with club soda.
  • Garnish with a sprig of mint, pineapple wedge, and lime slice.

THE REAL MOJITO

The Real Mojito image

This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

Categories     World Cuisine Recipes     Latin American     Caribbean

Time 10m

Yield 1

Number Of Ingredients 6

10 fresh mint leaves
½ lime, cut into 4 wedges
2 tablespoons white sugar, or to taste
1 cup ice cubes
1 ½ fluid ounces white rum
½ cup club soda

Steps:

  • Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.

FRESH BLUEBERRY MOJITOS

Fresh Blueberry Mojitos image

Blueberry mojitos are simple to make and only require a few simple, fresh ingredients. If you cannot find fresh, sweet blueberries, thawed frozen berries work as a substitute.

Provided by Adam and Joanne Gallagher

Categories     Cocktail

Time 5m

Yield Makes 1 drink

Number Of Ingredients 7

8 blueberries (fresh or frozen and thawed), plus more for serving
2 tablespoons (1 ounce) fresh squeezed lime juice
2 teaspoons sugar 8 fresh mint leaves, plus more for serving
1/4 cup (2 ounces) white rum
Ice
2 tablespoons (1 ounce) club soda
Lime slice for serving

Steps:

  • Add blueberries, lime juice, sugar and eight mint leaves to a cocktail shaker. Use the end of a wooden spoon or cocktail muddler to bash (or muddle) the mint into the lime juice and sugar. This releases oils from the mint, breaks up the blueberries and helps the sugar dissolve into the lime juice.
  • Add rum, stir well, and then pour into a glass filled with ice, leaving about an inch of room then top with club soda. Serve with extra blueberries, mint leaves, and a lime slice.

  • Then stir with a spoon without trying to crush the mint leaves. Muddling mint is not the right way to get the best flavor out of it. Stir for about 2 minutes until it gets really fragrant.
  • Crush the berries well with a pestle. If the blackberries you use are not very ripe, it will make the mixture a little more acidic than normal and ruin the balance required in a Mojito. Therefore you might want to cut back on the lime juice to avoid making the Mojito too sour. Alternatively add some blackberry liquor to maintain the sweet-sour balance while giving the drink a blackberry flavor boost.
