PANCETTA AND ARTICHOKE BAKED PASTA WITH SMOKED MOZZARELLA
Crispy pancetta and artichoke hearts are baked with penne and both classic and smoked mozzarella.

- Preheat the oven to 450 degrees F.
- Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil sprigs and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard the basil and season with salt and pepper.
- Meanwhile, bring a large pot of salted water to a boil. Heat the remaining 1 tablespoon oil in a medium skillet over medium heat. Add the pancetta and cook, stirring occasionally, until browned and crispy, about 8 minutes. Transfer to a large bowl with a slotted spoon. Add the artichoke hearts and cook, stirring, until warm, about 2 minutes; transfer to the bowl with the pancetta.
- Cook the penne in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the bowl.
- Add the tomato sauce, smoked mozzarella and half of the Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the mozzarella and remaining Parmesan. Bake, uncovered, until browned, about 15 minutes. Let the pasta stand about 10 minutes before serving.
RISOTTO WITH SMOKED MOZZARELLA AND ESCAROLE
Craig Claiborne and Pierre Franey brought this recipe to The Times in 1988, when a properly-made risotto was still a relatively new dish for the home cook. It would make a wonderful meatless main dish or as an accompaniment to roast chicken or grilled steak.

- Prepare the escarole and set it aside.
- Heat the butter in a saucepan and add the onion. Cook, stirring, until the onion is wilted. Add the escarole and cook until it is wilted. Add the rice and cook, stirring, about one minute. Add the wine and cook, stirring, about two minutes, or until the wine is absorbed.
- Add the simmering broth, salt and pepper and cook over moderately high heat, stirring often from the bottom, about eight minutes. Add the mozzarella cheese and olive oil. Cook one minute and stir in the Parmesan cheese. Cook, stirring from the bottom, about three to five minutes.

- Heat the butter in pressure cooker over medium-high heat. When it begins to foam, add the leeks, herbs, and crushed red pepper and cook, stirring frequently, for 1 minute. Stir in the rice and coat it with the butter. Add the wine and cook over high heat, stirring, until it evaporates, about 1 minute. Add the tomatoes, broth and black olives.
- Lock the lid in place. Over high heat, bring to high pressure. Lower the heat to maintain high pressure and cook for 4 minutes. Quick-release the pressure by setting the cooker under cold running water. Remove the lid, tilting it away from you to allow any excess steam to escape.
- Boil over medium-high heat, stirring constantly, until the rice is tender but still chewy and the risotto loses most of its soupiness and becomes creamy and thick, 3 to 4 minutes. Turn off the heat and stir in the smoked mozzarella, green olives, parsley, and salt, if needed. Continue to stir just until the mozzarella has softened and the parsley becomes limp, about 30 seconds. Serve in large shallow bowls.
VEGETABLE RISOTTO WITH SMOKED MOZZARELLA

My friend Judy has made this dish but I only had a little taste the next day. However, that little bit convinced me I wanted the recipe and here it is!

- Bring the broth and water to a boil in a large pot over high heat.
- Add the carrots, asparagus, bay leaf, 3 tablespoons of the fresh sage, salt and pepper to taste.
- Cover and lower the heat to medium.
- Cook, covered, at a medium boil, stirring occasionally for about 10 minutes or until the carrots are just tender.
- Set a colander into a large bowl, then carefully drain the vegetables and broth.
- Reserve the broth and vegetables separately.
- Heat the oil in a large, deep skillet over medium-low heat.
- Add the onion and sprinkle with salt and pepper.
- Cook, stirring occasionally for 5 minutes, or until the onion is softened.
- Add the rice, stirring to coat with the oil.
- Cook for 3 minutes, stirring frequently.
- Add the Limoncello and stir to coat the rice.
- Stir for one minute until the liquids are absorbed.
- Add 1 cup of the reserved broth.
- Stir constantly for about 2 minutes, or until the rice absorbs the broth.
- Add the remaining broth 1/2 cup at a time, stirring continuously for about 2 minutes after each addition, or until most of the broth is absorbed, but not dry.
- The dish should look creamy.
- Test the rice for doneness.
- Remove from the heat.
- Stir in the remaining 3 tablespoons of fresh sage, the reserved vegetables, the green peas, smoked mozzarella and Parmigiano-Reggiano cheese, stirring until the cheese melts slightly and the risotto is thick and creamy.
- Taste for seasonings.
- Serve immediately.

RISOTTO CAKES WITH MOZZARELLA

- Bring broth to a slow simmer. Put 1 tablespoon butter, 2 tablespoons olive oil and the onion in a heavy saucepan over medium high heat. Stir until onion becomes translucent, about 7 minutes. Add rice and stir to coat well. Add 1/2 cup of the broth, stirring constantly, until almost all the liquid is absorbed. Repeat process, stirring constantly, and adjust heat so mixture simmers but rice does not scorch. After about 20 minutes, nearly all of the stock should be absorbed. Rice should be creamy but firm to the bite. Stir in Parmesan and 2 tablespoons butter.
- Remove from heat, spread risotto onto a large plate and place in refrigerator for 1/2 hour until firm and chilled. Using a spoon or a melon scooper, make 15 small half balls of the mozzarella. Pack risotto into 1/3-cup measure and invert onto the palm of your hand. Place a half ball of mozzarella in center and press risotto around the ball to make a patty about 2 1/2 inches in diameter and 3/4 inch thick. Make sure risotto covers the cheese. Repeat until you have 15 rice cakes.
- Place 2 eggs and 2 tablespoons water in a bowl and beat with a fork. Spread flour and bread crumbs on separate plates. Mix salt into bread crumbs. Coat each cake lightly with flour, dip in egg mixture, shake off excess and coat evenly with bread crumbs. (If needed, beat remaining egg with 1 tablespoon water.)
- Preheat oven to 200 degrees. Line a baking sheet with paper towels. In a large skillet over medium-high heat, melt 2 tablespoons butter in 4 tablespoons oil. When butter stops bubbling, fry the first batch of cakes until golden brown and crispy, about two minutes per side. Place on baking sheet and put in the oven. Drain off oil and wipe out pan with paper towels. Fry the rest of the cakes in remaining oil and butter.
- Place two cakes on each plate. Sprinkle with Parmesan and spoon tomato sauce around them. Garnish with marjoram.

SMOKY RADICCHIO RISOTTO "MICHU"

- Cover raisins with warm water and let soak 15 minutes, then drain.
- Bring broth and 3 cups water to a bare simmer in a small saucepan and keep at a bare simmer.
- Cook onion with 1/4 teaspoon salt in oil in a 5-quart heavy pot over medium heat, stirring occasionally, until golden, about 7 minutes.
- Stir in raisins, radicchio, and rice. Cook, stirring, 1 minute. Add wine and simmer briskly, stirring constantly, until absorbed, 1 to 2 minutes.
- Stir in 1/2 cup of simmering broth and cook, stirring constantly and keeping at a strong simmer, until absorbed.
- Continue cooking and adding broth, about 1/2 cup at a time, stirring frequently and letting each addition be absorbed before adding the next, until rice is al dente and creamy, 18 to 20 minutes. Thin with some of remaining broth if necessary.
- Remove from heat. Stir in cheeses and salt and pepper to taste. Serve immediately.
