CHICKEN MILANESE WITH TOMATO, MOZZARELLA AND BASIL SALAD
A classic veal Milanese consists of pounded veal cutlets or chops that have been breaded in crumbs and sometimes Parmesan, then fried until the coating is burnished and brittle. Accompanied by a crisp, bright salad, it's a meal both cooling and rich. In this version, chicken breasts replace the veal, and a salad of tomatoes and mozzarella tossed with garlicky basil oil acts as the foil to the meat. If you want to work ahead, you can coat the cutlets in crumbs up to 4 hours ahead. Store them on a wire rack in the fridge. But try to serve them freshly fried when their coating is at its crunchiest.

- Lightly season chicken cutlets all over with salt and pepper; let rest while you make the basil oil.
- In a blender or food processor, combine 2/3 cup oil, basil, garlic and salt to taste; purée until smooth.
- In a medium bowl, toss tomatoes and mozzarella with about half of the basil oil and salt to taste. Set aside.
- Place flour in a shallow bowl or plate. Pour eggs into another shallow dish; combine panko and Parmesan in a third dish.
- In a large skillet, melt butter and remaining 1/4 cup oil over medium heat. As it heats, dip a chicken cutlet in flour, shake off excess, then dip in eggs. Shake off excess, then dip both sides in panko mixture and transfer to a rimmed baking sheet. Repeat with remaining cutlets.
- When oil is hot, fry 2 cutlets at a time until bottoms are golden, about 3 minutes. Flip and fry until golden and crispy all over, about another 3 minutes. Transfer to a paper towel-lined plate. Sprinkle immediately with salt.
- Taste tomato-mozzarella salad and add more salt and-or basil oil if needed. Serve cutlets topped with a squeeze of lemon, a drizzle of remaining basil oil and tomato-mozzarella salad.

- Heat 1 tablespoon oil in a 12-inch skillet over medium-high heat. Add the chicken and cook until well browned, stirring often. Remove the chicken from the skillet. Heat the remaining oil in the skillet over medium heat. Add the mushrooms and cook until tender, stirring occasionally. Add the garlic, tomatoes and onions to the skillet and cook and stir for 1 minute. Return the chicken to the skillet. Stir in the concentrated broth and water and cook until the chicken is cooked through.

- Wipe the chicken pieces dry with paper towels, sprinkle with salt and pepper and brown the pieces a few at a time in the safflower oil in a large skillet. Set the pieces aside and pour off the fat from the skillet.
- Heat the olive oil in the skillet and gently soften the onion with the garlic and carrots over medium heat. Stir in the tomato paste, tomatoes, vinegar, wine and thyme leaves. Add the chicken pieces, cover and simmer over medium heat for 30 to 40 minutes, or until they are cooked. Stir occasionally, turning the pieces over in the sauce.
- Remove the chicken to a serving dish and keep it warm in a low oven. Bring the sauce to a boil, and cook for about 10 minutes to reduce by about one-third. Stir in the creme fraiche and bring to a boil. Cook for five minutes. Correct seasoning and pour the sauce over the chicken pieces. Sprinkle with basil and serve at once.

- Season the chicken breasts on both sides with salt and pepper. Dredge in the flour and shake off any excess.
- Combine the oil and 1 T. of the butter in a large saute pan over medium-high heat. When the oil is hot, place the chicken in the pan and cook, turning once, for 4 to 5 minutes on each side, until golden brown and cooked through. Remove from the pan and keep warm.
- Add the shallot and garlic to the hot pan; saute for 1 minute, then add the vinegar to deglaze the pan, using a wooden spoon to scrape up all the browned bits on the bottom. Add the chicken broth and tomatoes and cook for 1 to 2 minutes, until reduced by half. Remove the pan from the heat. Stirring constantly, add the basil, remaining 2 T. butter and salt and pepper to taste. Stir until the butter is incorporated into the sauce.
- Place a chicken breast on each plate and pour the sauce over. Serve at once.

LIGHTLY FRIED CHICKEN BREASTS WITH BASIL TOMATOES
I made this up because I was the only adult home and I had one chicken breast and a very fresh tomato from my garden. I don't usually measure ingredients when I'm making something up, so this is an approximation of what it would take to make the meal for two. I'm pretty sure its tastiness was enhanced by the garden-picked, juicy tomato.

- Rinse and thoroughly dry chicken breasts. Pound them to a more even consistency, if needed.
- Mix flour, corn meal, chili powder, coriander, and lemon pepper.
- Heat 1 T of olive oil in a pan at medium-high heat.
- Dip each chicken breast in egg and then thoroughly dredge in flour mixture (I like to sprinkle some additional chili powder on each chicken breast before it goes in the pan).
- Fry the chicken breasts on the first side for about 7 or 8 minutes, or whenever they are about half-cooked.
- Turn chicken breasts.
- After a minute or two, add the remaining olive oil and the garlic to the pan. Put the tomato chunks in the pan, keeping them separate from the chicken but allowing them to benefit from the drippings in the pan. Sprinkle basil over tomatoes. Do not stir.
- Cook until chicken is cooked through (another 5 - 7 minutes).
- Serve with corn bread, roasted red potatoes, or a side salad. I wouldn't serve this with rice as it might absorb the tomato/ chicken juices.

- Heat olive oil in heavy medium skillet over medium-high heat. Sprinkle chicken with salt and pepper; add to skillet. Sauté chicken until cooked through, about 5 minutes per side. Transfer chicken to 2 plates. Add tomatoes and garlic to skillet; sauté 1 minute. Add balsamic vinegar and 1 tablespoon basil; sauté 30 seconds. Season sauce to taste with salt and pepper. Spoon sauce over chicken. Sprinkle with remaining 1 tablespoon basil and serve.
FRIED TOMATOES WITH BASIL
I cut this out of a newspaper when I lived in Atlanta for a short time in the early 80's. It was in a "cooking for one" column, but I have doubled it here. Use it as a first course for guests, to accompany steak, fish or chicken, or as a light dinner for yourself on a hot summer night when everyone is out. New Jersey tomatoes (the best) really shine in this recipe! Make fresh corn on the cob and have a feast!

- Bring 3 cups chicken broth to a boil in a saucepan.
- While the stock is coming to a boil; heat a large nonstick skillet over med-high heat with the olive oil.
- Season the chicken with salt, pepper, and red pepper flakes; add chicken to the hot skillet and cook 3-4 minutes or until the chicken is lightly browned.
- Scoot the chicken over to the edges of the skillet, then add in the onions and garlic; continuing to cook for 3 more minutes.
- Add the remaining cup of chicken broth and cook 3-4 minutes or until reduced by half.
- While the sauce is reducing, whisk the quick-cooking polenta into the boiling broth in the saucepan until it masses; stir in the mascarpone cheese and Parmigiano and season with salt and pepper; you want the polenta to be slightly loose; if it gets too tight, stir in some more broth to loosen it up a little.
- To finish the chicken, add in the yellow and red grape tomatoes, stir to combine and continue to cook for 1-2 minutes or until the tomatoes are heated through and starting to burst.
- Add in the basil and toss with the chicken and tomatoes.
- Serve the polenta in shallow bowls and top with the fresh tomato and basil chicken.
